Fish pie - in four steps image

Delicious and easy - a fish pie anyone can make. You'll learn how to poach fish and make a white sauce too

400g skinless white fish fillet
400g skinless smoked haddock fillet
600ml full-fat milk
1 small onion, quartered
4 cloves
2 bay leaves
4 eggs
small bunch parsley, leaves only, chopped
100g butter
50g plain flour
pinch freshly grated nutmeg
1kg floury potato, peeled and cut into even-sized chunks
50g cheddar, grated

Steps:

  • Poach 400g skinless white fish fillets and 400g skinless smoked haddock fillets. Put the fish in the frying pan and pour over 500ml of the full-fat milk. Quarter 1 small onion and stud each quarter with a clove, then add to the milk, with 2 bay leaves. Bring the milk just to the boil - you will see a few small bubbles. Reduce the heat and simmer for 8 mins. Lift the fish onto a plate and strain the milk into a jug to cool. Flake the fish into large pieces in the baking dish.
  • Hard-boil 4 eggs. Bring a small pan of water to a gentle boil, then carefully lower the eggs in with a slotted spoon. Bring the water back to a gentle boil, with just a couple of bubbles rising to the surface. Set the timer for 8 mins, cook, then drain and cool in a bowl of cold water. Peel, slice into quarters and arrange on top of the fish, then scatter over the chopped leaves of a small bunch of parsley.
  • Make the sauce. Melt 50g butter in a pan, stir in 50g plain flour and cook for 1 min over moderate heat. Take off the heat, pour in a little of the cold poaching milk, then stir until blended. Continue to add the milk gradually, mixing well until you have a smooth sauce. Return to the heat, bring to the boil and cook for 5 mins, stirring continually, until it coats the back of a spoon. Remove from the heat, season with salt, pepper and a pinch of freshly grated nutmeg, then pour over the fish.
  • Assemble and bake. Heat oven to 200C/fan 180C/gas 6. Boil 1kg floury potatoes, cut into even-sized chunks, for 20 mins. Drain, season and mash with the remaining 50g butter and 100ml full-fat milk. Use to top the pie, starting at the edge of the dish and working your way in - push the mash right to the edges to seal. Fluff the top with a fork, sprinkle over 50g grated cheddar, then bake for 30 mins. Make up to a day ahead, chill, then bake for 40 mins.

Living by the sea, we try to eat fish often and this hearty meal is an easy way to enjoy a little bit of what you fancy! This fish pie is good enough for a dinner party and the kids love it, too. Serve with a green salad or green steamed vegetables like broccoli.

6 medium potatoes
½ cup butter, divided
1 medium white Spanish onion, chopped
1 ½ cups grated medium Cheddar cheese
1 ¼ cups light cream, or as needed
2 teaspoons Dijon mustard
1 teaspoon lemon juice
salt and ground black pepper to taste
1 ½ pounds white fish - skinned, boned, and cut into chunks
½ pound fresh shrimp, peeled and deveined
salt and ground black pepper to taste

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C). Cut a small slit in each potato and place onto a baking sheet.
  • Bake in the preheated oven until potatoes are easily pierced with a fork, about 1 hour 10 minutes.
  • While the potatoes are baking, melt 4 tablespoons butter in a skillet over medium heat; stir in onion. Cook and stir until onion has softened and turned translucent, about 5 minutes. Mix in Cheddar cheese, cream, mustard, and lemon juice. Season with salt and pepper. Cook, stirring frequently, until sauce is warm and Cheddar has melted, 3 to 5 minutes. Remove from heat.
  • Place white fish and shrimp in a 3 1/2-quart oven-proof baking dish. Pour cheese sauce over the fish; stir until well combined.
  • Scoop the flesh out of the baked potatoes and place in a large bowl; discard the skins. Add 4 tablespoons butter and season with salt and pepper. Mash with a fork until butter has melted and potatoes are smooth. Spread the mashed potatoes evenly over the top of the fish.
  • Bake until sauce is bubbling and potato topping is golden brown, about 55 minutes.

