They're alive! Each year when the Halloween invites start coming my way, I create a little treat to bring. These cute cookies bring a lot of life to every party. -Philia Kelnhofer, West Allis, Wisconsin

Number Of Ingredients 10

1 package (17-1/2 ounces) sugar cookie mix
1/4 cup all-purpose flour
1/2 cup butter, melted
1 large egg
1 teaspoon vanilla extract
1/4 teaspoon peppermint extract
12 drops food coloring
24 Andes mint candies
Black and white jimmies
Decorating icing and candy eyeballs, optional

Steps:

  • Mix cookie mix and flour; stir in melted butter, egg, extracts and food coloring until blended. Divide dough in half. Shape each into a 1-in.-thick square; wrap in plastic. Refrigerate until firm enough to roll, about 1 hour., Preheat oven to 350°. On a lightly floured surface, roll each portion of dough to an 8x6-in. rectangle. Cut each rectangle into twelve 2-in. squares. Place 1 in. apart on ungreased baking sheets., Bake until edges begin to brown, 7-9 minutes. Remove from oven; place a mint candy at the top of each square. Return to oven; bake until chocolate begins to melt, 1-2 minutes., Using a spatula, spread mint candies to cover top end of cookies; sprinkle with jimmies for hair. Remove to wire racks to cool completely. Decorate faces as desired, using icing and eyeballs.

  • Place cookie dough in a medium mixing bowl; stir in drops of green food coloring until desired shade of green is reached. Roll cookies into even portions and freeze 30 minutes.
  • Arrange the chilled dough portions at least 2 inches apart on parchment paper-lined baking sheets. Bake at 350° for 6 minutes. Remove cookies from oven; carefully sprinkle chocolate sprinkles at the top of each cookie to create Frankenstein’s “hair.” Return cookies to oven, rotating the baking sheets as you do. Bake for another 7-9 minutes or until cookies begin to set around the edges.
  • Remove from oven; immediately place 2 candy eyes and 2 pieces of candy corn on each cookie for Frankenstein’s “eyeballs” and “bolts” while cookies are still warm. Allow to cookies to cool on the baking sheets for 5 minutes; transfer to wire racks to cool completely.

  • In a microwave safe bowl microwave a stick of butter for 30 seconds. Next add egg, extracts, food color and stir together, then add the mix and flour and combine well. On a piece of plastic wrap lay out the dough in a row, wrap the plastic around it and form it into a square log. Put in the freezer for 30-45 minutes shaping the square log every 10-20 minutes if needed.
  • Preheat oven to 350. Line a baking sheet with a piece of parchment paper. Take log out of the freezer and cut into 1/4 inch thick slices and place on the lined baking sheet. Put an unwrapped piece of Andes candies on the top of the square and lightly push down. Bake for 12 minutes and take out of the oven and allow to cool completely. With black frosting create decorations and facial expressions of Frankenstein and enjoy!
