Fish stew with roast garlic & saffron image

Try this simpler, lighter version of bouillabaisse, a classic fish soup - serve with toasted slices of baguette to mop up the tomato based sauce

3 whole heads garlic
150ml good olive oil , plus extra for drizzling
few good pinches of flaky sea salt
50ml Pernod
good pinch of saffron strands
1 fennel bulb
4 celery sticks
1 onion
1 red chilli , seeds left in
2 tbsp olive oil
4 garlic cloves
2 tbsp fennel seeds
pinch of saffron
2 bay leaves
50ml Pernod
200ml white wine
750ml passata
3 grey mullet fillets (about 500g in total), skin on, cut into large chunks
300g gurnard fillets, skin on, cut into large chunks
200g prepared squid and tentacles, cleaned and cut into rings
juice 1 lemon
4 tbsp chopped flat leaf parsley , plus extra to serve
toasted slices of baguette , to serve

Steps:

  • Heat oven to 160C/140C fan/gas 3. To make the saffron and garlic paste, cut the whole heads of garlic in half horizontally. Place the garlic heads, cut-side up, on a small baking tray. Drizzle over a little olive oil and season with salt. Cover with foil and bake for 40-50 mins until softened. Remove the foil and return to the oven for a further 15-20 mins until the garlic has turned golden brown.
  • Meanwhile, make the soup base. Chop the fennel, celery and onion into small dice and thinly slice the red chilli. Heat the oil in a large saucepan and add the chopped vegetables. Grate the garlic into the pan and add the fennel seeds. Stir well, then cover and sweat for 10 mins. Add the saffron and bay leaves, and cook for a further 10 mins until the vegetables start to soften. Pour in the Pernod and wine, bring to the boil, then add the passata and 400ml water. Bring to the boil, then turn the heat down to a simmer. Cover and cook for 45 mins until all of the flavours have started to work together, then remove the pan from the heat and leave to cool a little.
  • Transfer the soup to a jug blender and blend until smooth, then pass through a fine sieve into a clean saucepan - you may need to do this in batches. If the soup needs thickening, reduce over a medium heat. When it is the consistency of pouring cream, remove from the heat and set aside, or leave to cool and chill in the fridge until needed. The base of the soup can be made 3 days ahead.
  • Meanwhile, for the paste, pour the Pernod into a small saucepan and add the saffron. Bring to the boil, add the olive oil and warm gently. Take off the heat and leave to cool.
  • When the garlic is golden brown, remove the tray from the oven and squeeze the cloves out into the bowl of a pestle and mortar. Add a large pinch of flaky sea salt and pound to a paste. Slowly add the saffron-infused olive oil, stirring constantly. Transfer to a clean container and chill until needed.
  • Bring the soup base to the boil in a large pan, then turn down to a light simmer and taste for seasoning. Add the chunks of prepared fish and squid, and gently poach the fish in the soup for 10 mins, or until it is just cooked. Remove from the heat and stir in the lemon juice and parsley. Ladle the soup into bowls, piling up the fish in the centre. Spoon on the saffron and garlic paste and sprinkle over some more parsley. Serve with toasted slices of baguette and the extra saffron and garlic paste on the side.

This hearty fish and shellfish stew is good for a chilly winter evening. It veers Mediterranean, with a base of leeks and onions, a bit of tomato, potatoes, saffron and garlic.

1 dozen medium-small clams, like littlenecks
1 pound mussels
3/4 pound monkfish or other firm-fleshed white fish, in 1-inch cubes
3/4 pound scrod, flounder, or other soft-fleshed white fish, in 1-inch cubes
0.75 pound squid, in 0.5-inch rings, plus tentacles
1/2 pound bay scallops, optional Salt and pepper
4 tablespoons olive oil
2 cups medium-diced onions
3 cups medium-diced leeks, rinsed of grit
1/2 cup diced canned tomato
2 teaspoons chopped fresh thyme leaves, or a few thyme sprigs
1 bay leaf
Pinch of saffron, about 1/8 teaspoon
4 garlic cloves, chopped
1 teaspoon paprika
Pinch red pepper flakes
6 cups fish stock, chicken broth, or water
1 pound Yellow Finn or russet potatoes, peeled, in 1/2-inch slices
Garlic-saffron sauce
Salt and pepper

