SOUTHWEST POTATO SALAD WITH LIME-CILANTRO VINAIGRETTE
This is a yummy variation of Recipe #218465, suggested in the same Lorna Sass cookbook. It is delicious warm, at room temperature, or cold. It doubles well if you are making for a larger group.

Steps:
- Peel potatoes and slice 1/4" thick. Cook just until fork tender; drain and transfer to a bowl.
- Add the peppers and onion to the potatoes.
- Prepare the dressing: Combine remaining ingredients and stir well or shake in a small jar.
- Pour over the still-warm potatoes and stir gently to combine, making sure all potatoes are coated.
- If desired, add more salt, pepper, or lime juice to taste.
- Serve warm or at room temperature. You can also refrigerate to serve later.

MESA GRILL'S SOUTHWESTERN POTATO SALAD
Steps:
- Combine all the ingredients, except the potatoes, in a medium bowl and season with salt and pepper, to taste. Place warm potatoes in a large bowl and pour the mixture over potatoes and mix well. Season again with salt and pepper, to taste.
SOUTHWEST SALAD WITH FRESH LIME CILANTRO DRESSING
I have been preparing this salad for the past 6 or 7 years and I still love it just as much as the first time I made it. These ingredients just come together so beautifully in this dish you'll be amazed at the reactions each time you serve it. And unlike many salads, it is even great the next day as leftovers!

Steps:
- Prepare dressing first by combining in food processor or blender fresh cilantro, lime juice, sour cream, sugar, salt and pepper.
- Then slowly drizzle in oil until fully combined.
- Pour dressing into container and chill in fridge for several hours for flavors to meld.
- In large glass/acrylic bowl layer lettuce, then tomatoes, onion, black bean, cheese, and corn.
- (At this point the salad can wait for up to 8 hours before serving if you wish to be a step ahead later on.).
- Before serving sprinkle broken chips over corn layer. Then pour dressing over chips and toss completely.
- Enjoy!

- For the Dressing, toss all ingredients into a separate bowl, mix well
- Let dressing sit for 30 minutes (if you can wait), to allow for flavors to meld.

- Load potatoes into a large pot and cover with cold water, with water level an inch or two above the potatoes. Add 1 teaspoon of salt to water and bring to a boil. Reduce heat to medium and keep at a low boil until potatoes are tender but still firm and intact (10 – 12 minutes). Drain, rinse with cold water and transfer to serving bowl.
- While potatoes cook let’s make the lime cilantro vinaigrette. In a decent sized measuring cup or deep bowl combine olive oil, cilantro, lime juice, garlic, mustard, cumin, salt & pepper and blend with an immersion blender until emulsified and creamy (about 90 seconds).
- Once potatoes are cooked, but still warm in the bowl, add diced red onion, red and yellow pepper and chopped green onion. Drizzle with vinaigrette, toss and season as needed.

- Bring a large pot of water to boil. Add potatoes and boil until potatoes are cooked: soft and tender, about 15-20 minutes. Make sure to boil potatoes so that they are not too soft and don't fall apart.
- In the mean time, in the small bowl, combine olive oil, minced garlic, chopped cilantro, and lime juice. Mix well.
- When potatoes are cooked, drain water from the pan and let the potatoes cool down a bit (or, rinse them quickly under cold water). Cut cooked and slightly cooled potatoes into 1 inch chunks. Place in a medium bowl, add 1/4 teaspoon salt and carefully mix. Pour the cilantro-lime sauce, and carefully mix. Taste, add more salt (maybe 1/8 teaspoon more) and add pepper if desired. Also, if desired, add more freshly squeezed lime juice.
