Easy Cheesy Potatoes image

These potatoes are loaded with creamy goodness like sour cream and cheddar cheese and make a perfect side dish!

3 pounds diced potatoes (or 30 ounces country style hash browns)
¼ cup butter (melted)
1 cup sour cream
1 cup cream of chicken soup (or cream of cheddar)
¼ cup green onion (chopped)
2 cup cheddar cheese (divided)

Steps:

  • Preheat oven to 375˚F and grease a 9x13 inch baking dish.
  • If using fresh potatoes, place in a saucepan with cold water. Simmer 12-14 minutes or until fork tender. Drain and allow to cool slightly.
  • Melt butter, add sour cream, soup, onion and 1 ½ cups cheese.
  • Toss in the potatoes (or frozen hash brown potatoes) and combine. Spread into a prepared baking dish.
  • Top with remaining cheese and bake for 28-30 minutes or until browned and bubbly.

I call this freezer cheesy potatoes because I always make a double recipe and before baking, freeze half of it for another time. I use foil pans and cover with aluminum foil. I thaw in the refrigerator before baking as instructed. They turn out great.

1 1/2 cups shredded reduced-fat cheddar cheese
1 (10 3/4 ounce) can reduced-fat cream of chicken soup, undiluted
1 cup low-fat sour cream
1 (4 ounce) can chopped green chilies (optional)

Steps:

  • In a large bowl, combine all ingredients.
  • Transfer to a 13X9 inch baking dish coated with nonstick cooking spray.
  • Bake uncovered at 350 degrees for 50-55 minutes or until potatoes are tender.

1 (32 ounce) bag frozen shredded hashbrowns (divided)
2 (10.75 ounce) cans cream of chicken soup
2 cups sour cream
1/3 cup onions (chopped)
1/4 teaspoon salt
1/8 teaspoon pepper
2 cups shredded cheddar cheese (divided)
2 cups Ritz crackers (or crushed corn flakes)
1/2 cup butter (melted)

Steps:

  • Lightly grease a 9 x 13 inch pan with non stick cooking spray.
  • Place half of the bag of hashbrowns in the prepared pan.
  • In a medium bowl combine the soup, sour cream, onions, and salt and pepper.
  • Gently spoon half of this mixture over the hashbrowns in the pan.
  • Sprinkle 1 cup of cheese over the soup mixture.
  • Then add the remainder of the hashbrowns on top, and spoon over remaining soup mixture and the other half of cheese.
  • Crush the Ritz crackers and combine with the melted butter. Sprinkle over the top of the casserole.
  • Bake at 350 degrees for 35 to 40 minutes.

2 tablespoons butter, softened
1 cup sour cream
2 packages (3 ounces each) cream cheese, cubed
1/2 teaspoon onion powder
1/2 teaspoon salt
1/4 teaspoon pepper

Steps:

  • Place potatoes in a large saucepan and cover with water. Bring to a boil. Reduce heat; cover and cook for 10-15 minutes or until tender. Drain. , In a large bowl, mash potatoes with butter. Beat in the sour cream, cream cheese, onion powder, salt and pepper. Transfer 1-1/2 cups to a 2-cup baking dish coated with cooking spray. Bake, uncovered, at 350° for 30-35 minutes or until heated through. , Cool remaining mashed potatoes. 5 pounds russet baking potatoes
¼ cup salted butter, melted
⅓ cup milk
¼ teaspoon salt
1 pinch ground black pepper
2 tablespoons chopped fresh chives, or to taste

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C).
  • Wash and scrub potatoes. Place potatoes on the center rack and bake until they are soft in the center, about 1 hour. Remove from the oven and cool to the touch, about 15 minutes.
  • Cut potatoes in half and remove potato flesh from the skin, leaving the skin intact. Place potato flesh in a large bowl and beat until fluffy using an electric mixer. Add butter, milk, salt, and pepper and beat until smooth.
  • Spoon potato mixture into a pastry bag fitted with a large tip and pipe back into the potato skins. Sprinkle with fresh chives. Transfer to freezer bags and freeze until ready to use.

3-1/2 pounds potatoes (about 7 medium), peeled and cut into 3/4-inch cubes
1 can (10-1/2 ounces) condensed cream of potato soup, undiluted
1 cup French onion dip
3/4 cup 2% milk
2/3 cup sour cream
1 teaspoon minced fresh parsley
1/4 teaspoon salt
1/4 teaspoon pepper
1 package (16 ounces) process cheese (Velveeta), cubed
Additional minced fresh parsley

Steps:

  • Preheat oven to 350°. Place potatoes in a Dutch oven; add water to cover. Bring to a boil. Reduce heat; cook, uncovered, until tender, 8-12 minutes. Drain. Cool slightly., In a large bowl, mix soup, onion dip, milk, sour cream, parsley, salt and pepper; gently fold in potatoes and cheese. Transfer to a greased 13x9-in. baking dish., Bake, covered, 30 minutes. Uncover; bake until heated through and cheese is melted, 15-20 minutes longer.
