Low Carb White Fish Pomodoro Recipe. An easy paleo-friendly meal that tastes amazing! Serve as-is or with zucchini noodles.

3-4 skinless white fish fillets ((grouper, cod, monkfish, halibut))
1 tablespoon olive oil
3 cloves garlic, (minced)
1 shallot, (peeled and finely chopped)
28 ounces crushed tomatoes ((1 can))
1/2 cup roughly chopped basil
1 teaspoon honey
Salt (and pepper)

Steps:

  • Place a large skillet over medium heat. Add the oil. Salt and pepper the fish fillets on both sides. Once the oil is hot, sear the fish fillets until cooked through. For thin fillets like grouper, cook 2 minutes per side. For thicker fillets like cod, cook 4 minutes per side. Remove from the skillet and set aside.
  • Add the garlic and shallots to the skillet. Saute for 2-3 minutes to soften. Then add in the crushed tomatoes and honey. Stir and simmer for 5 minutes. Taste, and salt and pepper as needed.
  • Stir in the fresh basil and add the fish fillets back to the skillet. Simmer another 1-2 minutes to reheat the fish. Serve warm as-is or with a side of raw zucchini noodles.

Pasta Pomodoro with Shrimp is the perfect easy pasta dinner recipe. This dish comes together with simple ingredients, fresh flavor, and is super quick. Made with shrimp, angel hair pasta, parmesan cheese, ripe tomatoes and basil, Pasta Pomodoro tastes amazing, and is perfect for date night or family dinner!

1 pound shrimp (deveined, peeled and tails removed)
2 tablespoons + 1 teaspoon olive oil, divided
4-5 large tomatoes, chopped into bite sized pieces (if using smaller tomatoes such as Roma increase to 6-7)
3 cloves garlic, finely chopped
2 tablespoons chopped fresh basil, plus more to garnish
1/4 teaspoon crushed red pepper flakes (optional)
12-16 ounces angel hair pasta (or other long pasta)
1/2 cup fresh grated parmesan cheese, plus more to taste
salt & pepper to taste

Steps:

  • In a large pot, add water and bring to a boil while you are chopping the tomatoes. Don't add the angel hair pasta yet, it cooks quickly (usually 3-4 minutes) so you will want to add it to the boiling water after you start cooking the tomatoes.
  • In a large skillet over medium heat add 1 tablespoon olive oil and cook shrimp until it has turned pink, about 1 - 2 minutes per side. Remove shrimp from pan and set aside.
  • Drain any liquid from the skillet, reduce heat to medium-low and add 1 tablespoon olive oil. When oil is hot, add chopped tomatoes, then salt and pepper to taste. Stir occasionally and cook for 5 minutes and then add chopped garlic. Cook 2 - 3 minutes more and until the tomatoes get soft and garlic is fragrant.
  • Add angel hair pasta to the boiling water and cook per box instructions (typically 3-4 minutes).
  • While the pasta is cooking, put the shrimp back into the skillet, add the freshly chopped basil and a small amount of olive oil to taste (1-2 tsp is what I use). Stirring well to combine and bring out the flavor of the basil. Taste and add more salt, if needed. Add the crushed red pepper flakes, if you like a little kick of heat.
  • Drain pasta (reserving about 1/2 cup of the pasta water). Add pasta into the skillet to combine with the tomatoes, shrimp and basil. Stir to fully combined. If you want the sauce to be more moist, add some of the pasta water, as desired.
  • Serve topped with freshly grated parmesan cheese and fresh basil and enjoy!

1 tablespoon olive oil
1 small onion diced
2 cloves garlic crushed
1 piece thumb-sized ginger finely grated
1 teaspoon cumin
1 teaspoon coriander
1 teaspoon paprika
2 x 400g tins chopped tomatoes
1-2 teaspoons sugar
Salt and pepper to taste
800g fish or a combination of fish and seafood
Zest and juice of 1 lemon
1-2 tablespoons each chopped coriander, parsley and mint (to serve)

Steps:

  • Heat the oil and gently fry the onion until soft and translucent. When the onion is ready add the garlic, ginger and dry spices to the pan and continue to fry for one minute more. Add the tomatoes and first teaspoon of sugar and bring to the boil. Simmer gently, lid on, for ten minutes, letting down with a little water if the sauce becomes too thick. Season to taste adding salt, pepper and the other teaspoon of sugar if the sauce still tastes acidic.
  • Next add the fish, bring back to a gentle simmer, and simmer until the fish is cooked through. This will take 5 -10 minutes depending on the size of the pieces of fish. Once the fish is cooked, gently remove any skin which will come away easily now, and break each piece of fish into two or three large pieces.
  • Add the lemon zest and half the juice. Stir gently, taste and add the rest if needed.
  • Serve in bowls with the fresh herbs sprinkled over the top.

