MAHI-MAHI WITH MACADAMIA NUT SAUCE

We re-created this recipe for the Our State Magazine website based on a recipe from one of their 1967 magazines. It was a time before Dolphin Fish became known as Mahi-Mahi and... back when it was bringing a good price at 1.00 per pound. My, how times do change.

- Prepare the Macadamia Nut Sauce by lightly browning the nuts in butter. Add the parsley. Set aside and keep warm. Makes 1 cup of sauce.
FILLET OF FISH MACADAMIA
Steps:
- Season fish with peppercorns and salt. Mix egg yolk, 2 tablespoons clarified butter and juice of 1/4 lemon together. Brush yolk mixture onto fish and press nuts into each side. Place 2 tablespoons clarified butter in frypan. When hot add fish and fry 3 minutes each side, add heated sherry and set alight. Add chopped parsley stalks. Place fish on serving dish. Add 1 tablespoon butter and extra lemon juice to frypan, pour sauce over the fish.
MACADAMIA-CRUSTED SEA BASS WITH MANGO CREAM SAUCE
Steps:
- In a food processor, combine macadamia nuts, bread crumbs, 1 teaspoon olive oil, black pepper, and red pepper flakes. Process until smooth. Preheat oven to 350 degrees F (175 degrees C).
- In a small saucepan over medium heat, combine mango, cream, and lemon juice. Bring to a boil, reduce heat, and simmer until thickened.
- Season fish with salt and black pepper. Heat 1 tablespoon olive oil and crushed garlic in a large skillet over medium heat. Sear the sea bass on both sides, and remove from heat.
- Transfer fish to preheated oven, and roast until cooked through. Cover the sea bass with macadamia crust, and return to the oven until crust browns. Top with the mango cream sauce.

FISH WITH MACADAMIA BUTTER SAUCE

- Heat the olive oil in a pan over medium heat.
- Add the fish fillets and cook 2- 3 minuts each side( cooking time depends on the thickness of the fillets). Transfer to a warmed plate and cover with foil to keep warm.
- Reduce heat to medium low. Add the butter and chopped macadamias. Cook, stirring, for about a minute- until the butter and nuts are light golden brown. Watch carefully as you dont want the butter to burn.
- Remove from the heat. Season with salt and pepper. Stir in the parsley.
- Serve the fish and spoon over the macadamin and butter sauce. Serve with lemon wedges.

MACADAMIA NUT BREADED FISH

- In a bowl, mix together 2 cups flour and water until smooth with the consistency of pancake batter. Mix bread crumbs and macadamia nuts together. Season fillets with salt and pepper. Lightly dust with flour. Dip fillet in batter and roll into the bread crumb/nut mixture. Reserve in the refrigerator until ready to cook.
- Fry fillet in enough oil to coat the bottom of the skillet. Fry until golden brown and turn to cook other side. Cook through until done. Serve with Guava Lime sauce on the side or drizzle on plate before adding chicken.
- In a saucepan, add guava puree, lime juice and white wine. Reduce by half. Add heavy cream and reduce again by half. Whisk in butter a little at a time, stirring constantly over low heat. As soon as all the butter is incorporated, remove from heat and season with salt and pepper. Strain through a fine sieve. Keep sauce warm until needed.
ROASTED CHICKEN WITH FISH-SAUCE BUTTER
Roasting chicken thighs in a hot oven is a hands-off way to achieve two of life's greatest pleasures: crispy skin and golden schmaltz. And you want that chicken fat because it will crisp hand-torn bread into croutons. This meal is made even more lovely thanks to a bold but balanced fish-sauce butter that you whip up on the stovetop while the rest of the meal takes care of itself in the oven. Be sure to start with cold butter; the gradual melting of the fat helps thicken the sauce without breaking it.

