You can put the knives away because this easy, no-fuss tenderloin absolutely melts in your mouth. My family insists I make this at least once a week!

1 (1 1/2 pound) fat-trimmed pork tenderloin
salt and pepper to taste
all-purpose flour for dusting
2 tablespoons vegetable oil
1 (8 ounce) bottle Russian-style salad dressing
¾ cup honey
1 (1 ounce) envelope dry onion soup mix

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Trim any excess fat from pork and pat dry with a paper towel. Season with salt and pepper. Dust with flour, shaking off any excess.
  • In a large skillet, heat 1 to 2 tablespoons of vegetable oil over medium-high heat. Sear the pork in the oil, rotating to brown evenly all sides. Transfer to a baking dish just large enough to fit the tenderloin.
  • In a bowl, stir together the Russian-style salad dressing, honey, and onion soup mix. Pour evenly over the tenderloin, rolling the meat to coat on all sides. Cover with aluminum foil.
  • Bake, covered, in the preheated oven for 30 minutes, basting with glaze every 10 minutes. Remove foil and continue baking another 30 minutes, or until pork is no longer pink in the center.

2 1-pound pork tenderloins
2 1/2 teaspoons chopped fresh rosemary, divided
2 tablespoons olive oil
4 large shallots, chopped
3/4 cup diced dried apples
1/4 pound kumquats, quartered, seeded
1/2 cup fresh cranberries or frozen, thawed
1 1/2 cups low-salt chicken broth
1/2 cup dry white wine

Steps:

  • Preheat oven to 375°F. Sprinkle pork with 2 teaspoons rosemary, salt, and pepper. Heat oil in heavy large ovenproof skillet over medium-high heat. Add pork (cut to fit, if necessary) and sauté until brown, turning occasionally, about 10 minutes. Using tongs, transfer pork to plate. Add shallots to skillet and sauté until brown, about 4 minutes. Add apples, kumquats, and cranberries; stir until fruit mixture is heated through, about 1 minute. Add broth, wine, and remaining 1/2 teaspoon rosemary. Boil 1 minute. Return pork and any juices to skillet, turning to coat with sauce.
  • Place skillet in oven and roast pork until thermometer inserted into center registers 145°F to 150°F, about 25 minutes. Transfer pork to platter; let stand 10 minutes. If thicker sauce is desired, boil juices in skillet until reduced enough to coat spoon. Season sauce to taste with salt and pepper. Slice pork crosswise and spoon sauce over.

1 teaspoon ground cumin
1 teaspoon garlic salt
1 teaspoon dried oregano
1 teaspoon mustard powder
1 pork tenderloin, cut into 1-inch medallions (about 8)
Kosher salt
2 tablespoons canola oil
3 scallions, minced
2 cloves garlic, minced
1 cup turnip dice (1/4-inch), tops reserved
1/2 cup white wine
1 cup chicken stock
2 tablespoons unsalted butter
1/2 teaspoon fresh rosemary, minced
1/2 cup grated Parmigiano-Reggiano
Chopped fresh chives, for garnish

Steps:

  • Combine the cumin, garlic salt, oregano and mustard powder in a small bowl. Sprinkle the pork medallions on all sides with salt, followed by the rub.
  • In a large straight-sided saute pan, heat the canola over high heat until it begins to smoke, then turn down the to medium. Add the pork medallions and sear until caramelized on one side, 3 to 4 minutes. Flip, then sear on the other side until the pork reaches an internal temperature of 130 degrees F, about 4 more minutes. Remove the pork and set aside to rest. Return the pan to the heat and add the scallions and garlic. Cook over low heat until softened, about 3 minutes. Add the turnips and cook, stirring to coat the vegetables, for 1 minute. Add the white wine and chicken stock, scraping up any brown bits on the bottom of the pan. Bring to a simmer over medium heat and reduce by three-quarters, about 5 minutes. Chiffonade 1/2 cup of the turnip greens and add to the sauce with the butter and rosemary. Return the pork and any accumulated juices to the pan. Remove from the heat and top with the Parmesan. Divide among plates and garnish with the chives.

1 lb Pork tenderloin
3 tsp Olive oil
3 shallots
1 cup sliced mushrooms
1/2 cup brandy
3 tbsp Dijon mustard
1 cup whipping cream

Steps:

  • Cut the tenderloin into 1/2 inch thick pieces. Place on wax paper, apply salt and pepper lightly to both sides and press both sides with palm of hand. Saute in 2 to 3 tablespoons of olive oil for up to 2 minutes each side, do not cook through. Remove meat and place 3 shallots and 1 cup of sliced mushrooms into the pan. When transparent add 1/4 to 1/2 a cup of brandy and 3 tablespoons of no grain Dijon mustard. Stir until thickened and add I cup of whipping cream. Whisk to a sauce like consistency. Add the meat and broil until meat is done, about 5 to 10 minutes. Serve with garlic mashed potatoes.

1 lemon, sliced thin and seeds removed, chopped
2 tablespoons fresh grated ginger (from about a 2-inch piece)
1 teaspoon anise seeds
1 teaspoon freshly ground black pepper
1/2 teaspoon grated nutmeg
1/2 teaspoon ground cinnamon
1/4 teaspoon ground cardamom
About 1 cup/250 milliliters brandy

Steps:

  • In a large bowl, combine the currants, cranberries, cherries, pears and apricots. Zest the orange and add the zest to the bowl. Add the lemon, ginger, anise seeds, black pepper, nutmeg, cinnamon and cardamom.
  • Juice the orange and add the liquid to the bowl. Add the brandy and stir to combine. Transfer the mixture to a jar, cover and refrigerate. (If you don't have a jar that's large enough, keep the mixture in the bowl and cover with plastic wrap.) Allow the fruit to sit in the liquid for 2 to 14 days before using. The flavor of the fruit, spices and brandy will improve with time. At least once a day, turn the jar upside-down (or thoroughly stir the mixture if it's in a bowl) to make sure all the dried fruit gets coated in the brandied liquid. 1/4 teaspoon salt

  • Heat oven to 500 degrees.
  • In small saucepan, bring brandy, water, powdered sugar, dried fruit and ginger to a boil over medium-high heat.

1/2 lemon
salt and pepper
1/2 cup slivered almonds
2 teaspoons oil
1 clove garlic
2 tablespoons brandy
3/4 cup light cream
1/4 cup parsley, chopped

Steps:

  • Trim the fat from the tenderloin and cut into 3/4 inch slices.
  • Sprinkle meat with the juice of 1/2 a lemon.
  • salt and pepper the meat, then let it sit till ready to cook.
  • Sauté the slivered almonds and garlic in the olive oil, till golden.
  • Remove from pan.
  • Discard garlic.
  • Sauté meat 8-10 minutes each side.
  • Transfer meat to warm plate.

1/4 cup uncooked brown rice
4-1/2 teaspoons cornstarch
2 tablespoons water

1/2 teaspoon garlic powder