A flavourful fish dish that is perfect for a crowd or can be frozen in batches for a handy midweek treat

2 tbsp olive oil
4 garlic cloves , roughly chopped
4 tsp ground cumin
2 tsp paprika
bunch coriander , chopped
1 tsp salt
juice and zest 1 lemon
x skinless tilapia fillets
2 tbsp olive oil
2 large onions , halved and thinly sliced
2 garlic cloves , sliced
2 tsp ground cumin
2 tsp paprika
x cans chopped tomatoes
500ml fish stock
175g pimento-stuffed olive
4 green peppers , quartered, deseeded and sliced
500g bag baby new potato , halved lengthways

Steps:

  • To make the chermoula, put the oil, garlic, cumin, paprika, three-quarters of the coriander and the salt in a small bowl. Add the lemon juice, then blitz with a hand blender until smooth. Spoon half over the fish fillets and turn them over to coat both sides. Set aside to marinate.
  • Heat the oil and fry the onions and garlic until softened and starting to colour, about 4-5 mins. Add the cumin and paprika and cook for 2 mins more. Add the tomatoes, stock, olives and lemon zest, stir in remaining chermoula and simmer, uncovered for 10 mins.
  • Stir in the peppers and potatoes, cover and simmer for 15 mins until the potatoes are tender. If freezing, reserve half the sauce and chill before freezing.
  • Stir the remaining coriander into the tagine, then arrange the fish fillets on top (if freezing a batch, reserve 4 portions of fish), and cook for 4-6 mins until the fish is just cooked. Serve with basmati rice, boiled with a little saffron if you like.

5 tablespoons olive oil, plus extra for garnish
12 cloves garlic, thinly sliced
6 (28-ounce) cans chopped tomatoes
2 1/2 teaspoons sugar
Kosher salt
1 pound gemelli pasta or other similar shape
1 small bunch fresh basil, chifonnade, for garnish
1 (8-ounce) wedge Parmesan or Grana Padano cheese, grated or shaved, for garnish

Steps:

  • In a large heavy-bottomed pot or Dutch oven, heat the olive oil over medium heat.
  • Add the garlic and cook until fragrant but not browned, 1 to 2 minutes. Add the tomatoes, bring to a simmer, and cook until thickened slightly, about 15 minutes. Stir in sugar, and season with salt, to taste.
  • Meanwhile, cook pasta in boiling, salted water until al dente. Drain.
  • Serve sauce over hot pasta with a drizzle of olive oil, a sprinkle of basil, and cheese.
  • Let extra sauce cool completely and then seal in airtight containers. Refrigerate for up 1 week and freeze for up to 1 month.

TUSCAN BREAD AND TOMATO SOUP (PAPPA AL POMODORO)

1 pound stale country bread
2 tablespoons extra virgin olive oil
1 small onion, chopped
2 to 3 garlic cloves (to taste), minced
1 1/2 pounds ripe tomatoes, peeled, seeded, and chopped, or 1 (28-ounce) can, with juice
1 tablespoon tomato paste
Pinch of sugar
Pinch of sugar
1/4 teaspoon red pepper flakes (optional)
Salt and freshly ground pepper
4 cups water
2 to 3 tablespoons slivered fresh basil

Steps:

  • If your bread is too hard to cut, douse it with water first. Then remove the crusts and cut into cubes. You should have about 7 cups.
  • Heat the oil in a large, heavy soup pot over medium-low heat. Add the onion and cook, stirring, until tender, about 5 minutes. Add the garlic and cook, stirring, for about a minute, until fragrant. Add the tomatoes, tomato paste, sugar, red pepper flakes, and salt and pepper, and cook, stirring occasionally, until the tomatoes have cooked down, about 10 minutes. Taste and adjust seasoning.
  • Stir the bread cubes into the tomatoes. Add the water, half the basil, and about 1 teaspoon salt. Bring to a simmer and simmer, stirring and mashing the bread, for about 10 minutes, until the soup is thick, like oatmeal. Stir in the remaining basil, taste and adjust seasoning. Serve hot, warm, or room temperature.
