Another recipe from "The Philippine Cookbook". Haven't tried it yet. Bet it's tasty. Serve with sticky rice.

2 lbs spinach (authentic is kangkong "swamp cabbage") or 2 lbs mustard greens (authentic is kangkong "swamp cabbage")
1/2 tablespoon garlic, finely minced
2 tablespoons vegetable oil (original calls for 1/2 cup!)
1 tablespoon fresh lemon juice or 1 tablespoon lime juice
3 tablespoons soy sauce
salt (original calls for 1/2 tablespoon!)
fresh ground black pepper

Steps:

  • Wash and sort spinach or greens.
  • Separate leaves and cut stems into 1-inch lengths.
  • Saute garlic in oil, and when it is golden brown, add the spinach or greens, lemon or lime juice, soy sauce and salt.
  • Cover and bring to a boil. Add freshly ground pepper to taste. Serve hot with sticky rice.

1 cup distilled white vinegar
1 cup soy sauce
½ cup ketchup
1 tablespoon minced garlic
3 bay leaves
1 teaspoon fresh-ground black pepper
2 ½ pounds lean pork, cut into 1 inch cubes
1 pound small green beans, trimmed

Steps:

  • Stir together the vinegar, soy sauce, ketchup, garlic, and bay leaves in a large saucepan. Add the cubed pork, and bring to a boil over high heat. Reduce heat to medium-low, cover, and simmer until the pork is tender, about 2 1/2 hours. Stir occasionally. If using the green beans, add them during the last half hour of cooking.

  • Heat a pan over medium-high heat. Add 1 tablespoon of oil, along with the onion and garlic. Saute until softened. The onions can crisp ever so slightly at the edges, but they shouldn’t take on too much color.
  • Add the coconut milk, cane vinegar, dark soy sauce, light soy sauce, sugar, black pepper, bay leaf, and 2 dried red chili peppers. Turn the heat down to a low simmer, and cook for about 20 minutes.
  • Meanwhile, heat another tablespoon of oil in a skillet (nonstick works great). Break up the seitan or cut it into desired shapes, and add it to the pan. Brown it until it’s golden all over. Add it to the sauce, and cook for another 5 minutes.

  • Put all the ingredients except for the water in a Dutch oven or any heavy duty pot and leave for about 30 minutes to marinate.
  • Place the pot over medium heat, add 1/2 cup water, and bring to a boil. Lower the heat to a simmer and simmer without stirring until most of the vinegar’s acid has been cooked off – you will know when this is done because it won’t smell as sharp and “sting-y”.
  • Keep simmering over low heat until the chicken is very tender - about 40 minutes to an hour. Taste the sauce. If it’s too salty or too sharp for your taste, add some of the remaining water. I usually end up using 3/4 cup total.
  • When chicken is tender, remove the pieces from the pot and set aside. At this point the garlic will be very tender as well – you can mash some (not all!) of the cloves against the sides of the pot to incorporate it into the sauce.
