This cake is not only finger-lickin' good, it's plate lickin' good. The cake is moist and fluffy with bits of mandarin oranges in every bite. Cool and creamy, the frosting tastes similar to a pina colada. A great dessert for any summer BBQ or when you want a citrus dessert. Trust us, there won't be any leftovers.

CAKE
1 package(s) yellow cake mix
1 can(s) mandarin oranges, undrained (11 oz)
1 stick(s) butter, melted
1/4 cup(s) vegetable oil
4 large eggs
1 can(s) crushed pineapple (20 oz., juice used to pour over cake and pineapple used for frosting)
FROSTING
12 ounce(s) whipped topping, thawed
3.4 ounce(s) box of instant French Vanilla or pistachio pudding (I use the French vanilla)
pineapple from can of crushed pineapple
1 - 1 1/2 cup(s) shredded coconut

Steps:

PREHEAT oven to 350; grease and flour pans.
Mix all cake ingredients except pineapple juice on medium for about 3 minutes. This will cause the oranges to break up.
Pour into 2 - 9" round cake pans. Bake about 25 minutes or until the knife inserted comes out clean. Cool for 10 minutes.
While the cake is still warm, poke holes all over and drizzle with reserved pineapple juice.
Mix frosting ingredients well, making sure they are well combined and the pudding mix has dissolved.
Frost cake after it has completely cooled.

1 (18 ounce) box butter recipe cake mix
1 (8 ounce) can mandarin oranges, including juice
1/4 cup oil
4 eggs
1 (15 ounce) can crushed pineapple, including juice
1 (3 1/2 ounce) box instant vanilla pudding
1 (8 ounce) container non-dairy whipped topping

Steps:

Blend all cake ingredients and beat three minutes.
Bake in greased 9" X 13" pan at 350 for 25 - 30 minutes.
Cool throughly.
Mix dry pudding with pineapple and juice.
Stir in whipped topping.
Spread over cake and refrigerate.

1/3 cup oil
1 (6 ounce) can crushed pineapple
1 (3 1/2 ounce) package instant vanilla pudding
8 ounces whipped topping

Steps:

Combine cake mix, oranges, eggs and oil. Stir until everything is well incorporated. Pour into greased and floured cake pan. Bake as directed on cake mix box. Mix pineapple, pudding, and whipped topping together and spread on cooled cake. Store leftovers in the refrigerator.

12 uncooked jumbo shrimp, peeled and deveined
1/4 cup Italian salad dressing
1/4 cup orange juice
6 bacon strips, cut in half
1 ounce pepper Jack or cheddar cheese, julienned

Steps:

Cut a small slit on the back of each shrimp, not cutting all the way through. In a large resealable plastic bag, combine the salad dressing and orange juice; add shrimp. Seal bag and turn to coat; refrigerate for 30 minutes. , Meanwhile, in a large skillet, cook bacon over medium heat until cooked but not crisp. Drain on paper towels., Drain and discard marinade. Place a piece of cheese in the slit of each shrimp. Wrap bacon around shrimp; secure ends with toothpicks. , Moisten a paper towel with cooking oil. Using long-handled tongs, lightly coat the grill rack. Prepare grill for indirect heat with a drip pan. , Place shrimp over drip pan and grill, covered, over indirect medium heat or broil 4 in. from the heat for 3 minutes on each side or until shrimp turn pink.