Steps:

  • Soak the clams in cold water to remove grit and sand, then drain. Rinse and de-beard the mussels. Put the monkfish, scrod, squid and bay scallops (if using) in separate small bowls. Season the fish lightly with salt and pepper.
  • Heat the olive oil in a heavy-bottomed soup pot or Dutch oven over medium heat. Add the onions and leeks and cook until softened, about 5 minutes. Add the tomato, thyme, bay leaf, saffron, garlic, paprika and red pepper flakes. Season generously with salt and pepper and cook, stirring occasionally, for another 5 minutes.
  • Turn the heat to high, add the fish stock, chicken broth or water, and bring to a boil. Taste for salt and adjust to taste. Add the potatoes and reduce the heat so they simmer gently until firm-tender, about 10 minutes. (The stew may be prepared to this point up to 2 hours ahead.)
  • To finish the stew, return the heat to a brisk simmer. Add the clams and cook till they open, 2 to 3 minutes. Add the mussels, monkfish and scrod and simmer until the mussels open, 2 to 3 minutes. Add the squid and scallops, if using, and cook 1 minute more. Turn off the heat, stir in the garlic-saffron sauce.

3 cups Michael White's Fish Stock
1 cup uncooked couscous
1 (2-inch) stick cinnamon
Pinch of saffron threads
1/4 cup plus 1 tablespoon extra-virgin olive oil, plus more for drizzling
1/4 cup toasted pine nuts
1/2 cup golden raisins
Sea salt and freshly ground pepper
1 pound Pacific halibut or black bass, cut into large cubes about 1 inch in size
1/2 pound Manila or littleneck clams, scrubbed
1/2 pound mussels, scrubbed and debearded
1 cup grape tomatoes, halved
4 cloves garlic, crushed
Pinch of crushed red pepper flakes
1/2 pound large shrimp, peeled and deveined
1 1/2 cups dry white wine
1/2 pound squid (bodies only), cleaned, split lengthwise and cut crosswise into thin slices
2 tablespoons finely chopped flat-leaf parsley and basil (mixed together), plus more for garnish

Steps:

  • In a medium saucepan, bring 2 cups stock to a boil over high heat. Place couscous, cinnamon, and saffron in a large bowl. Pour boiling stock over couscous; cover bowl tightly with plastic wrap and let stand in a warm spot for 5 minutes.
  • Uncover and fluff couscous with a fork; let stand until all liquid has been absorbed. Remove cinnamon stick and discard. Stir in 1 tablespoon olive oil, pine nuts, and raisins; season with salt and pepper. Set aside and keep warm.
  • In a large skillet, heat remaining 1/4 cup olive oil over medium-high heat. Add halibut or bass and cook, stirring, about 3 minutes. Add clams, mussels, and tomatoes; stir to combine. Add garlic, pepper flakes, and shrimp. Carefully add wine and remaining cup fish stock; cook until clams and mussels open. Stir in calamari and cook for 30 seconds.
  • To serve, divide couscous evenly between 4 plates and top with seafood mixture. Drizzle with olive oil and garnish with parsley; serve immediately.

2 tablespoons tomato paste
1 pound large shrimp, peeled and deveined, shells reserved
1/2 teaspoon crushed saffron threads
2 celery stalks, cut into a 1/4-inch dice (3/4 cup), plus a handful of tender inner leaves, chopped, for serving
2 shallots, chopped (1 cup)
4 cloves garlic, thinly sliced (2 tablespoons)
Kosher salt and freshly ground pepper
2 plum tomatoes, cored and cut into a 1/2-inch dice (1 cup)
2 teaspoons fresh thyme leaves
2/3 cup dry white wine, such as Sauvignon Blanc
2 1/2 pounds littleneck clams (about 24), purged and drained
2 pounds mussels (about 48), purged and drained
1 can (14.5 ounces) seafood or fish stock, such as Bar Harbor
2 teaspoons grated orange zest, plus 3 tablespoons fresh juice
1 1/2 pounds firm, skinless white-fish fillet, such as halibut, cut into 1-inch pieces
Chopped fresh parsley leaves, for serving
Toasted Garlic-Butter-and-Herb Bread, for serving (optional)

