4 tablespoons olive oil 1 1/2 pounds uncooked medium shrimp, peeled, deveined 3/4 cup fresh lime juice 1 teaspoon grated lime peel 1 1/2 cups chopped white onion 1 serrano chile, finely chopped with seeds 1 garlic clove, minced 1 cup diced plum tomatoes 1/2 cup drained pimiento-stuffed green olives 1/2 cup chopped fresh cilantro Lime wedges

Steps:

  • Heat 2 tablespoons olive oil in heavy large skillet over medium heat. Add shrimp
  • sprinkle with salt and pepper. Sauté shrimp until just opaque in center, about 3 minutes. Transfer shrimp to large bowl. Add lime juice and lime peel to skillet. Using wooden spoon, scrape up any browned bits. Pour lime mixture over shrimp in bowl. Add onion, chile, garlic, and remaining 2 tablespoons olive oil to shrimp mixture
  • stir to blend. Let shrimp marinate 30 minutes. Add tomatoes, olives, and cilantro. Cover and refrigerate at least 1 hour and up to 2 hours. Divide cocktail mixture among Martini glasses

1 cup bottled clam juice
1/2 cup Sherry wine vinegar
20 large cilantro sprigs
2 serrano chilies or jalapeño chilies, cut in half
1 tablespoon Worcestershire sauce
1 tablespoon olive oil
2 pounds uncooked large shrimp, peeled, deveined
1 large tomato, chopped
2 green onions, chopped
2 tablespoons chopped fresh cilantro
1 teaspoon fresh lime juice
1 teaspoon sugar
Lime wedges

Steps:

  • Combine tomato juice, clam juice, vinegar, cilantro sprigs, chilies and Worcestershire sauce in medium saucepan. Boil until sauce is slightly thickened and reduced to 1 2/3 cups, about 30 minutes. Strain into medium bowl.
  • Heat oil in large nonstick skillet over medium-high heat. Add shrimp and sauté until just cooked through, about 4 minutes. Cool.
  • Add shrimp, tomato, green onions, chopped cilantro, lime juice and sugar to sauce. Season with salt and pepper. Chill until cold, at least 3 hours. (Can be made 1 day ahead. Cover and keep chilled.) Garnish with lime wedges.

1 pound spaghetti
2 slices bacon, coarsely chopped
2 tablespoons tomato paste
2 tablespoons packed fresh rosemary leaves
1 cup mixed olives
2 tablespoons extra-virgin olive oil, plus more for drizzling
1 pint cherry tomatoes, halved
1 pound fresh or thawed frozen medium shrimp, peeled and deveined
Grated Pecorino Romano, for serving (optional)

Steps:

  • Bring a large pot of generously salted water to a boil. Cook pasta until al dente. Reserve 1 1/2 cups pasta water; drain.
  • Meanwhile, cook bacon in a large straight-sided skillet over medium heat until most of fat is rendered but bacon is still pliable, about 4 minutes. Stir in tomato paste, rosemary, olives, and 1 tablespoon oil; cook 1 minute. Add tomatoes, season with salt and pepper, and cook until they collapse and release their juices, about 5 minutes. Add 1 cup pasta water and shrimp. Simmer, stirring occasionally, until shrimp are opaque, 2 to 3 minutes.
  • Stir in pasta and remaining 1 tablespoon oil. Add more pasta water, a few tablespoons at a time, until pasta is evenly coated. Drizzle with oil, sprinkle with cheese, and serve.

1/2 teaspoon coarse salt, divided
1 lb tomatoes, chopped into 1/2-inch pieces (about 2 cups chopped)
1/4 cup white wine (water or vegetable stock may be substituted)
1/3 cup pitted kalamata olive, coarsely chopped
1/3 cup parsley, chopped
1/3 cup fresh basil, chopped

Steps:

  • Heat the oil in a large, nonstick skillet set over medium-high heat. Add the shrimp in a single layer, and sprinkle with 1/4 teaspoon of the salt. Cook 2 minutes on each side, or until just cooked through and no longer translucent in the center. Transfer to a plate.
  • 2. Add the tomato, wine and remaining 1/4 teaspoons salt to the skillet, and cook, stirring occasionally, 4 minutes, until the tomato is softened and the liquid thickens. Stir in the olives and parsley; cook 1 minute, and stir in the shrimp and basil. Remove from heat.
