Easy weeknight desert can be cooked while eating dinner. You can double the fruit, but it may take more time to cook. Also good to add cinnamon &/or nutmeg to the batter, depending on your taste.

- In medium baking dish, melt butter. Add frozen fruit.
- Mix together remaining ingredients and pour over fruit. Do not stir.

FREEZER FRUIT COBBLER
Honestly, we all want REALLY easy recipes nowadays and this one will is so easy and satisfying that you will probably slap your forehead, so prepare in advance. My mother-in-law gave me this recipe book and as I looked through it, I knew I had to make this. It can't be more simple and delicious. The recipe is called "Freezer Fruit Cobbler" and the book is called, "Simple, Fresh and Healthy" by Linda Hafner. - Preheat oven to 325.
- Scatter the fruit in an 8x8 baking dish. Combine sugar and cornstarch and sprinkle over fruit.
- To prepare crust, combine the flour, baking powder and baking soda in a small bowl and set aside.
- In a medium bowl, combine the butter and sugar. Stir in egg. Gradually add the flour mixture. The batter will seem quite stiff.
- Drop the batter, one spoonful at a time, over the top of the fruit. The batter will settle into the fruit as it bakes.
- Transfer the cobbler to the oven and bake for 60 minutes, or until the top is lightly browned and cooked through.

- Adjust oven rack to upper-middle position, and heat oven to 350 degrees.
- Put butter in an 8-inch square or 9-inch round pan; set in oven to melt. When butter has melted, remove pan from oven.
- Whisk flour, 3/4 cup of sugar, baking powder and salt in small bowl. Add milk; whisk to form a smooth batter. Pour batter into pan, then scatter fruit over batter. Sprinkle with remaining 1 Tb. of sugar.
- Bake until batter browns and fruit bubbles, 50 to 60 minutes. Serve warm or at room temperature with a dollop of whipped cream or a small scoop of vanilla ice cream, if desired.

- Preheat oven to 350 degrees F (175 degrees C). Spray an 8x13-inch baking dish with cooking spray.
- In a large bowl, lightly mix together the peach, nectarine, and plum slices until well mixed, and toss with the cornstarch to dust the fruit. Pour in the currant jelly, apple pie spice, and white pepper, and lightly mix again with your hands to coat the fruit with the jelly and seasonings. Spread the fruit into the prepared baking dish.
- Pop open the can of biscuits, and cut them in half. Arrange the biscuit dough halves on top of the fruit. Mix the sugar and cinnamon in a small bowl, and sprinkle the mixture evenly on the biscuit dough.
- Bake in the preheated oven until the biscuits are golden brown, 20 to 25 minutes. Allow to cool on a rack for at least 20 minutes to let the dish set up.

- Directions for Filling:.
- Prepare fruit. Put prepared fruit into 8" x 8" baking dish. Combine sugar and cornstarch. Sprinkle over fruit.
- Directions for Crust:.
- In a medium bowl, mix butter and sugar. In a seperate small bowl, crack the egg into it and beat it slightly. Stir the egg into the butter and sugar mixture. Gradually add flour and mix well. The mixture will have a consistency between that of heavy cake batter and light biscuit dough. Drop spoonfuls on top of fruit. The topping will spread out as it cooks. Bake at 325 degrees until light brown and the topping doesn't shake - usually 45-50 minutes. Test the same as you would a cake. Straw should come out clean. When doubled this recipe works well in a 9x13 baking dish. It will take 1 1/2 to 2 hours to bake. Test at 1 hour and 45 minutes.
