FIESTA CROCK POT CHICKEN CASSEROLE
This Crock Pot Fiesta Chicken Casserole recipe was an instant family favorite at my house. I bet it will be for you and yours too! So yummy!

Steps:
- Heat your oil in a skillet over medium high heat and cook your chicken pieces with your onion and garlic salt and drain
- Combine your cooked chicken, black beans, salsa, garlic powder, soup, tomatoes and 1/2 cup of shredded cheese
- Spread your mixture in a lightly greased 6 quart slow cooker
- Top with remaining cheese
- Cover and cook on low for 3-4 hours or high for 1-2 hours, turning your insert halfway through if your slow cooker does not cook evenly
- Serve hot over a bed of crushed Doritos, if desired

- Cook on high in the slow cooker for 4 hours or 6 on low. Shred the chicken with a hand mixer. Trust me, it's so much easier to do it with the hand mixer!

My neighbor came up with this and brought me some to try. After one taste I asked how he made it and this is what he said. I'm guessing at the amounts of some ingredients.

Steps:
- Pour tomato soup in bottom of crockpot.
- Place chicken pieces on top of soup.
- Sprinkle chicken pieces with taco seasoning.
- Pour salsa on top of chicken.
- Cover and cook for 8-10 hours.
- 30 minutes before serving, shred chicken and mix well.
- Serve with tossed salad, on floured tortilla if desired and top with sour cream and/or shredded cheese.

Steps:
- Spray crock-pot with non-stick spray. Put all ingredients in.
- Cook on high 5-6 hours.
- When done, shred chicken and return to pot. Cook 15-30 more minutes. Serve as is or on lettuce for chicken taco salad.