- Heat oven to 450 degrees. Pat the chicken dry with paper towels and season lightly with salt and pepper. (The fish-sauce butter is plenty salty, so don't overdo the salt here.) Arrange the chicken skin-side up on a sheet pan and drizzle the oil over the chicken skin, coating it evenly. Roast until the chicken is light gold and the sheet pan is pooling with hot, rendered chicken fat, about 25 minutes.
- Take the sheet pan out of the oven, scatter the bread around the chicken and toss gently to coat in the chicken fat. Place the pan back in the oven and roast until the chicken is golden, crispy and sizzling (you'll hear it), about 15 minutes.
- While the chicken roasts, combine the brown sugar, fish sauce and lemon juice in a small saucepan and bring to a simmer over medium heat. Cook, occasionally swirling the pan or stirring the sauce with a wooden spoon, until bubbling vigorously and the mixture has reduced by about half, 2 to 3 minutes. This part is fun: Turn off the heat and add the butter, constantly swirling the pan or stirring with a wooden spoon, until all of the butter has melted and incorporated into the fish sauce mixture.
- To serve, scatter the cilantro all over the chicken and bread and spoon some of the fish-sauce butter over each chicken thigh, reserving some to add to each plate for dipping the chicken and croutons while eating (which is divine).
MACADAMIA NUT CRUSTED MAHI MAHI
Steps:
- Preheat oven to 375 degrees F (190 degrees C).
- In a food processor or blender, pulse together macadamia nuts and breadcrumbs until finely ground. Pour nut mixture onto a plate, and coat fish fillets on both sides.
- Heat butter in a large skillet over medium heat. Fry fillets on both sides until nuts are golden brown. Remove to a baking pan.
- Add shallots to skillet, and cook until translucent. Stir in chicken stock. Mix in pineapple, papaya, mango, coconut, and habanero peppers. Season with salt, pepper, and sugar to taste. Simmer until sauce is thick, about 30 minutes. Strain to remove peppers, fruit, and shallots. Reserve sauce in a pan over low heat.
- Bake mahi mahi in preheated oven about 10 minutes, until internal temperature reaches 140 degrees F. Remove fish, and lightly coat with sauce.

PAN-SEARED HALIBUT WITH BLOOD ORANGE BUTTER SAUCE
Although I ate my first blood orange quite simply, I've since experimented with other preparations. This lovely butter sauce is wonderful over grilled or pan-seared fish--halibut, salmon, striped bass or snapper especially.

- For the blood orange butter sauce: Melt 2 pieces of the butter in a heavy-bottomed saucepan over medium heat. Add the shallots and cook, stirring occasionally, until soft and translucent, about 5 minutes.
- Add the orange juice; stir to combine and simmer on medium-low heat until the liquid is reduced by about half, about 5 to 8 minutes.
- Add the remaining 8 pieces of butter, one piece at a time, whisking constantly, until each is fully incorporated. Remove from the heat and season with salt and pepper.
- For the pan-seared halibut: Pat the fillets dry with paper towels. Heat the oil in a stainless-steel or cast-iron skillet over medium-high heat. Place the fish in the skillet, skin-side down, allowing at least 2 inches between the fillets. Cook until the skin is crispy and the fish releases from the pan easily, about 3 minutes. Season the skinless side of the fish with a pinch of salt and pepper, then flip and cook until the fish is just opaque in the center, 5 to 7 minutes.
- Place a few spoonfuls of the Blood Orange Butter Sauce over the fish. Sprinkle with the pomegranate arils and serve.

- Chop the macadamia nuts in a food process until minced. In a medium bowl, combine the nuts, breadcrumbs, garlic, parsley, a pinch of salt & pepper, and the melted butter. Gently toss with a fork until everything is evenly coated in butter.
- Line 3 pie plates or flat open dishes in a row on your working space. Place the flour in dish #1. Place the beaten egg whites in dish #2. Place the nut/breadcrumb mixture in dish #3. Place a large cookie sheet at the end of the line.
- Dip each halibut filet one at a time into the flour. Shake off the excess flour and gently turn over inside the egg whites to coat. Let the excess egg drip off and then place it into the breadcrumb mixture. Use a spoon to cover and coat the fish with the breadcrumbs. Be sure to coat the top, bottom, and all sides. Gently transfer the coated fish to the baking sheet. Repeat with remaining fillets.

- In a saucepan combine wine, lemon zest (or lemon grass) and ginger. Simmer over medium heat for about 5 minutes or until almost all liquid is gone. Add the cream, mix well and remove from heat. Pour into blender and blend until smooth. Return to saucepan, add the fruit puree and simmer over low heat for 8 minutes. Note - I recommend getting everything else ready and then finishing the butter sauce during the last few minutes when the fish is in the oven. To finish the sauce, add the cold butter pieces one at a time, and stir until incorporated before adding the next piece. Be careful not to boil or else the sauce will separate. Season with salt and pepper.
- To prepare the coating, place the nuts, panko and basil in a food processor and process until fine. Spread on a plate.
- In a bowl, combine the mayo and Sambal or Sriracha and mix well. Lightly season the fish with salt and pepper. Evenly spread a light coat of dressing on each side of fillet. Coat evenly with crumb mixture.
