I love making my own salad dressings and I'm always looking for new ones. This delicious dressing recipe came from www.horseradish.org It's perfect on a green salad served along side of a nice, juicy steak!

3/4 cup buttermilk
1/4 cup mayonnaise
1/4 cup scallion, chopped (green onions)
3 tablespoons fresh basil
1 tablespoon fresh parsley
1 tablespoon fresh lemon juice
1 tablespoon bottled horseradish
salt and pepper

Steps:

  • In a blender or food processor combine buttermilk, mayonnaise, scallions, basil, parsley, lemon juice and horseradish. Blend well until smooth. Add salt and pepper to taste, process briefly to blend flavors.
  • Serve on salad of fresh mixed greens.

1 -2 chilled hard-boiled egg yolks
2 tablespoons brown sugar
salt
2 teaspoons sweet swedish-type mustard
2 tablespoons white wine vinegar
100 -200 ml cream, Finnish curd cream or 100 -200 ml sour cream

Steps:

  • Rub the egg yolks with a spoon through a fine sieve. Add the sugar, salt and mustard and rub into a fine paste. Stir in the vinegar.
  • Whip the cream until soft peaks form. Add the whipped cream, curd cream or sour cream into the egg mixture. Pour the dressing over the salad ingredients and serve.
  • Traditionally, this dressing is served with butterhead lettuce leaves only, with the leftover whites from the hard-boiled eggs chopped finely and sprinkled on top. In addition to lettuce, you may use tomatoes, cucumber and onion to make the salad.

A popular dressing from Finland. My girlfriend is Aussie born from Finnish parents, this is her mum's traditional recipe. Serve on a simple salad of lots of lettuce, at least 2 varieties. Also fabulous with smoked salmon. A small portion (1 teaspoon) of chopped dill or chives can be added if you have it on hand. This is the basic recipe.

300 ml low-fat creme fraiche
1/2 teaspoon sugar
2 tablespoons grated horseradish (fresh or preserved)
1 tablespoon lemon juice

  • Serve as you want and keep in the fridge for up to 2 weeks.
