FREEKAH SOUP ( PALESTINIAN SOUP)
Steps:
- Transfer the freekeh-onion mixture to the saucepan with the reserved broth, cover and cook 30- 40 minutes or until freekeh is well cooked. Stir in the shredded chicken and cook another 10 minutes. ( If the soup is too thick because freekeh absorbs liquid well, add more water or chicken stock. Adjust salt and spices.
- Pour the soup into bowls, sprinkle with nutmeg, cinnamon and black pepper.
- Garnish with fresh parsley, Greek yogurt and pita chips.
- Enjoy!
FREEKEH SOUP, PALESTINIAN STYLE
This is the traditional way to prepare Freekeh as a soup, except normally chicken is left whole on the bone or removed to make "Imsakhan", which often accompanies Freekeh. I prefer to use chicken breast to keep it healthy and to shred the chicken and return to the pot for ease of eating. I personally keep the skin on the chicken while preparing the broth for more flavor, although it can be made without. Make sure you use bone-in breast, however, or the broth will be flavorless.

Steps:
- Boil chicken in water in medium pot. The pot should be filled to capacity. When chicken is done, remove chicken and set aside to cool. Add chopped onion and freekeh to broth. Add already boling water if needed in order to attain consistency desired. Bring to a boil, reduce heat and simmer for 30-45 minutes depending on how chewy you like your freekeh. Add more boiling water if needed. While freekeh is simmering, Remove skin from chicken and discard. Using 2 forks, shred chicken breast. Once freekeh is done, add salt in 1/2 teaspong increments until you have reached desired flavor. Add pepper and shredded chicken breast. Return to boil. Enjoy!

Steps:
- Heat oil in a saucepan over medium heat. Add onion and cook until slightly softened, about 3 minutes. Add garlic and cook until fragrant, about 30 seconds. Stir in freekeh and toast for 3 minutes. Add carrot, celery leaves, parsley, salt, pepper, and bay leaf.
- Bring to a boil. Reduce heat and simmer until freekeh is tender, 15 to 20 minutes. Taste and adjust seasoning.
- Allow soup to rest for 5 minutes. Remove bay leaf and serve.
