TOMATO FREEKEH
Freekeh is fire-roasted baby wheat. It can be found in international or Middle Eastern stores. It can be used to replace rice. It has a very distinctive flavor. Any veggies or spices can be added to this recipe. This freekeh recipe will have a thick tomato saucy consistency. It has a slight kick, too.

Steps:
- Rinse and drain freekeh. Place freekeh in a bowl with enough water to cover; soak for 10 minutes. Drain.
- Stir vegetable broth, water, and olive oil together in a large pot; bring to a boil. Stir freekeh, tomato paste, paprika, cumin, turmeric, salt, and black pepper into vegetable broth mixture; bring mixture to a boil.
- Reduce heat to medium-low and simmer freekeh mixture, stirring occasionally, until most of the liquid is absorbed, about 1 hour. Remove freekeh from heat and let rest for 5 minutes. Fluff with a fork.

HOW TO COOK FREEKEH
Freekeh is an ancient grain made from roasting the young, green grains of durum wheat, and it has been a staple in Middle-Eastern and North African cuisines for centuries. It's a nutritional powerhouse that cooks up quickly into a slightly firm and chewy grain with a nutty, smoky, and savory flavor. It's a great substitute for grains like quinoa, wheatberries, and farro.

Steps:
- In a medium saucepan, bring 2 1/2 cups water to a boil. Add freekeh and 1/2 teaspoon salt. Reduce heat to medium-low and simmer, covered, until freekeh is tender and liquid is absorbed, about 20 minutes.
- Remove from heat and let stand, covered, 5 minutes. Use immediately or spread on a rimmed baking sheet and let cool.

Steps:
- Wash the Freekeh really well and then put it a strainer till the water is all out.
- Put 1 tablespoon of vegetable oil with 1 finely chopped onion in a cooking pot. Fry the onion till it slightly changes color. Then put the meat in the pot and fry it with onion till it is semi cooked or becomes a darker color. Then put 4 cups water. After it boils, put it on low temperature and let it cook for 1 hour or till the meat is fully cooked. The meat should be very soft. Strain the meat broth (so the onions are out). Put the meat and the meat broth aside.
- Get a large cooking pot and 1 medium finely chopped onion (for the Freekeh). Put 3 tablespoons olive to fry the onion till it is semi-fried. Add the Freekeh with all the spices and stir fry it for a few minutes. Then put your meat broth on top. It will take 20-25 minutes to cook the Freekeh on low to medium temperature. Cover your pot.
- In a pan, fry the almonds and pine nuts in 2-3 tablespoons of vegetable oil separately.
- After the Freekeh is done, put it in a serving plate and put the meat on top. Then put the fried almonds and pine nuts on top of the Freekeh.
FREEKEH (ROASTED GREEN WHEAT) WITH CHICKEN - A TRADITIONAL ARAB
Freekeh cooked into a pilaf and served with boiled and broiled chicken is a typical Arab dish served when guests come over. It is served on a platter, topped with the chicken, roasted almonds and pine nuts, and a yogurt salad and/or lemony salad on the side. Freekeh is pre-roasted so don't be surprised when the soaking water turns ashy in color.

- Soak the freekeh in plenty of water, it will start to absorb right away.
- Cover chicken with water in large pot.
- Bring to boil.
- Skim the scum off the top until broth is clear.
- Add two onions, cut in half, to remove any bad odors from the chicken.
- Simmer for another half hour.
- Remove chicken from broth. Set aside.
- Strain broth.
- Rinse freekeh, drain well.
- In a large pot, add olive oil to cover bottom and fry freekeh in it for a couple minutes.
- Add some of the broth, without measuring, to cover.
- Simmer slowly, covered.
- Add broth to keep from drying out.
- If you run out of broth, use water.
- Cook for an hour or more, making sure it does not get too dry.
- A half an hour before serving, heat oven to 400 degrees.
- Mix tomato paste, olive oil, salt, pepper and paprika.
- Put chicken on baking tray and brush with tomato/oil mixture.
- Bake for 20 minutes or until chicken gets a nice toasty finish to it.
- To serve, put freekeh on large tray. Top with chicken. Sprinkle with almonds and pine nuts.
- Serve with a yogurt salad made of plain yogurt, cucumber, dried mint, chopped green onions, and some salt to taste. Also, serve a salad of finely chopped tomato, cucumber, onion, green pepper, carrot, etc with a dressing of lemon and olive oil.

- Heat oven to 200C/180C fan/ gas 6. Toss the oil with the chickpeas, spices and chilli flakes in a medium roasting tin. Roast for 15 mins or until the chickpeas are beginning to crisp and turn golden brown. Add the tomatoes, apricots, olives and freekeh to the pan and toss everything together. Return to the oven for a final 10-15 mins until the tomatoes start to burst and everything is piping hot. Season to taste.
