100% Whole Wheat Pancakes image

These come out very light and fluffy and are full of whole grain. My kids love them! If you like blueberries, throw a few on top before flipping the cake :)

2 cups whole wheat flour
2 tablespoons white sugar
2 teaspoons baking powder
½ teaspoon baking soda
½ teaspoon salt
2 ¼ cups buttermilk
2 eggs
3 tablespoons vegetable oil

Steps:

  • Whisk whole wheat flour, sugar, baking powder, baking soda, and salt in a bowl. Whisk buttermilk, eggs, and vegetable oil in a separate bowl; pour buttermilk mixture into dry ingredients. Stir just until combined (batter may seem a bit thick).
  • Heat a cast iron skillet over medium-low heat for 5 minutes. Pour 1/3 cup of batter onto hot skillet and use a spoon to spread the pancake a bit. Cook until browned and bubbles appear on top, 1 1/2 to 2 minutes. Flip and cook until browned and set in the middle, about 2 more minutes. Repeat with remaining batter.

I don't know where this recipe came from, but I am so glad I found it in my "to try" pile. I made them as pancakes for breakfast today. They have a nice texture, not heavy at all (which I was worried about). They make a nice change from traditional pancakes. I did tinker with the recipe a bit, so I put those changes in as an option.

3/4 cup whole wheat flour (I used 1/2 cup)
1/2 cup white flour (I used 3/4 cup)
1/2 cup cornmeal
1/3 cup oats
2 teaspoons baking powder
1 teaspoon baking soda
1/2 teaspoon salt
2 cups buttermilk (I used 1 1/2 cups milk and 1 1/2 tablespoons buttermilk powder)
1/3 cup butter, melted
3 tablespoons pancake syrup
2 eggs, beaten

Steps:

  • Combine dry ingredients.
  • Stir in wet ingredients, mixing well.
  • Cook either as pancakes or waffles.

  • 1. In large bowl, combine all ingredients stir until large lumps disappear. (Batter will be thick. For thinner pancakes, thin batter with a small amount of water.)2. Heat griddle or large skillet over medium-high heat (375°F.) until hot. Lightly grease griddle with oil. For each pancake, pour about 1/4 cup batter onto hot griddle. Cook 2 1/2 to 3 minutes or until edges look cooked and bubbles begin to break on surface. Turn pancakes cook 2 to 2 1/2 minutes or until golden brown. 2 ounces vegetable oil
4 ounces all-purpose flour

2 1/2 ounces rolled oats

1 ounce sugar

Steps:

  • Mix buttermilk, egg, egg whites, and vegetable oil together.
  • In a seperate bowl mix all purpose flour, whole wheat flour, cornmeal, oats, baking powder and sugar together.
  • Add the dry ingredients to the wet ingredients. stir until mixed.
  • Spray preheated waffle iron with oil spray.
  • Pour a portion of batter onto iron and cook acourding to the directions on iron.
  • Top waffles with what you like. I enjoy maple syrup or yogurt.
