An easy, weeknight dinner that's customizable and the perfect quick dinner for two!

Number Of Ingredients 8

~2 cups dried orecchiette pasta
4 Tablespoons butter
2 Tablespoons olive oil
1 cup cherry tomatoes
3 garlic cloves (sliced)
Kosher Salt (to taste)
Red Pepper Flakes (to taste (optional, recommended!))
1/4 to 1/2 reserved pasta water

Steps:

  • In a large sauce pan filled 3/4s full with water and a liberal amount of salt, bring to a boil. Add orecchiette and cook al dente according to package times.
  • Meanwhile in a large skillet, melt butter and olive oil together over medium heat. Add tomatoes, stirring occasionally. As they begin to heat, they will begin to pop. You can use the back of your spoon to lightly "smash" them and let the juices create a sauce. Let cook for 2-3 minutes, add garlic slices, salt, and red pepper flakes.
  • Cook for 7-8 minutes, adding reserved pasta water until desired consistency of the sauce is reached (I err on the 1/4 cup side generally). Let sauce cook for an additional 1-2 minutes and add al dente pasta. Toss together, garnish with basil or parmesan cheese as desired.

1 (28-ounce) can peeled plum tomatoes, pureed
4 tablespoons extra-virgin olive oil
1 clove garlic, finely chopped
5 basil leaves, torn
Salt

Steps:

  • Empty peeled plum tomatoes into a bowl and break them up with your hands or a spoon.
  • Heat olive oil in a saucepan and add the chopped garlic. Gently fry ingredients together.
  • Add the peeled plum tomatoes to the saucepan. Simmer on low to medium heat for 10 minutes.
  • Season the sauce with salt. Add the torn basil leaves at the very end.

5large ripe tomatoes
140g spaghetti
3 tbsp olive oil
100g diced bacon or lardons
2 garlic cloves , chopped
50-85g/2-3oz soft fresh rindless goat's cheese
handful basil and/or snipped chives

Steps:

  • Pour boiling water over the tomatoes to cover, leave for 1 min, then drain and slip off the skins. Quarter and seed the tomatoes, then chop the flesh.
  • Bring a large pan of salted water to the boil, add the spaghetti and give it a stir. Boil for the timing given on the pack.
  • Meanwhile, heat 1 tbsp of the oil in a frying pan, add the bacon and fry until starting to crisp up. Add the garlic, tomatoes, the rest of the oil and pepper and salt, if using. Heat through for 1-2 mins until just simmering.
  • Drain the spaghetti and add to the pan, tossing in the sauce until lightly coated. Divide between two warm soup plates, crumble over the cheese and scatter over the herbs. Serve with crusty bread and a glass of red wine.

1/4 cup extra virgin olive oil
1 1/2 teaspoons crushed red pepper flakes
1/2 teaspoon sea salt
3 medium garlic cloves, finely chopped
1 (28 ounce) can crushed tomatoes
1 pinch lemon zest (of 1 lemon)

Steps:

  • Combine the olive oil, red pepper flakes, sea salt, and garlic in a cold saucepan.
  • Stir while you heat the mixture over medium-high heat, saute just 45 seconds or so until everything is fragrant - you don't want the garlic to brown.
  • Stir in the tomatoes and heat to a gentle simmer, this takes just a couple minutes.
  • Remove from heat and carefully take a taste (you don't want to burn your tongue) -- If the sauce needs more salt add it now.
  • Stir in the lemon zest, and that's it! Simple, quick, and delicious.
