2 lbs flank steak
1 cup oil
Juice of 4 limes
1/2 cup white vinegar
1 cup loosely chopped fresh cilantro
1-2 tbsp Adobo sauce
4 Chipotle peppers
Salt and pepper to taste

Steps:

  • Combine the oil and rest of the ingredients in a food processor or blender.
  • Pulse until the peppers and cilantro are smooth.
  • Place marinade in a large ziploc bag.
  • Add large flank steak and mix the marinade around to completely coat the steak.
  • Marinade for at least 8 hours, but up to 24.
  • Grill large steak for 5-10 minutes per side (5 minutes for rare meat, 10 for well done).
  • While steak is grilling, add marinade to a small saucepan.
  • Bring to a boil and let simmer for 8-10 minutes.
  • Cut the steak across the grain into thin diagonal slices.
  • Serve steak with the marinade sauce.

1/4 cup lime juice
1/3 cup loosely packed cilantro leaves
4 chipotle peppers in adobo sauce, (chopped)
2 tablespoons adobo sauce
1 1/2 tablespoons honey
1 tablespoon white vinegar
2 cloves garlic
1 (2-pound) flank steak
salt and pepper

Steps:

  • Add first 8 ingredients to a blender and blend until smooth.
  • Pour into a large ziptop bag. Add flank steak, coating it well. Seal and refrigerate for at least 8 hours and up to 24 hours.
  • Let flank steak sit at room temperature for 30 minutes before grilling.
  • Pour marinade into a small saucepan. Boil for 5 minutes, stirring occasionally so it doesn't burn on the bottom.
  • Season flank steak with salt and pepper. Grill for about 8 minutes per side, or until desired degree of doneness. Drizzle marinade over steak and let it rest for 10 minutes. Slice thinly against the grain.

3 lbs flank steaks, trimmed of fat (it's hard to find a 3 lb flank steak so it might be more than one)
marinade
2 tablespoons minced chipotle chiles in adobo
1 tablespoon minced garlic
3 tablespoons chopped cilantro
1/3 cup olive oil
3/4 cup red wine (I prefer Merlot)
1/2 cup soy sauce
1/2 cup honey
2 tablespoons minced chipotle chiles in adobo
3 tablespoons balsamic vinegar
2 tablespoons dijon-style mustard
1/2 cup fresh lime juice
1 1/2 tablespoons minced garlic
1 teaspoon allspice
1/4 cup chopped cilantro
1 teaspoon kosher salt (or to taste)

Steps:

  • Marinade flank steak for 4 hours or overnight.
  • Remove from marinade and pat dry.
  • Grill on BBQ until just medium rare.
  • Grill time will depend on the size of flank steak (s) (DO NOT OVERCOOK THE FLANK STEAK).
  • Cover loosely with aluminum foil for 7-10 minutes.
  • Slice the meat against the grain in about 1/4 inch thick slices or as thin as you can reasonably get.
  • (It is VERY important to slice the meat against the grain or it will be tough.) At last minute pour some of the dipping sauce over the cut up flank steak and serve.
  • Put the left over dipping sauce on the table for everyone to enjoy.
  • Goes great with grilled corn on the cob and white sticky rice.
  • try pouring a little of the dipping sauce on the rice.

Steps:

  • To make meat: Carefully trim steak of any fat.
  • Mix together chipotle, garlic, cilantro, oil, wine and soy sauce; pour over steak. Cover and refrigerate 4 to 6 hours or overnight, turning occasionally. I always marinate overnight for the best flavor. To make sauce: In food processor, briefly blend honey, chipotle, vinegar, mustard, lime juice, garlic, cumin, allspice, cilantro and salt. Set aside. Correct seasoning with salt and pepper.
  • Prepare grill and hot coals according to manufacturer's instructions. Remove steak from marinade and discard marinade. Pat steak dry and grill over hot coals to desired doneness, approximately 4 to 5 minutes per side for medium-rare. Let steak rest 3 minutes before slicing.
  • To serve, slice meat thinly across grain on angle and arrange on warm plates with grilled sweet onions and peppers. Drizzle sauce over or serve on side.
  • NOTES : This is a great outdoor dish because it doesn't involve any stove-top or oven cooking. Any leftover meat and sauce can be turned into a filling for tacos or burritos.

1 lime, plus wedges for serving
1 tablespoon chili powder
1 tablespoon packed light brown sugar
2 teaspoons chopped fresh thyme
1 teaspoon ground cumin
1 teaspoon chipotle chile powder
Kosher salt and freshly ground pepper
1 1 1/2- to 2-pound flank steak
Vegetable oil, for the grill

Steps:

  • Grate the zest of 1 lime; cut the lime in half. Combine zest with the chili powder, brown sugar, thyme, cumin, chipotle powder, 1/2 teaspoon salt and a few grinds of pepper in a small bowl. Squeeze the zested lime over the steak and use the lime halves to rub the juice into the meat. Rub the spice mixture on both sides of the steak. Let stand at room temperature, 30 minutes.
  • Meanwhile, preheat a grill to medium high. Brush the grates with vegetable oil. Grill the steak until well browned, about 8 minutes. Flip and grill until a thermometer inserted sideways into the center registers 130 degrees F to 140 degrees F, 5 to 7 more minutes for medium rare (the thinner edges of the steak will be cooked to medium).
  • Transfer to a cutting board and let rest 10 minutes. Season with salt and thinly slice against the grain. Serve with lime wedges.

1 to 11/2 pounds flank steak
1/2 cup chopped scallions, light green and white parts only (about 5 scallions)
1/4 cup fresh chopped chives (from 1 bunch)
1/4 cup extra-virgin olive oil plus more for cooking the steak
3 tablespoons chopped fresh basil
3 tablespoons chopped fresh flat-leaf parsley
1 tablespoon lemon zest and 2 tablespoons lemon juice (from 1 to 2 lemons)
1 tablespoon lime zest and 1 tablespoon lime juice (from 1 to 2 limes)
2 teaspoons whole grain mustard
1/4 teaspoon red pepper flakes
Kosher salt and freshly ground black pepper

Steps:

  • Remove the flank steak from the refrigerator 30 minutes prior to cooking to bring it to room temperature.
  • In a medium bowl, add the scallions, chives, olive oil, basil, parsley, lemon zest, lemon juice, lime zest, lime juice, mustard, red pepper flakes and 1/2 teaspoon kosher salt. Stir to combine and set aside.
  • Heat a grill pan over medium-high heat. Drizzle a small amount of olive oil onto one side of the steak and use a silicone brush to spread it all over the steak. Sprinkle with a nice pinch of kosher salt and pepper. Transfer the meat to the grill pan, seasoning side down. Drizzle the other side of the steak with a small amount of olive oil and once again brush it to cover and sprinkle with salt and pepper. For medium-rare, cook the steak until the internal temperature is 135 degrees F, 4 to 5 minutes per side. Remove the steak to a plate and let it rest for 10 minutes before slicing.
  • Slice the steak against the grain. Add the slices to a platter and spoon on the lemon-lime herb sauce. Serve extra sauce on the side.

The flank is not the tenderest cut of beef, but it may be the most flavorful. To make it tenderer, I marinate it and slice it against the grain very thin on the bias after cooking it. So what you start with is very thin steak, and what you end up with is large thin slices of char-flavored meat that resembles roast beef. The acid in the lime marinade is very complementary to the char flavor of the meet. 3 tablespoons chipotles en adobo, or to taste