Steps:

  • In a saucepan, heat 1 tablespoon oil over medium-high. When it shimmers, add tomato paste and shrimp shells. Cook, stirring, until shells turn pink and opaque, about 2 minutes. Add 2 cups water and gently boil 5 minutes. Strain shrimp broth into a heatproof bowl; discard solids. Stir saffron into broth.
  • Heat remaining 2 tablespoons oil in a braiser pan or wide, shallow pot over medium. Add celery, shallots, and garlic; season with salt and pepper. Cook, stirring occasionally, until fragrant, 1 to 2 minutes. Stir in tomatoes and thyme. Cover and cook until tomatoes collapse and release their juices, 6 to 8 minutes. Add wine and boil until mostly evaporated.
  • Add clams to pan, increase heat to medium-high, and cook, covered, just until they begin to open, 6 to 8 minutes (discard any that don't open). Transfer clams to a large heatproof bowl and cover with a plate to keep warm. Add mussels to pan and cook, covered, just until they begin to open, about 5 minutes (discard any that don't open). Transfer mussels to bowl with clams.
  • Add seafood stock, shrimp broth, and orange zest and juice to pan. Bring to a simmer over medium-high heat; simmer 5 minutes. Meanwhile, remove about half of clams and two-thirds of mussels from their shells, reserving meat and juices and discarding empty shells.
  • Stir shrimp and fish into pan, reduce heat to medium-low, and cook, covered, just until shrimp and fish are firm and cooked through, 3 to 5 minutes. Return shelled and in-shell clams and mussels and any accumulated juices to pan, stirring to combine. Remove from heat, sprinkle with celery leaves and parsley, drizzle with more oil, and serve with bread, if desired.

ANYTIME FISH AND SHELLFISH STEW

This is a sort of ad-lib fish stew, inspired by the kind of stew you'd find served in the South of France: Its exact proportions and quantities aren't set in stone. Use whatever white-fleshed fish and shellfish you like. Potatoes make the dish more substantial, and the slices really absorb all the lovely flavors of the stew.

1 medium onion, diced (about 2 cups)
Salt and pepper
4 garlic cloves, minced

1 large thyme sprig
Pinch of crumbled saffron threads
Pinch of red-pepper flakes or a whole small dried red pepper
Splash of dry white wine (about 1/4 cup)
1 1/2 cups chopped tomato, canned or fresh (about 2 medium)
4 cups fish stock or water
2 pounds yellow-fleshed potatoes, such as Yukon Gold, sliced about 1/4-inch thick
6 medium cherrystone clams, scrubbed
1 pound boneless, skinless cod or halibut, cut in 1-inch pieces
1 pound mussels, cleaned

Steps:

  • Heat olive oil over medium in a large, heavy-bottomed soup pot or Dutch oven. Add onions and stir to coat. Season with salt and pepper. Cook, stirring, until softened and lightly colored, about 10 minutes.
  • Stir in garlic, bay leaf, thyme, saffron and red pepper, and cook for 1 minute. Add wine and tomatoes, and simmer 1 minute. Add stock and bring to a slow boil over medium. Add potatoes and a good pinch of salt. Adjust heat to a brisk simmer. Cook with lid ajar until potatoes are just done, about 10 minutes. Taste broth - it should be well seasoned - and adjust as necessary. (You can do this up to an hour ahead of time.)
  • As the broth simmers, add the clams, and cook for 5 minutes, covered with the lid ajar. Add cod and mussels on top, cover and cook until the mussels are done, 4 to 5 minutes. Turn off heat, and let the stew steep for 5 to 10 minutes, until the mussels and clams open. Serve in wide soup bowls.

FISH STEW WITH PEPPERS, ALMONDS AND SAFFRON

They make this dish in a cazuela (a glazed terra-cotta dish from Spain) but a lidded casserole is just as good. Also, they replace the fish stock with water. It will still taste delicious.

