1/2 lemon
1/8 teaspoon salt
1/8 teaspoon pepper
1 1/2 pounds halibut steaks
1 (10-ounce) can Rotel tomatoes with chilies
1/2 cup mayonnaise

Steps:

1. Mix mayonnaise and Rotel. 2. Rub the Salmon with salt, pepper, and lemon. Coat both sides of Salmon with mayonnaise mixture and place in preheated skillet. Scoop the rest of the mixture on top of the fish. 3. Cook for 3-6 minutes on each side or until done.

1 1/2 lbs salmon fillets (no skin)
salt and pepper
1 (10 ounce) can diced tomatoes with lime and cilantro (well drained)
1/2 cup light mayonnaise
1 (10 ounce) bag fresh spinach
1 tablespoon butter
2 (8 7/8 ounce) envelopes pre-cooked long grain and wild rice blend
2 tablespoons shredded parmesan cheese (optional)

Steps:

Santa Fe Salmon.
Cut salmon into 4 servings; season with salt and pepper. Wash hands.
Preheat large saute pan on medium-high 2-3 minutes. Combine tomatoes and mayonnaise in medium bowl.
Coat both sides of salmon, using tongs, with tomato mixture and place in saute pan. Add remaining tomato mixture to pan and cover. Cook 3-5min until temperature reaches 145°F Cook time will vary depending on the thickness of the fillets. Serve.
Spinach Wild Rice. (I usually use 90 sec Uncle Ben's rice).
Place spinach and butter in microwave-safe bowl. Cover and microwave on HIGH 3 minutes.
Stir in rice and microwave 4 more minutes.
Let stand 2 minutes, sprinkle with cheese, if using, and serve.

Steps:

Drain 1 (10 oz) can of diced Rotel tomatoes with lime juice and cilantro (drain well) ½ cup mayonnaise salt and pepper salmon to taste 1 ½ lbs salmon filets (4 boneless, skinless fillets) Drain 1 can of tomatoes with lime juice and cilantro well. Add ½ cup mayonnaise and mix together with spoon until it becomes pastelike. Lightly salt salmon and a little pepper (if desired). Coat filets with tomato mixture. Spray frying pan with Pam. Heat pan till medium hot and add salmon filets that have been covered on both sides with tomato mixture. Add remaining mixture to frying pan. Cook on medium heat 6-8 minutes, turning half-waya through cooking time. When salmon begins to flake it is done. Serve with rice, tossed salad and French Bread. It is delicious.