I have always liked potpies growing up because they were an easy way to get food into me when I was a busy 20's single girl. The store bought variety has since declined in taste, and amount, but increased in price. I have used all fresh ingredients in this homey favorite. You can make as many as you want and freeze before baking for those times you crave the store bought variety but want something just better.

1 pie crust
1/2 lb baby carrots, chopped into 3 pieces each
1 celery heart, chopped (green leafy parts are optimal)
1 medium onion, chopped
3 garlic cloves, minced
8 ounces mixed mushrooms, sliced
1/4 cup olive oil
1/4 cup all-purpose flour
2 cups chicken broth
1/2 cup milk
1/2 cup half-and-half cream
2 lbs chicken breasts, boneless, skinless, chopped into 1/2 in.pieces
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1 teaspoon salt
1 teaspoon dried parsley
1 1/2 teaspoons black pepper
1 cup frozen mixed vegetables
1 large potato, cooked and cubed
1 tablespoon heavy cream (for brushing dough before baking)
1 tablespoon olive oil
salt and pepper

Steps:

  • Prepare all vegetables and place in a large bowl. Place garlic into a separate small dish.
  • Chop chicken breasts and place into a medium bowl and season with 1/2 teaspoons pepper, 1 teaspoons salt, garlic and onion powder, and parsley. Mix well and set aside.
  • Heat 1 tablespoons olive oil in deep dutch oven. Sear chicken pieces in hot oil until no longer pink. Remove from pot to set aside.
  • Add additional olive oil to pot and heat up. When hot add all fresh vegetables, minus frozen vegetables, potato, and garlic. Cook on medium heat, stirring frequently, until soft and tender.
  • Add garlic and stir continually for about 3 minutes and very fragrant but not browned.
  • Add all flour to vegetable mixture and incorperate very well. Let mixture cook about 5 minutes total to cook off flour taste.
  • Immediately add all liquid (broth, milk, cream) and stir very well to not form lumps.
  • Bring to a light boil and add chicken, potato, and frozen (thawed) vegetables, salt and pepper.
  • Check for thickness of gravy and if too thick you can add more of any of the previous liquids used from begining.
  • When hot and bubbling and seasoning and thickness of gravy is suitable to you, devide mixture into individual ramekins. Your size of ramekin will determine how many servings will achieve per recipe. This amount of mixture was enough for 4 medium large (approx. 4 in") ramekins.
  • Using a sharp paring knife cut dough large enough to fit the top of ramekin. Place dough over mixture and seal edges.
  • Brush all with last remaining 1 tablespoons cream, and sprinkle with salt and pepper.
  • Bake in a 350 degree oven for 40-45 minutes, until crust is brown.
  • Enjoy.
  • If using frozen from freezer, place aluminum foil over top of potpie for first 30 minutes and bake until bubbly and brown. May take longer in oven due to frozen state. Adjust accordingly.

1 1/2 cups breadcrumbs or 1 1/2 cups gluten-free breadcrumbs
40 g butter or 40 g margarine
1 tablespoon olive oil
1 carrot, chopped
1 celery, thinly sliced
3 spring onions, thinly sliced
1/4 cup plain flour or 1/4 cup gluten-free flour, blend
1 cup milk or 1 cup soymilk
500 g boned firm white fish fillets, cut into 2 cm cubes
1 lemon, zest of
1 tablespoon lemon juice
2 tablespoons chopped parsley

Steps:

  • Preheat oven to 180°C.
  • Divide crumbs in half.
  • Melt butter and pour over 1/2 of the bread crumbs.
  • Add the olive oil to a frypan and cook carrot and celery until softened- about 3-4 minutes.
  • Add the onion and cook for another minute.
  • Sprinkle in the flour and stir to form a paste.
  • Remove the frypan from the heat and slowly stir in the milk. Return to heat and bring to the boil, stirring until smooth.
  • Stir in fish, lemon rind and juice. Remove from heat.
  • Spoon mixture into 4 1/4 cup (310ml) heatproof dishes and sprinkle over the crumbs/butter mixture.
  • Bake for 25 minutes or until topping is golden.
  • Serve warm, sprinkled with parsley.