1 large red bell pepper, cut into thin strips

Steps:

  • Heat the olive oil in a large, heavy casserole.
  • Add the onion, bell pepper strips and garlic and season with salt and black pepper.
  • Cover and cook over moderately high heat, stirring occasionally, until the vegetables are just beginning to brown, about 5 minutes.
  • Add the rosemary, paprika and bay leaf and cook for 1 minute.
  • Add the white wine and bring to a boil.
  • Simmer until the liquid is slightly reduced, about 5 minutes.
  • Add the tomatoes, water and saffron water and bring to a boil.
  • Cover the casserole tightly and cook over moderate heat for 5 minutes.
  • Finely grind the almonds in a food processor.
  • Stir the almonds into the stew and simmer until slightly thickened, about 3 minutes.
  • Add the clams, cover and cook until most of them open, 5 to 10 minutes.
  • Add the fish and season with salt and pepper.
  • Cover and simmer until the fish is cooked through, 2 to 3 minutes.
  • Discard the bay leaf.
  • Transfer to bowls and serve.
  • Serve with crusty bread and a nice rich wine.

28 ounces undrained canned tomatoes
4 cups water
1 bay leaf
1/4 teaspoon dried saffron thread
4 minced garlic cloves or 1 teaspoon garlic powder
1/2 teaspoon dried leaf thyme
1/2 teaspoon ground fennel
1/2 teaspoon salt
1/4 teaspoon celery salt
1/4 teaspoon fresh ground black pepper
1/3 cup all-purpose flour
1/3 cup cold water
1 lb salmon (or frozen or a mixture fish) or 1 lb cod (or frozen or a mixture fish)
1/2 lb lobsters or 1/2 lb scallops
1 lb mussels or 1 lb clam, in the shell
1/4 cup chopped fresh parsley or 1 tablespoon dried parsley

Steps:

  • Slice a piece of orange peel about 1 inch (2.5 cm) wide and the length of one side of an orange. Briefly whirl tomatoes and juice in a food processor or blender, just until broken up, but not puréed.
  • In a large saucepan or soup pot, stir tomatoes with 4 cups (1 L) water, bay leaf, peel strip and saffron. Place over medium-high heat. Stir in garlic, thyme, fennel, salt, celery salt and black pepper. Bring to a boil. Reduce heat to low and simmer uncovered 15 minutes, stirring occasionally to develop flavor.
  • In a measuring cup, stir flour with 1/3 cup (75 mL) cold water until no lumps remain. After tomato mixture has simmered 15 minutes, slowly add to flour and water mixture while stirring constantly. Continue simmering, uncovered and stirring often, until mixture has thickened and no taste of flour remains, from 10 to 15 minutes.
  • Taste, and add salt and pepper, if needed. Broth will have a very strong taste, which mellows when seafood is added. If making ahead, remove from heat at this point and refrigerate. Covered, broth will keep well for 3 days.
  • Meanwhile, removing any bones or shells (but not from mussels or clams), cut fish or seafood into bite-size chunks.
  • When ready to serve, remove bay leaf and orange peel from broth. If using clams, stir into hot stew and simmer 10 minutes before adding remaining fish and seafood. Stir fish, seafood, including any mussels and parsley, into simmering stew.
  • Simmer, covered and stirring often, until clam or mussel shells have opened, about 8 minutes. Sprinkle with more chopped fresh parsley. Serve with a crisp baguette or sourdough bread to dip into the broth.

1/4 teaspoon saffron threads, crushed
1 1/2 pounds sea bass fillets, cut into 1-inch pieces

Steps:

  • Steam squash until almost tender, about 10 minutes. Cool. (Can be prepared 1 day ahead. Cover and chill.)
  • Heat olive oil in heavy large pot over medium heat. Add chopped onion, chopped fennel and minced garlic and sautéuntil translucent, about 3 minutes. Add tomato paste, chopped fresh thyme and bay leaf and stir 1 minute. Add clam juice, tomatoes with juices, white wine, Sherry and 1/2 cup water and bring to boil. Reduce heat to medium, cover and simmer 20 minutes to blend flavors. Discard bay leaf.
  • Add clams and saffron to pot; cover and cook until clams open, about 4 minutes (discard any clams that do not open). Add sea bass and steamed squash to stew. Cover and simmer until squash is tender and fish is just opaque in center, about 5 minutes. Season stew to taste with salt and pepper.
  • Ladle stew into bowls. Garnish with fennel fronds, if desired, and serve.
