Homemade waffles are so easy. These are crisp on the outside with a light and fluffy center. You can add just about any mix-in from chocolate chips to blueberries and even use the base for savory waffles.

Steps:
- In a large mixing bowl beat together 2 eggs and 2 Tbsp sugar at high speed for 3 minutes until fluffy.
- Add remaining wet ingredients in this order: oil, milk, and vanilla
- Stir 4 tsp baking powder and 1/4 tsp salt into the 2 cups of flour then add dry ingredients to the bowl.
- Beat on low speed just until combined. Do not over mix - the batter should have small lumps.
- Preheat waffle iron (we set ours to 3). Grease waffle iron if needed (some non-stick waffle makers don't need to be sprayed or brushed with oil).
- Once the waffle iron is preheated, spray with cooking oil or brush the grates (if needed), then add enough batter to just barely fill the grooves. Leave some space for expansion. Cover and cook until the timer is done or to the desired golden-crispiness. Use plastic or silicone tongs to remove the waffle and serve warm.

FLUFFY WAFFLE RECIPE

- Preheat waffle iron. Gently coat with nonstick baking spray.
- In a large bowl, combine the flour, sugar, baking powder, and salt. Use the back of a spoon to create a "well" in the center.
- Whisk the two eggs into the milk until well combined.
- Pour the wet ingredients (butter, milk/egg mixture, vanilla) into the well of the dry ingredients and whisk until blended. (Note: the batter will be slightly lumpy, do not over-mix.)
- Scoop the batter into the preheated waffle iron and cook until the waffles are golden brown and crisp. (About 2-3 minutes, but this will vary wildly depending on your waffle maker.)
- Serve immediately or lay on a wire cooling rack until cool. Store leftovers in an airtight bag in the freezer.

- Preheat the waffle iron according to the manufacturer's directions.
- Place flour, baking powder, sugar, and salt in a bowl. Whisk to combine.
- In a small bowl, mix egg yolks, milk, and butter. Set aside.
- In a separate bowl, beat egg whites with a mixer on medium high speed until stiff peaks form. *see note
- Add egg yolk mixture to flour mixture and stir to combine. Fold in egg whites.
- Drop by large spoonfuls onto greased waffle iron, close the lid and cook about 3-5 minutes.

- In a bowl, combine the flour, sugar, baking powder and salt. Combine the egg yolks, milk and oil; stir into dry ingredients just until moistened. In a small bowl, beat egg whites until stiff peaks form; fold into batter. Bake in a preheated waffle iron according to manufacturer's directions., Meanwhile, for syrup, combine sugar, corn syrup and water in a saucepan. Bring to a boil over medium heat; cook and stir for 2 minutes or until thickened. Remove from the heat; stir in the milk, vanilla and cinnamon. Serve with waffles. If desired, serve with fresh berries.Freeze option: Cool waffles on wire racks. Freeze between layers of waxed paper in a resealable plastic freezer bag. - Spray a Belgian waffle iron with cooking spray and preheat according to manufacturer's instructions.
- Beat eggs with a whisk until fluffy. Beating slightly after each ingredient, first add milk, then oil, sugar, salt, baking powder, all-purpose flour, and finally whole wheat flour; do not overbeat.
