Steps:
- Flatten chicken to 1/4-inch thickness.
- Place a slice of ham and cheese on each piece of chicken.
- Roll up from a short side and tuck in ends; secure with a toothpick.
- In a shallow bowl, mix crumbs, grated cheese and parsley.
- Pour milk into another bowl.
- Dip chicken rolls in milk, then roll in crumb mixture.
- Wrap and freeze roll-ups for up to 2 months.
- To use frozen chicken--completely thaw in the refrigerator.
- Unwrap roll-ups and place on a greased baking sheet.
- Spritz with nonstick cooking spray.
- Bake uncovered, at 425 degrees for 30 minutes or until juices run clear.

- At least 4 hours before cooking: Roll each chicken breast (small end to large end), wrap with bacon slice and secure with toothpick or bamboo spear. Place rolled chicken breasts into a shallow glass container and add salad dressing to marinate. Cover and put in refrigerator for 2 hours, turning occasionally.
- Lightly oil grill and preheat to high.
- Remove chicken rolls from marinade and grill over hot coals until bacon browns; move to cooler spot on grill and cook another 25 minutes or until chicken juices run clear. Baste with barbecue sauce, turning and basting for another 10 minutes or until ready to serve.

BAKED CHICKEN FAJITA ROLL-UPS
These Baked Chicken Fajita Roll-Ups are a fun low-carb spin on a classic favorite! These roll-ups are easy to make, super healthy and taste delicious!

- In a small bowl, whisk together olive oil, lime juice, garlic, chili powder, cumin, oregano, salt, cayenne (if using) and cilantro. Set aside.
- For the chicken breasts, if you purchased pre-sliced chicken cutlets then skip to the next step. If using chicken breasts, slice them longways into 2 even slices and firmly pound the chicken using the smooth side of a meat tenderizer to an even thickness of about ¼ inch.
- Place chicken cutlets into a large resealable freezer bag and pour marinade over top, making sure they are completely coated. Allow chicken to marinate for a minimum of one hour to overnight.
- Once chicken has marinated, evenly place 6 bell pepper slices in the middle of the chicken cutlet, roll up and secure with a toothpick. Repeat this step until all the cutlets have been rolled up and place seam side down in a prepared baking dish.
- Brush tops of chicken with remaining marinade and bake, uncovered, at 375 for about 25 to 30 minutes or until the juices run clear. Serve and enjoy!

- Combine the preserves, mustard and curry powder in a large skillet and heat over low heat, stirring constantly, until preserves are completely melted and smooth.

- Place the chicken in a pot and cover with water, bring to a boil, reduce the heat to medium and cook till chicken is cooked through. Remove chicken, reserving the broth. When cooled enough to handle, remove the chicken from the bone and shred, set aside. Whisk together the soup, broth, milk, flour, salt and pepper. Unroll the crescent dough and separate into the triangles. Place a little cheese over the dough and at the larger end place a good heaping of the chicken. Roll up and place in a 9x13-inch casserole dish. Repeat with remaining. Once all are in the dish, pour the soup mix around each one and then drizzle a little over the tops (not too much). Bake in a 375°F oven for 25 minutes, remove and top with a little more cheese and return to the oven for 5 minutes. Let sit for a couple of minutes before serving, the soup mixture will thicken up like a gravy.

- Preheat oven to 400 degrees F (200 degrees C).
- In a small bowl, combine lemon juice, brown sugar, vinegar and water; set aside.
- Place figs and lemon slices in the bottom of an 11x16 inch baking/roasting dish. Arrange chicken thighs on top, then pour vinegar mixture over chicken. Finally, sprinkle with salt and dried parsley to taste.

CHICKEN ROLL UPS
I had a lady in my church who made this for an activity and they were so good! I asked her for the recipe and they are so easy to make!! I poached my chicken by boiling it for about 10 minutes and they were cooked through. You could also use a left over rotisserie chicken or even canned chicken, although with canned it tends to taste like tuna to me. I also used the Pillsbury Grands biscuits, but found that I would have preferred them smaller, so have listed the regular sized ones here.

- Prepare you chicken and shred it finely. I used a food processor and pulsed it a few times to shred it easily.
- Add the shredded chicken to a mixing bowl and add the rest of the ingredients and stir well until creamy.
- Open the can of biscuits and roll out each individual one to flatten them out a bit.
- Spoon a heaping tablespoon of the chicken creamy mixture to the biscuit dough and fold the dough over the filling. It is ok if some of the filling comes out, as it bakes it will set up.
- Bake at 400* for about 15 minutes and the biscuits are golden brown.
- Allow to cool for a few minutes before serving.
- These could be made up in advance and frozen for a few weeks, and heated in a 350* for about 10 minutes.

- Place chicken between to pieces of wax paper; pound to flatten.
- Blanch vegetables in boiling water about 3 minutes; drain well.
- Evenly divide vegetable strips onto chicken so that vegetables are visible on both sides of each piece. Roll up and place seam-side-down in shallow baking dish just large enough to hold roll-ups.
- Combine soy sauce, water, vinegar, wine, brown sugar and cornstarch; pour over chicken.
- Refrigerate, covered, for 1 hour.
- Sprinkle chicken with seasoned bread crumbs. Cover and bake at 350°F (175°C) for about 20 minutes.
- To brown crumbs, remove cover and continue baking about 10 minutes or until chicken is cooked and vegetables are tender.
