SORREL GREEN-GODDESS DRESSING



Sorrel Green-Goddess Dressing image

While green goddess is traditionally made with chervil, chives, or tarragon, sorrel is an excellent stand-in. The verdant herb adds a distinctive tart, tangy flavor to the creamy dressing. Serve alongside Whole Coal-Roasted Vegetables or Grilled Whole Fish with Lemon and Thyme.

3 anchovy fillets packed in oil
3/4 cup mayonnaise
1/2 cup sour cream or creme fraiche
1/2 cup buttermilk
Kosher salt and freshly ground pepper
2 1/2 cups lightly packed sorrel leaves, finely chopped, plus whole leaves for serving (optional)

Steps:

  • Combine anchovies, mayonnaise, sour cream, buttermilk, 1/2 teaspoon salt, and 1/4 teaspoon pepper in a food processor; puree until smooth. Transfer to a bowl; stir in chopped sorrel. Garnish with sorrel leaves to serve. Dressing can be refrigerated in an airtight container (without garnish) up to 3 days.

This creamy, herby, addictively delicious sauce is not only my favorite salad dressing, but is one of my favorite dips as well. You can of course tweak the acidity with more or less lemon, as well as play with the salt and pepper, but please do not change the trio of herbs. The way the parsley and chive play against the sweet tarragon makes this unlike any other herb dressing.

1 cup mayonnaise
¾ cup sour cream
⅓ cup chopped fresh flat-leaf parsley
⅓ cup chopped fresh tarragon
¼ cup chopped fresh chives
2 tablespoons fresh lemon juice, or more to taste
1 tablespoon rice vinegar
1 anchovy fillet
1 clove garlic, chopped
1 pinch cayenne pepper, or to taste
salt and freshly ground black pepper to taste

Steps:

  • Blend mayonnaise, sour cream, parsley, tarragon, chives, lemon juice, rice vinegar, anchovy fillet, garlic, cayenne pepper, salt, and black pepper in a blender until smooth.

1 cup (packed) watercress leaves
3/4 cup (or more) plain nonfat yogurt
1/3 cup light (1/3 less fat) mayonnaise
2 tablespoons (packed) chopped fresh dill
2 tablespoons (packed) chopped fresh basil
2 tablespoons chopped green onion
1 tablespoon (packed) chopped fresh mint
1 teaspoon red wine vinegar
1/4 teaspoon hot pepper sauce

Steps:

  • Cook watercress in medium saucepan of boiling water 30 seconds. Drain. Rinse watercress under cold water. Drain again. Pat watercress dry with paper towels. Transfer watercress to blender. Add 3/4 cup plain nonfat yogurt and all remaining ingredients and puree until smooth, thinning with more yogurt or water, if desired. Transfer dressing to bowl. Season dressing to taste with salt and pepper. (Can be prepared 3 days ahead. Cover and refrigerate.)

1/2 cup sour cream (can sub low-nonfat)
1/4 cup chopped fresh cilantro
1/2 cup chopped garlic chives or 1/2 cup green onion, including tops
2 tablespoons lemon juice or 2 tablespoons wine vinegar
2 teaspoons minced fresh garlic
1/2 teaspoon salt
1/4 teaspoon cracked black pepper or 1/8 teaspoon ground pepper
1/2 teaspoon onion powder
1/2 teaspoon poultry seasoning
1 tablespoon dried basil
1 pinch cayenne pepper (to taste) or 1 pinch couple dashes hot sauce (to taste)

Steps:

  • Add all ingredients to blender and blend until smooth and creamy. Can use emulsion blender and mixing bowl or cup. If you don't have a blender, chop ingredients finely and whisk well in mixing bowl until creamy. Chill any leftovers and thin with milk if too thick. Suggestions for use: Serve over salad, use a dip with veges or top salmon before cooking and bake.
