FLOUNDER ROLL-UPS

1-1/2 cups soft bread crumbs
1/3 cup diced celery
2 tablespoons finely chopped onion
1 teaspoon rubbed sage
1/2 teaspoon ground nutmeg
1/8 teaspoon salt
1/8 teaspoon pepper
1 large egg, beaten
4 flounder fillets (3 ounces each)
1/2 cup half-and-half cream
3 tablespoons sherry or chicken broth
1 tablespoon butter
1 tablespoon all-purpose flour
1/4 cup shredded Swiss cheese

Steps:

  • In a bowl, combine the first seven ingredients; stir in egg. Spread over fillets; roll up and secure with toothpicks. Place seam side down in an ungreased 2-qt. baking dish. Combine the cream and sherry or broth; pour over roll-ups. , Cover and bake at 350° for 25-30 minutes or until fish flakes easily with a fork and a thermometer inserted into stuffing reads 160°. Remove roll-ups and keep warm., In a small saucepan, melt butter; stir in flour until smooth. Add cream sauce from the baking dish. Bring to a boil; cook and stir for 2 minutes or until thickened. Reduce heat; stir in cheese until melted. Pour over roll-ups.

1 pound sole, orange roughy or flounder fillets
1 1/2 cups firmly packed spinach leaves
1/4 teaspoon garlic salt
1/3 cup fat-free mayonnaise or salad dressing
1/2 teaspoon Dijon mustard
1/4 cup garlic-flavored croutons, crushed
Lemon wedge, if desired

Steps:

  • Heat oven to 400°F. Spray square baking dish, 8x8x2 inches, with cooking spray. If fish fillets are large, cut into 4 serving pieces.
  • Place spinach on fish; sprinkle with garlic salt. Roll up each fillet, beginning at narrow end. Place rolls, with points underneath, in baking dish. Mix mayonnaise and mustard; spoon onto each roll. Sprinkle with crushed croutons.
  • Bake uncovered 15 to 20 minutes or until fish flakes easily with fork. Serve with lemon wedges.

1 cup sour cream
1 (1 ounce) package dry fiesta-style ranch dressing mix
1 cup chunky salsa
1 ½ cups shredded Cheddar cheese
10 (10 inch) flour tortillas

Steps:

  • In a medium bowl, mix the cream cheese, sour cream, fiesta-style ranch dressing mix, chunky salsa and Cheddar cheese. Spread even amounts of the mixture onto the tortillas. Roll tortillas and chill in the refrigerator until ready to serve.
  • To serve, slice the chilled, rolled tortillas into 3/4 inch slices and arrange on a large serving platter.

2/3 cup butter
2 tablespoons finely minced onions
1 cup minced crabmeat, fresh or 1 cup imitation crabmeat
2 tablespoons finely minced fresh parsley
1/4 teaspoon garlic powder
24 butter flavored crackers, crushed
12 (6 ounce) fillets sole or 12 (6 ounce) other thin white fish fillets
2 tablespoons lemon juice
1/4 cup grated parmesan cheese
3 tablespoons butter, fot dotting each roll
salt and pepper

Steps:

  • Preheat oven to 375 degrees.
  • Lighty coat a 9x13" baking pan with cooking spray or butter.
  • Melt 2/3cup butter in pan over medium heat.
  • Add onion and saute for 1 minute.
  • add crabmeat, parsley, garlic powder,salt and pepper.
  • Stir and cook 1 minute more.
  • Remove from heat and add crushed crackers.
  • Spread mixture evenly over 12 fillets sprinkle with lemon juice and parmesan cheese.
  • Roll up fillets and hold together with toothpicks.
  • Place in baking dish and dot each fillet with butter.
  • Cover pan and seal tightly with foil.
  • Bake in preheated oven for 15 to 17 minutes until fish flakes.

This is another one from the Favorite Brand Names Cookbook. It is my absolute favorite meal that we have at my house. We make it at least once a week. Anything that can get my son eating rice is great. I promise you won't be disappointed! Microwave instructions follow.

1 cup cooked rice
1 (10 ounce) package frozen chopped broccoli, thawed and well drained
1 cup shredded cheddar cheese
1/3 cup margarine or 1/3 cup butter, melted
1/3 cup lemon juice
1/2 teaspoon salt
1/4 teaspoon pepper
8 fish fillets, fresh (about 2 lbs) or 8 fish fillets, frozen, thawed (about 2 lbs)

Steps:

  • Preheat oven to 375.
  • In medium bowl, combine rice, broccoli and cheese.
  • In small bowl, combine margarine, lemon juice, salt and pepper; add 1/4 CUP ONLY to broccoli mixture.
  • Place equal amounts of broccoli mixture on fillets; roll up.
  • Place seam side down in shallow baking dish; pour remaining margarine mixture over roll-ups.
  • Bake 20 minutes or until fish flakes with fork.
  • Garnish with paprika if desired.
  • Microwave: Prepare fish as above. Arrange in shallow baking dish.
  • Cook tightly covered on HIGH for 10-12 minutes or until fish flakes with fork, rotating dish once.
  • Serve as above.

1/4 cup finely chopped onion
2 tablespoons margarine or butter
2 1/2 cups Kellogg's® seasoned stuffing mix
1/2 cup milk
6 fish fillets (1 1/2-lb), fresh or frozen, thawed
1/2 teaspoon salt
1/8 teaspoon pepper
1/4 cup margarine or butter, melted
CUCUMBER SAUCE
1/2 cup sour cream
1 cup shopped, unpeeled cucumber
1/2 teaspoon salt
1/2 teaspoon onion juice

Steps:

  • 1. Cook celery and onion in margarine until tender, but not browned. Remove from heat. Add KELLOGG'S Stuffing Mix, tossing gently. Mix in milk. Set aside.2. Sprinkle fillets with salt and pepper. Cut to size to fit around sides of six 2 1/2-inch muffin-pan or 6-ounce custard cups, coated with cooking spray, overlapping ends of fillets. Fill centers of cups with stuffing mix mixture. Brush with melted margarine. 3. Bake at 375°F about 25 minutes or until fish flakes easily when tested with fork. To serve, remove fish from pan and serve with Cucumber Sauce.4. To prepare Cucumber Sauce, combine sour cream with remaining ingredients. Refrigerate until ready to serve.

24 buttery round crackers, crushed
12 (6 ounce) fillets sole
2 tablespoons lemon juice
¼ cup grated Parmesan cheese
3 tablespoons butter

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Lightly coat a 9x13 inch baking pan with cooking spray.
  • Melt butter in frying pan over medium heat. Add onion and saute for 1 minute. Stir in crabmeat, parsley, garlic powder salt and pepper and cook 1 minute more. Remove from heat and stir in crushed crackers.
  • Spread mixture over filets; sprinkle with lemon juice and Parmesan cheese. Roll up filets, seal with toothpicks and place in prepared baking dish. Dot each roll with butter and cover pan tightly with foil.
  • Bake in preheated oven for 15 to 17 minutes until fish flakes.
