FRECKLE SANDWICHES
I was looking for something different to serve for a canteen. I came across this recipe in an old magazine. It was so easy and all the young children were so impressed!! Both young and old loved them. The recipe calls for 100's and 1000's but I was unable to list them in ingredients, so I just stated sprinkles instead.

Steps:
- Butter 1 loaf of bread. Spread half the slices with strawberry jam, then top each slice with remaining slices to make sandwiches.
- Butter the remaining loaf of bread.
- Spread half the slices with Nutella, then top with remaining slices.
- Remove the crusts from all the sandwiches, then cut each into 4 triangles. Lay the sandwiches on two separate platters long-edge down to form 2 long pyramids.
- Spread the remaining butter along one side of each pyramid. Sprinkle (I dip) the buttered-side of the jam sandwiches with the 100s and 1000s and the chocolate sandwiches with the chocolate sprinkles.

FRECKLE CAKE
This amazing cake joined the Walker family traditions when my brother met my sister-in-law. She's a redhead with lots of freckles, and this cake, thanks to the chocolate shavings and chips, has lots of freckles too. So, we changed the name. Chocolate Chip Cake (boring!) is now Freckle Cake. Great topped with vanilla ice cream!

Steps:
- Preheat oven to 350 degrees F (175 degrees C). Generously grease a 10-inch fluted tube pan (such as a Bundt®).
- Beat yellow cake mix, vanilla pudding mix, eggs, vegetable oil, and water in a bowl with an electric mixer to make a smooth batter, about 2 minutes. Stir grated chocolate and chocolate chips into batter and pour into prepared tube pan.
- Bake until a toothpick inserted into center of cake comes out clean, 50 to 55 minutes. Let cool completely in the pan before turning out onto a cake plate.

IRISH FRECKLE BREAD
This bread has been a favorite at family gatherings, either formal or casual, for years. It's tender and slightly sweet, with a light texture and attractive shape. - In a large bowl, dissolve yeast and 1 tablespoon sugar in warm water. Add the butter, eggs, potatoes, salt, remaining sugar and 2 cups flour; beat until smooth. Stir in raisins and enough remaining flour to form a soft dough., Turn onto a floured surface; knead until smooth and elastic, about 6-8 minutes. Place in a greased bowl, turning once to grease top. Cover and let rise in a warm place until doubled, about 1 hour., Punch dough down. Turn onto a lightly floured surface; divide into eight portions. Shape each into a ball. Place dough balls in a greased 10-in. springform pan. Cover and let rise until doubled, about 30 minutes., Place on a baking sheet. Bake at 350° for 25-30 minutes or until golden brown. Remove sides of pan. Place on a wire rack to cool.

ALAN THICKE'S IRISH FRECKLE BREAD

Steps:
- In a large bowl, combine together 1 cup of the whole-wheat flour, 1 cup of the white flour, the sugar, the undissolved yeast and the salt.
- Heat butter and water together until very warm (125F to 130F); gradually stir the warm liquids into the dry ingredients.
- Then stir in eggs, mashed potatoes, dates and the additional flours to make a soft dough; add a few more tbsp of the white flour if need be.
- Knead on a lightly floured surface until smooth and elastic, about 8 to 10 minutes.
- Cover and let rest on a floured surface for 10 minutes.
- Divide dough into 4 equal pieces; shape into 4 slender loaves-- about 8-1/2 inches long.
- Set 2 loaves side-by-side in each of 2 well-greased 8-1/2-by-4-1/2-inch loaf pans.
- Cover and let rise in a warm, draft-free place until doubled in size, about 1 hour.
- Preheat oven to 350F degrees.
- Bake in preheated oven for 35 minutes or until done.
- Remove from pans; cool on wire racks.

- Wash and trim celery. Cut into 4-inch pieces. Mix peanut butter and KELLOGG'S BRAN BUDS cereal. Fill celery pieces with peanut butter mixture. Top with raisins.
