SQUASH OKOY (FILIPINO KALABASA FRITTERS)
Steps:
- In a medium bowl, stir 1/2 cup flour, 1/4 cup cornstarch, 1 egg, 1/3 cup water, 1 tablespoon fish sauce, 2 cloves minced garlic, salt and pepper until smooth.
- Add 1 cup kabocha squash, 1/4 cup carrots and 1/4 cup green onions and stir until well combined.
- Put about a cup of oil in a large skillet and once it's hot enough, scoop about a heaping 1/4 cup squash batter into the oil, flatten slightly and fry on medium heat until the bottom turns a light golden brown. Flip and fry until the other side is golden brown too.
- Put the fried fritters on a tray lined with paper towels to drain the excess oil. Serve immediately.

Stir fried Kabocha Squash is one of my fave comfort Filipino Foods. The consistency of Kabocha squash, when cooked, is similar to potatoes. Coconut Milk can be added to this recipe which gives it a rich and creamy flavor. The dish can be eaten alone or over steamed rice.

Steps:
- Heat oil on medium to medium low heat
- Add pork, cook to brown, set aside.
- Add onions and garlic and sauté until onions are translucent and tender
- Add the pork, kabocha squash, and water/soup stock
- Add 2 tablespoons of fish sauce and pepper
- Cover the pan and simmer for 30 minutes, mix occasionaly
- Add the green beans
- Optional: 1 cup coconut milk
- Add more fish sauce, salt and pepper if needed
- Continue cooking about 20 minutes or until squash is fork-tender

- Heat the wok or skillet to medium for a couple of minutes. Add the pork pieces. No need to add oil, since the pork would release its fat. Season with salt and pepper, to taste. Cook the pork until nicely browned all over.
- Add the garlic and onion and cook until the onion has softened about 3-4 minutes. Add the tomatoes and cook for another couple of minutes.
- Pour in the water and deglaze the pan. Bring to a boil, then cover and simmer on low until the pork is fully tender about 20 minutes or so. If it dries, simply add a little more water.
- Uncover and add the butternut squash; cover and cook until the butternut squash is tender about 10 minutes or so. Taste and adjust the seasoning with more salt and pepper, if needed. Alternatively, use some soy sauce or fish sauce for more flavor. Serve with rice on the side.

- Par-boil the squash in a medium stock pot with water for about 15 minutes till it is slightly soft. Drain then set aside.

- Add the coconut milk at this last stage of cooking. Season with salt and pepper. When the liquid starts to boil and vegetables are just about cooked, turn off the heat. (Note: do not let the coconut milk boil too long or it will curdle).
