Quick braised lettuce, peas & bacon image

Serve this quick braised lettuce with peas and bacon alongside our chicken kievs for a flavour-packed side dish using simple, everyday ingredients

50g cold unsalted butter , diced
6 rashers smoked streaky bacon , finely chopped
400g garden peas , freshly podded or frozen and defrosted
150ml fresh chicken stock
2 Little Gem lettuces , shredded

Steps:

  • Heat a small piece of the butter in a frying pan and fry the bacon until golden, then add the peas and chicken stock, simmer and reduce the stock by half. Stir through the lettuce and remaining butter, and simmer for a minute until the lettuce has just wilted and the butter is incorporated into the stock. Season to taste, then serve.

1/2 cup ketchup
1/2 cup full-fat Greek yogurt
1/3 cup white wine vinegar
2 teaspoons Dijon mustard
1 tablespoon sugar
1 teaspoon paprika
1/2 small onion, coarsely chopped
Kosher salt
4 slices bacon
6 ounces sugar snap peas, stringed and cut on the bias (about 3 cups)
Kosher salt and freshly ground black pepper
1 head butter lettuce, torn into leaves
1/4 cup fresh Italian parsley leaves, chopped
Wedge of Parmesan, for grating

Steps:

  • For the French dressing: Plop the ketchup, yogurt, vinegar, mustard, sugar, paprika, onion and salt to taste into a high-speed blender. Puree until smooth. Use immediately or transfer to an airtight container and store in the refrigerator for up to 2 weeks.
  • For the pea and bacon salad: Put the bacon in a large cold skillet and cook over medium heat until crisp, 4 to 5 minutes. Drain on a paper towel-lined plate, and set aside.
  • Add the peas to the bacon fat, then sprinkle lightly with salt and pepper and cook over medium heat until they get a slight color, 2 to 3 minutes. Remove from the heat and set aside.
  • Build the salad. Onto a bed of butter lettuce leaves, scatter the peas and herbs. Crumble and add the bacon. Finish with a grating of Parmesan and a drizzle of dressing. Serve with more dressing on the side.

Do try this - it's melting and nutty flavoured, with sweet peas and just a hint of cream

small knob butter
1 small onion , finely chopped
4 Little Gem lettuces
200ml fresh chicken stock
4 tbsp single cream or crème fraîche
500g bag frozen petits pois

Steps:

  • Melt the butter in a large sauté pan with a lid. Fry the onion gently for about 5 mins, until softened. Meanwhile, pull any damaged or coarse outer leaves from the lettuces and trim the bases. Cut the lettuces in half lengthways, through the base.
  • Place the lettuce cut-side up on top of the onions and cook for half a minute, then turn over and cook for another 30 secs. Pour over the stock and lightly season. Put the lid on the pan, reduce the heat to the minimum and cook for 10 mins.
  • With a slotted spoon, lift the lettuces out and put into a sieve over a bowl. Raise the heat under the pan and boil the juices until reduced by half. Add the cream or crème fraîche and petits pois and boil for 1 min until heated through. Arrange lettuces in a serving dish and pour over the pea-and-cream sauce.

6 rashers smoked streaky bacon, chopped
8 skinless, boneless chicken thighs
2 garlic cloves, thinly sliced
1 bunch spring onions, roughly chopped
300ml hot chicken stock
250g frozen peas
1 Little Gem lettuce, roughly shredded
2 tbsp crème fraîche

Steps:

  • In a large frying pan, dry-fry the bacon over a medium heat for 3 mins until the fat is released and the bacon is golden. Transfer the bacon to a small bowl, leaving the fat in the pan. Add the chicken and brown for 4 mins each side.
  • Push the chicken to one side of the pan and tip in the garlic and spring onions, cooking for about 30 secs, just until the spring onion stalks are bright green. Pour in the chicken stock, return the bacon to the pan, cover and simmer for 15 mins.
  • Increase heat under the pan. Tip the peas and lettuce into the sauce and cook for 4 mins, covered, until the peas are tender and the lettuce has just wilted. Check chicken is cooked through. Stir in the crème fraîche just before serving.

2 lettuce hearts, tied up with string
1 bouquet garni
1 1/2 teaspoons salt
2 teaspoons sugar
3 tablespoons water
1/4 pint (1/2 cup) double cream

Steps:

  • Melt the butter in a saucepan, add the peas, lettuce hearts, bouquet garni, salt, sugar and water. Simmer with the lid on for 40 minutes. Remove the lettuce and strain the peas, reserving the liquid. The amount of liquid should be very little but reduce it to about 2 tablespoonfuls, whisk in the cream and pour over peas. Cut lettuce hearts into quarters and place on the peas.

4 slices bacon, cut into 1/2-inch pieces
2 tablespoons unsalted butter
2 leeks (white and pale-green parts only), halved, thinly sliced into half moons, and rinsed well (2 cups)
Coarse salt and freshly ground pepper
20 ounces spinach, tough stems removed, washed well (8 packed cups)
2 cups shelled fresh garden peas (from 2 pounds in pods)
1/2 cup chicken broth
1 tablespoon finely chopped mixed fresh herbs, such as dill, chervil, and tarragon
12 leaves Boston or Bibb lettuce

Steps:

  • Cook bacon in a skillet over medium heat until crisp, about 10 minutes. Transfer to a paper-towel-lined plate to drain.
  • Melt butter in a large pot over medium-high heat until foamy. Add leeks and 1 teaspoon salt. Cook, stirring occasionally, until leeks are translucent, about 3 minutes. Add spinach, cover, and cook 2 minutes, stirring halfway through. Add peas and broth, and cook, stirring occasionally, until peas are tender and bright green, 3 to 4 minutes.
  • Stir in herbs and bacon, and season with salt and pepper. Divide lettuce leaves among 6 plates, and top with pea mixture. Serve immediately.

2 tsp sunflower oil
2 rashers rindless smoked streaky bacon , cut into small pieces
1 long shallot or small onion, very finely sliced
1 garlic clove , crushed
2 x 140g/5oz thick skinless cod fillets
140g frozen pea
200ml chicken stock , fresh or made with ½ cube
2 Little Gem lettuces , thickly shredded
2 tbsp half-fat crème fraîche
2 thick slices crusty wholegrain bread , to serve

Steps:

  • Heat the sunflower oil in a medium non-stick frying pan. Add the bacon, shallot or onion, and garlic. Cook gently, stirring, for 2 mins, then push to one side of the pan.
  • Season the cod with ground black pepper. Fry in the pan for 2 mins, then turn over. Add the peas and stock, and bring to a simmer. Cook over a medium heat for a further 2 mins, then add the lettuce and crème fraîche. Cook for a couple mins more, stirring the vegetables occasionally, until the fish is just cooked and the lettuce has wilted. Serve with bread to mop up the broth.

  • If not already cut, slice the bacon into relatively thin slices. Peel the outer layer off the spring onions and trim the end. Cut the white and light green part into slices. If using pearl onions, peel and cut in half or quarters, depending on size.
  • Warm the butter in a small pan/pot with a lid over a medium-high heat. Add the bacon and cook a couple minutes, stirring regularly, but don't let it brown. Add the onion and cook a minute more to gently soften the onion.
  • Add the peas and stock, cover the pan with the lid and reduce the heat to a simmer. Leave the peas to cook for around 10-15 minutes so that the liquid absorbs and the peas are cooked through. If the liquid is gone quickly, add a little more.
  • Once the peas are cooked, add the salt, pepper and sugar and stir through. Tear the lettuce leaves and place over the top of the peas, cover with the lid again and cook another minutes.
