2 tablespoons soy sauce
1 tablespoon white wine vinegar
1 teaspoon sesame oil
1 tablespoon honey
1 teaspoon Chinese five-spice powder
½ teaspoon minced garlic
½ teaspoon ground ginger
2 pounds pork short spareribs

Steps:

  • Combine soy sauce, white wine vinegar, sesame oil, honey, five-spice powder, garlic, and ginger in a large storage bag. Shake to mix well. Add ribs to marinade; refrigerate 4 to 8 hours, turning bag occasionally.
  • Preheat an oven to 325 degrees F (165 degrees C). Remove ribs from marinade and place in a roasting pan; cover tightly with aluminum foil.
  • Cook ribs for one hour, turning occasionally. Increase oven temperature to 400 degrees F. Remove foil from pan and bake an additional 20 minutes, turning once, until ribs are nicely browned.

1/4 cup hoisin sauce
1/4 cup ketchup
1/4 cup honey
1/4 cup sweet chili sauce
2 tablespoons liquid, aminos
1 tablespoon rice vinegar
1 tablespoon fresh squeezed lemon juice
3 large garlic cloves, pressed
2 tablespoons fresh ginger, minced
1/2 tablespoon Chinese five spice powder
2 tablespoons brown sugar
1/8 teaspoon cayenne (to taste)
3 lbs pork side ribs, portion into individual ribs
1 tablespoon sesame seeds, for garnish

Steps:

  • In a large bowl, combine hoisin, honey, ketchup, sweet chili sauce, soy sauce, rice vinegar, lemon juice, ginger, garlic, Chinese 5 Spice, brown sugar and cayenne; whisk. Place ribs in a large re-sealable plastic bag and pour the marinade over; massage until ribs are evenly coated. Transfer to the refrigerator overnight.
  • Grease a 9 x 13-inch baking dish and place ribs in a single layer; cover the dish with aluminum foil. Transfer to the oven and cook ribs on 350ºF for 1 hour or until tender, brushing with the marinade every 15 minutes.
  • Pour marinade in a small saucepan and bring to a boil. Reduce heat to medium-low and keep a gentle simmer.
  • After an hour, transfer ribs on a wire rack sits on a baking sheet. Brush the remaining marinade and transfer back to the oven for 20 minutes. Serve immediately with green beans and sprinkle sesame seeds.

These ribs are fantastic and finger licking good. They turn out moist with a rich, dark glaze. This is a Wolfgang Puck recipe that I found in the Chicago Tribune last month. The five-spice powder, hoisin sauce, plum sauce and pickled ginger can be found in the Asian area of most well-stock supermarkets.

3 lbs baby back ribs
1 tablespoon Chinese five spice powder
1/2 teaspoon salt
fresh ground black pepper
1/4 cup hoisin sauce
1/4 cup chinese plum sauce
1 cup apple cider or 1 cup apple juice
1/4 cup cider vinegar
2 tablespoons tomato paste
1 tablespoon honey
1 tablespoon pickled ginger, minced
1 garlic clove, crushed
2 teaspoons soy sauce

Steps:

  • Heat oven to 350°F Rub the ribs all over with the five-spice powder then salt and pepper to taste; set aside. Stir together the hoisin and plum sauces in a small bowl; brush evenly over the ribs then cut the ribs into 3-5 rib sections.
  • Place the ribs in a large, oiled roasting pan; cover the pan tightly with foil. Bake until the meat is tender enough to be pierced easily with a fork, about 1 1/2 hours. Remove foil and remove ribs to a platter.
  • Pour the liquid from the roasting pan into a degreaser or bowl; skim off the fat. Pour the liquid into a large Dutch oven; heat over medium heat. Add the cider, vinegar, tomato paste, honey, ginger, garlic and soy sauce. Cook, stirring often, until the liquid reduces to a syrupy consistency, about 15 minutes.
  • Cut the ribs into individual pieces; place in the Dutch oven. Heat over medium heat, turning ribs to coat evenly. Transfer ribs to a platter. Pass extra sauce on the side.

Being from Texas, I'm not usually too fond of rib recipes that involve cooking them in the oven, but I love this recipe. It's an Emeril Lagasse recipe--enough said.

3 1/2 lbs pork baby back ribs (2 racks)
1 tablespoon salt
1 tablespoon black pepper
1/4 cup five-spice powder
2 tablespoons sesame oil
2 (14 ounce) bottles ketchup
3/4 cup orange juice
1 tablespoon molasses
1 tablespoon mustard (Creole or whole grain)
1 tablespoon garlic (minced)
1/2 cup yellow onion (chopped)
1/4 cup light brown sugar (packed)
1 teaspoon hot sauce (Texas Pete)
1 teaspoon Worcestershire sauce
1/2 teaspoon salt
1/2 teaspoon cayenne powder
1 tablespoon fresh ginger (grated)
1/4 teaspoon black pepper

Steps:

  • For the ribs: Season both sides generously with salt, pepper, and five-spice powder.
  • Wrap each rack with plastic wrap, then wrap tightly with aluminum foil. Refrigerate overnight.
  • Pre-heat oven to 375°F Bring ribs to room temperature.
  • Bake in the plastic and foil on a baking sheet for 1 1/2 hours. Carefully open package and test for doneness (bone should pull away from meat). Cook a little longer if necessary.
  • Remove from oven and let cool slightly. Brush ribs with BBQ sauce. Slice into 2-rib sections. Drizzle with sesame oil and serve with BBQ sauce on the side for dipping.
  • For the BBQ/Dipping sauce: Combine all ingredients in food processor or blender and process until smooth. Will keep in refrigerator for 2-3 weeks.
