These pancakes require only five ingredients, super easy to make, and require very little time. Oil-free, dairy-free and low-fat.

1/2 cup whole wheat flour
1 tbsp. organic cane sugar (brown sugar works well)
1/2 tsp. baking powder
3/4 cup unsweetened almond milk
1/2 tsp. vanilla

Steps:

  • Heat a nonstick skillet over medium heat or slightly below.
  • Place all dry ingredients into mixing bowl and whisk to combine.
  • Add wet ingredients and whisk until batter is smooth. The batter should be a little runnier than what you are used to so play around with the consistency just a bit. It's what makes these pancakes cook, brown, and taste so good.
  • Pour 1/4 cup of the batter into the center of the pan. Cook until bubbles appear and begin to break, usually about a minute. Flip pancake and cook for another 30-45 seconds.
  • Keep going until you run out of batter.

2 cups whole wheat pastry flour
1/4 cup unrefined sugar
2 tablespoons baking powder
1/4 teaspoon sea salt
2 cups almond milk
2 teaspoons natural apple cider vinegar
1/4 cup coconut oil or 1 medium banana
1 teaspoon vanilla (optional)
1 cup semisweet vegan chocolate chips (optional)
1 cup fresh berries (optional) or 1 cup frozen berries (optional)
1/2-1 teaspoon ground cinnamon (optional)

Steps:

  • Add apple cider vinegar to almond milk and set aside to let curdle (this will make your pancakes fluffier).
  • Preheat electric griddle to 350 degrees.
  • Whisk dry ingredients together.
  • Add applesauce and vanilla to almond milk/ACV mixture and stir.
  • Pour wet ingredients into dry ingredients and stir until smooth--don't go too crazy, you want these pancakes to be fluffy! If you are using extras, stir them in gently at this point.
  • Using a 1/4 cup measuring cup per pancake, pour batter onto your electric griddle or frying pan. Flip when you see bubbles that show the griddle through the middle of the pancake, and cook the other side. These cook quickly, so don't get distracted!

  • In a large bowl, puree peeled banana and chia seeds with a fork. Add non-dairy milk and whisk to combine.
  • Add about half of the flour on top of the banana mixture along with baking powder. Stir a few times with a spatula, then add the rest of the flour, and stir again until just combined - a few lumps are OK.
  • Preheat a large nonstick skillet or a griddle over medium heat (if your skillet or griddle aren't nonstick, add 1 tsp of oil or spray the surface with cooking spray). Drop pancake batter onto the heated surface, about 1/4 cup per pancake. I usually fit 2-3 pancakes at a time in my large 12-inch skillet.
  • Cook the pancakes until bubbles start forming on top, about 1-2 minutes. Flip and cook about 1 minute more. Serve with pure maple syrup and your favorite sliced fruit.
