5 pounds Bartlett pears, peeled and cut into chunks
2 ½ cups sugar, or more to taste
1 (14 ounce) can crushed pineapple with juice
lemon, juiced

Steps:

  • Combine pears, sugar, crushed pineapple, and lemon juice in a large bowl. Pulse in batches in a food processor until coarsely chopped.
  • Pour pear mixture into a large pot; bring to a rolling boil. Reduce heat; simmer, stirring frequently, until it thickens, about 45 minutes. Let cool to room temperature, 1 to 2 hours.
  • Ladle into a freezer bag, seal, and transfer to the freezer.

At dinner with friends one evening, one of our hosts served some pears she had preserved with ginger and lemon. The flavor was so heavenly I decided to use the fresh pears she gave us to try my hand at a ginger and lemon freezer jam.-Jeni Pittard, Commerce, Georgia

Number Of Ingredients 7

5-1/2 cups finely chopped peeled fresh pears (about 10 medium)
1 package (1-3/4 ounces) pectin for lower-sugar recipes
2 tablespoons lemon juice
1-1/2 teaspoons grated lemon zest
1 teaspoon minced fresh gingerroot
4 cups sugar
1 teaspoon vanilla extract

Steps:

  • Rinse seven 1-cup plastic containers and lids with boiling water. Dry thoroughly. In a Dutch oven, combine pears, pectin, lemon juice, lemon zest and ginger. Bring to a full rolling boil over high heat, stirring constantly. Stir in sugar. Boil for 1 minute, stirring constantly. Stir in vanilla., Remove from heat; skim off foam. Immediately fill all containers to within 1/2 in. of tops. Wipe off top edges of containers; immediately cover with lids. Let stand at room temperature 24 hours., Jam is now ready to use. Refrigerate up to 3 weeks or freeze extra containers up to 12 months. Thaw frozen jam in refrigerator before serving.

8 cups peeled, cored and chopped pears
1 cup unsweetened pineapple juice
8 cups white sugar

Steps:

  • Place chopped pears into a large pot, and pour pineapple juice over them to prevent them from browning. Stir in sugar, and bring to a boil over medium-high heat. Stir frequently to prevent scorching. When the pears are at a full boil, reduce heat to medium, and cook until the mixture is the color and texture of honey. The longer you cook it, the thicker it gets. Cooking time is usually 2 to 3 hours.
  • Ladle into hot sterile jars, filling to within 1/4 inch of the top. Wipe rims with a clean damp cloth, and seal jars with lids and rings. Process in a boiling water canner for 10 minutes, or the amount of time recommended by your local extension for your area.

1 teaspoon grated lemon rind
1/4 cup fresh lemon juice, plus

4 cups sugar

Steps:

  • Place pear in a food processor; pulse until finely chopped.
  • Place pear, rind, juice, and vanilla bean in a large saucepan.
  • Stir in pectin.
  • Place pan over high heat; bring to a boil.
  • Stir in sugar; cook 5 minutes or until sugar dissolves.
  • Bring to a boil; cook for 1 minute, stirring constantly.
  • Remove from heat.
  • Skim foam from surface; discard.
  • Remove vanilla bean. Scrape seeds into pear mixture; discard bean.
  • Stir 5 minutes to ensure fruit is suspended in jam.

4 cups prepared fruit (buy about 3 lb. fully ripe pears)
2 Tbsp. fresh lemon juice
1 box SURE-JELL Fruit Pectin
5 cups sugar, measured into separate bowl (see tip below)
1/2 tsp. butter or margarine

Steps:

  • Bring boiling-water canner, half full with water, to simmer. Wash jars and screw bands in hot soapy water; rinse with warm water. Pour boiling water over flat lids in saucepan off the heat. Let stand in hot water until ready to use. Drain well before filling.
  • Peel and core pears. Finely grind or chop fruit. Measure exactly 4 cups prepared fruit into 6- or 8-qt. saucepot. Stir in lemon juice.

5 cups crushed plums, peaches, or nectarines (about 3 pounds fruit), any bruised spots cut away
1/3 cup fresh lemon juice (from 2 lemons)
2 1/2 cups granulated sugar
1/3 cup (1.75 ounces) powdered, no-sugar-needed pectin

Steps:

  • Thoroughly wash, rinse, and dry seven 8-ounce plastic freezer or glass jars with tight-fitting lids. You can also use zip-top freezer bags.
  • In a medium pot, combine fruit and lemon juice. Bring to a boil over medium-high.
  • In a bowl, whisk together sugar and pectin; add to fruit, stirring until sugar mixture dissolves and fruit returns to a full rolling boil. Boil 1 minute, then remove from heat.
