CHILI SPAGHETTI WITH HOT DOGS

"I've been making this recipe for 35 years. It's one of my husband's favorite dishes. Lower-fat franks and reduced-fat cheese can be used and it's just as good." Karen Tausend - Bridgeport, Michigan

8 ounces uncooked spaghetti
1 package (1 pound) hot dogs, sliced
1/2 cup chopped onion
1/2 cup chopped celery
2 tablespoons canola oil
1 can (15 ounces) tomato sauce
1 tablespoon prepared mustard
1 teaspoon chili powder
1/2 teaspoon Worcestershire sauce
1/4 teaspoon salt
1/4 teaspoon pepper
1 cup shredded cheddar cheese

Steps:

  • Cook spaghetti according to package directions. Meanwhile, in a large skillet, saute the hot dogs, onion and celery in oil until vegetables are tender. Add the tomato sauce, mustard, chili powder, Worcestershire sauce, salt and pepper; cook and stir until heated through., Drain spaghetti; toss with hot dog mixture. Serve immediately, sprinkling each serving with cheese. Or cool spaghetti; transfer to freezer containers and freeze for up to 3 months., To use frozen spaghetti: Thaw in the refrigerator overnight. Place in a saucepan and heat through. Sprinkle each serving with cheese.

2 pounds sweet Italian sausage
1 pound fresh mushrooms, sliced
1 onion, chopped
1 green bell pepper, chopped
1 tablespoon minced garlic
2 (28 ounce) cans tomato sauce
2 tomatoes, diced
1 (6 ounce) can tomato paste
1 (6 ounce) can sliced black olives, drained
1 teaspoon dried oregano, or to taste
1 teaspoon dried basil, or to taste
salt to taste
1 (16 ounce) package spaghetti, or as needed
¼ cup grated Parmesan cheese, or to taste

Steps:

  • Heat olive oil in a large skillet over medium-high heat. Cook and stir sausage, mushrooms, onion, green bell pepper, and garlic in the hot oil until sausage is browned and crumbly, about 20 minutes; drain and discard grease.
  • Stir tomato sauce, diced tomatoes, tomato paste, and olives into sausage mixture; season with oregano, basil, and salt. Simmer mixture until flavors infuse, about 30 minutes.
  • Bring a large pot of lightly salted water to a boil. Cook spaghetti in the boiling water, stirring occasionally until cooked through but firm to the bite, about 12 minutes. Drain and transfer to a serving bowl; top with tomato-sausage sauce and Parmesan cheese.

I served this with a cheddar cheese sauce, as you can see in my photo! You can use a cheese sauce from your favorite mac n' cheese recipe!

8 hot dogs
1/2 lb spaghetti
cheddar cheese sauce, from your favorite mac n' cheese recipe

Steps:

  • Cut each hot dog into 8 equal pieces.
  • Push 5 pieces of raw spaghetti into each piece of hot dog.
  • Fill a 5 quart pot with water and let boil. Then add all the hot dog pieces that are skewered with the spaghetti. Let boil for about 7 minutes. Drain and set aside.
  • Prepare the cheese sauce. Add the hot dog spaghetti to the cheese sauce. Serve warm.

1 tbsp olive oil
packet of 8 pork sausages (the best your budget will allow), cut into chunky pieces
1 large onion, chopped
2 garlic cloves, crushed
1 tsp chilli powder
400g can chopped tomatoes
300g short pasta such as fusilli or farfalle (just over half a 500g bag)

Steps:

  • Put a large pan of water on to boil.
  • Heat 1 tbsp olive oil in a large frying pan and fry chunky pieces of 8 pork sausages on a fairly high heat until they are golden brown all over.
  • Now turn the heat down and add 1 large chopped onion and 2 crushed garlic cloves, cooking them until they have softened.
  • Stir in 1 tsp chilli powder and 400g chopped tomatoes with the sausages, bring the sauce to the boil then turn the heat down and let it bubble for about 10 minutes while you cook the pasta.
  • Drop 300g pasta into the pan of boiling water and cook according to the pack instructions.
  • Drain the pasta, then tip it into the frying pan with the sausage sauce, mixing well to coat. Dish up immediately with crusty bread.

1/4 cup margarine
3 tablespoons flour
1/4 teaspoon dried oregano
1/4 teaspoon pepper
3/4 cup water
1 cup evaporated milk
1 teaspoon Worcestershire sauce
1 cup American cheese, grated
1/2 lb hot dog, cut into 1/4 inch medallions, 1 wiener per serving
1 1/2 cups cooked spaghetti
2 cups peas and carrots, cooked

Steps:

  • Saute wiener slices until slightly browned; set aside.
  • Saute onion in margarine until tender; remove from heat.
  • Stir in flour, oregano, salt and pepper; heat until thick.
  • Gradually add water, milk, Worcestershire sauce and cheese;Stir over low heat until cheese melts.
  • Add wieners. spaghetti and veggies.
  • Place in 1 1/2 quart greased baking dish.
  • Bake 30 minutes at 350°F.
