CHILLI BURGER WITH ROASTED TOMATOES & RED ONION RELISH
Transform burgers into something stylish with roasted tomatoes and red onion relish

Steps:
- Heat oven to 200C/fan 180C/ gas 6. Mix the beef with the chilli and some chopped coriander, then season well. Shape into four patties about 2.5cm thick. Chill until needed.
- Keeping the tomatoes on the vine, put them in a roasting tin. Drizzle over 1 tbsp of olive oil and season. Roast for 12-15 mins until just soft.
- Heat 1 tbsp of oil in a non-stick frying pan. Then cook burgers on each side for 4 mins for rare or 5 mins for medium. For the relish, mix 2 tbsp of olive oil, the lime juice and sweet chilli sauce, parsley, coriander leaves and red onion. To serve, place a burger on a muffin half, add a branch of tomatoes and top with red onion relish.

- Preheat a grill for high heat. When the grill is hot, lightly oil the grate.

THROWDOWN'S GREEN CHILE CHEESEBURGERS
In New Mexico, the state vegetable is the chile pepper, where they're layered atop beef for an iconic dish: the Green Chile Cheeseburger. Sometimes topping the Scoville chart, and sometimes mildly spicy, these burgers are defined by a relish of mixed chiles and a handsome dose of melted cheese. Bobby's recipe has poblano, Hatch and serrano chiles with honey and red wine vinegar to balance. Pickled red onions add tang, and a Monterey Jack-Parmesan queso sauce brings it home with creamy rich flavor.

- Burgers:
- For the queso sauce:
- Melt the butter in a small saucepan over medium heat. Whisk in the flour and cook for 1 minute. Add the milk, increase the heat to high and cook, whisking constantly, until slightly thickened, about 5 minutes. Remove from the heat and whisk in the cheese until melted; add the Parmesan and season with salt and pepper, to taste. Keep warm.
- For the relish:
- Combine all ingredients in a bowl and season with salt and pepper, to taste.
- For the pickled red onions:
- Bring vinegar, water, sugar and salt to a boil in a small saucepan over medium heat. Remove from the heat and let cool for 10 minutes. Put the onions in a medium bowl, pour the vinegar over, cover and refrigerate for at least 4 hours and up to 48 hours before serving.
- For the burgers:
- Heat a griddle or large saute pan over high heat. Add the oil and let it heat until it begins to shimmer.
- Shape the ground beef with your hands into 4 round patties about 1 1/2 inches thick and season each burger on both sides with salt and pepper, to taste. Cook the burgers until golden brown on both sides and cooked to medium, about 8 minutes.
- Put the burgers on the buns and top each with a few tablespoons of the queso sauce, relish, onions and chips.
FIVE-STAR CHILI BURGERS WITH HOMEMADE RELISH
Steps:
- Gently stir all the ingredients together in a mixing bowl. You might like to adjust the quantities - not too much - until you have a relish that perfectly suits your tastes.
- If you like, keep a little of the parsley aside to sprinkle on the top of the relish as a summery green garnish.
- Cold is cool. Ground chuck with a good fat content needs to stay cold so that the fat only starts to melt when your patty hits the heat. For the very little mixing that's needed, a steel bowl and wooden spoon will help keep the temperatures low.
- So, tip all the ingredients - except the olive oil and salt - into a mixing bowl. Now gently, and I mean gently, stir the mix just enough to bring all the ingredients evenly together. Good. Time now to form your patties.
- Divide the patty mix evenly into four. Gently hand-mould the mix into four patties that are no more than 3/4 inch thick and four inches in diameter.
- What's really important here is to avoid compacting the patties too much. Use just enough hand pressure so that the mix holds together in somewhat flattish discs. A neat-edged, uniformly round shape is way less important than a lightly compacted patty.
- Now pop them onto a plate and let them chill in the refrigerator for at least 10 minutes.
- Heat the skillet* over a high heat for a minute or so until it's really hot. As that's happening, use your fingers to quickly spread a 1/4 teaspoon of olive oil over each patty's top and bottom. Now sprinkle a good pinch of salt over each oiled side. Grand. Your patties are heading for that hot, hot skillet right now.
- Lay the patties into the skillet and let them sit on that searing heat for two minutes on each side. That will give you medium rare patties - each with a nicely charred, just slightly crunchy outside and a still just pinkish, juicy inside. Perfect. Don't be tempted to fiddle with the patties as they cook, just let them be for those two minutes each side.
- Remove the patties and set them aside on a warm plate. It's time to put a little toasted color onto the buns. So, slice each bun through its waistline, and add all four tops - cut side down - to the skillet and turn the heat to high. Leave them on that heat for 90 seconds so they just pick up a little toasty golden colour. Done. Turn off the heat and remove the tops from the skillet.
- Spread a generous layer of the relish onto the untoasted bottom of each bun. Lay a patty on top and then spread another kindly helping of relish onto the patty's top. That's it. Done! Serve at once with napkins.

- Heat the sunflower oil in a saucepan over a medium heat and cook the red onion, finely chopped, for 5 mins until slightly softened. Add the chopped tomatoes, garlic clove, finely grated, sweet smoked paprika, tomato purée, red wine vinegar and red chilli, if using. Season and simmer for 15-20 mins until the mixture has cooked down and thickened slightly.
