Fish Sinigang (Tilapia) - Filipino Sour Broth Dish image

A very simple and quick Filipino dish. This is a sour broth soup with tilapia fish fillets. The flavor is sour but it actually enhances your appetite. This is considered comfort food in my house.

½ pound tilapia fillets, cut into chunks
1 small head bok choy, chopped
2 medium tomatoes, cut into chunks
1 cup thinly sliced daikon radish
¼ cup tamarind paste
3 cups water
2 dried red chile peppers

Steps:

  • In a medium pot, combine the tilapia, bok choy, tomatoes and radish. Stir together the tamarind paste and water; pour into the pot. Toss in the chili peppers if using. Bring to a boil, and cook for 5 minutes, or just until the fish is cooked through. Even frozen fish will cook in less than 10 minutes. Do not over cook or else the fish will fall apart. Ladle into bowls to serve.

3 (6 ounce) packages minature Cheddar cheese fish-shaped crackers
1 (1 ounce) package ranch salad dressing mix
3 teaspoons dill weed
½ teaspoon garlic powder
½ teaspoon lemon-pepper seasoning
¼ teaspoon cayenne pepper
⅔ cup vegetable oil

Steps:

  • Place the crackers in a large bowl. Combine the remaining ingredients; drizzle over crackers and toss to coat evenly. Transfer to two ungreased 15-in. x 10-in. x 1-in. baking pans. Bake at 250 degrees F for 15-20 minutes, stirring occasionally. Cool completely. Store in an airtight container.

2 cups shredded carrots
1 cup green onion (chopped)
1/2 lb fish fillet (without skin)
cooking oil (for frying)
1 cup all-purpose flour
1 teaspoon ground black pepper
1 teaspoon salt
1 teaspoon paprika
1 tablespoon fish sauce
1 tablespoon sriracha hot sauce
lime soda (7-Up or Sprite)

Steps:

  • Slice the fish filets into thin strips. Season the strips with salt and pepper.
  • Prepare the batter - add flour into a mixing bowl, then slowly add lime soda while stirring it constantly. Add enough liquid until you get a pancake batter consistency.
  • Season the batter with salt, fish sauce, ground black pepper, paprika, and sriracha hot sauce. Mix all these ingredients until they're well incorporated.
  • Add the fish meat into the batter along with the carrots and green onions. Mix all of them well until all are well coated.
  • Add oil into a frying pan and heat until a drop of water sizzles in the oil. Spoon the fish cake mixture into half a cup measuring cup and then add to the frying pan and press down to form then into pancake shapes.
  • Fry them over medium heat for 4 minutes on each side.
  • Remove the fish cakes to a plate lined with paper towels to drain the excess oil.
  • Serve with sriracha sauce and/or vinegar to dip them inches.

1 cup oil for frying
1 (4 ounce) whole tilapia, cleaned and scaled
salt to taste
3 tablespoons olive oil
1 onion, chopped
2 cloves garlic, minced
1 red bell pepper, cut into chunks
1 (1 inch) piece ginger, thinly sliced crosswise, or to taste
1 ¼ cups water
1 cup distilled white vinegar
5 tablespoons white sugar
salt and ground black pepper to taste
1 tablespoon cornstarch

Steps:

  • Heat oil in a deep-fryer or large saucepan to 350 degrees F (175 degrees C).
  • Pat tilapia dry with a paper towel. Cut 2 to 3 slits on either side of the fish. Sprinkle salt on top. Fry in the hot oil until browned, about 2 minutes per side.
  • Heat olive oil in a skillet over medium-high heat. Saute onion and garlic until onion is translucent, about 5 minutes. Add red bell pepper and ginger; saute until fragrant, about 2 minutes.
  • Mix water, vinegar, and sugar together in a bowl. Pour into the onion mixture in the skillet. Cover and bring to a boil. Cook until slightly reduced, about 2 minutes. Season with salt and pepper. Add cornstarch. Boil, stirring often, until sauce is thickened, about 5 minutes. Pour sauce over the fish.
