- Heat oven to 450 degrees F. Make pie crust as directed on box for One-Crust Baked Shell using 9-inch glass pie pan. Bake 9 to 11 minutes or until light golden brown. Cool completely, about 30 minutes.

- Cut pie crust in half. Repackage and refrigerate 1 half for another use. On a lightly floured surface, roll out remaining half into an 8-in. circle. Transfer to a 7-in. pie plate; flute edge., Line shell with a double thickness of heavy-duty foil. Bake at 450° for 4 minutes. Remove foil; bake until crust is golden brown, about 2 minutes longer. - Preheat the oven to 375 degrees F (190 degrees C).
- Brush beaten egg over all surfaces of pie crust, including edges. Prick holes into the bottom and sides of the crust using a fork.
- Bake in the preheated oven until golden brown, 10 to 15 minutes. Remove from the oven and let cool completely, about 30 minutes.
- Combine sugar and 2 eggs in a medium saucepan over medium-low heat. Stir continuously, adjusting heat as needed to make sure mixture does not boil or bubble, until it coats the back of a spoon and an instant-read thermometer reads 160 degrees F (70 degrees C), about 10 minutes.
- Remove mixture from heat and stir in melted chocolate and vanilla extract; allow to cool to lukewarm temperature, 15 to 20 minutes.

- CRUST.
- Sift together flour, sugar, and salt.
- Mix Milk into Oil.
- Add Oil/Milk to flour mixture with fork.
- Press into 9 in pie tin.
- Bake at 475 deg for 7-10 minutes (or until golden brown).
- Set aside to cool.
- FILLING.
- Melt chocolate chips.
- Cream butter, sugar, salt, and vanilla. Beat to fluffy.

One of it's special assets is being able to make it ahead and freeze to have on hand for special occasions. Mother made this often, and it is still my favorite dessert. Cooking time includes chilling time. Variation: For Gluten-intolerant people: Omit pie crust and spoon filling into individual parfait glasses and garnish with whipped cream and chocolate shavings!

- Bake pie crust according to package directions for a pie that will contain a refrigerated filling. Filling is not cooked.
- Cool.
- Melt 1 ounce baking chocolate (See NOTE below).
- With an electric mixer, cream butter and sugar together for at least 5 minutes until sugar is dissolved.
- (This step is very important to the final texture of this dessert).
- Add melted chocolate and vanilla extract and mix well.
- Wash and dry the two raw eggs. Add two eggs, one at a time, beating 5 minutes after each addition, until mixture is thick and creamy.
- Pour into baked pie crust.
- Garnish with shavings from the 1/2 ounce chocolate square.
- Or melt chocolate and drizzle over the pie.
- Chill at least 1-2 hours or until well set.

- Just thaw several hours in the refrigerator and serve.

- It is just the right temperature to melt chocolate without scorching it, unless left on burner much too long.

This is a beautiful, fluffy French silk Pie. Garnishing it with extra whipped cream and chocolate curls makes it fabulous! I recently made one for a pie auction and it sold for $65.00! Yes, it really is that tasty. I've been making this pie by memory for years, so I have no idea of the recipe's origin. For a higher, more impressive pie, whip 1 extra cup of whipping cream and add it to the top of the pie, before garnishing with shaved chocolate.

- Mix together sugar and cornstarch in a medium saucepan until well blended. Stir in milk gradually. Turn heat to medium and stir constantly until boiling. Remove from heat.

- In a heavy 2-quart saucepan, combine the 1 cup whipping cream, chocolate pieces, butter and sugar.
- Cook over low heat, stirring constantly, till chocolate is melted.
- About 10 minutes.
- Remove pan from heat.
- Gradually stir about half of the hot mixture into the beaten egg yolks.
- Return egg mixture to saucepan.
- Cook over medium-low heat, stirring constantly, till mixture is slightly thickened and almost bubbly-- 3 to 5 minutes.
- Remove saucepan from heat.
- Stir in whipping cream.
- Place saucepan in a bowl of ice water, stir occasionally till mixture stiffens and becomes hard to stir (20 minutes).
- Transfer chocolate mixture to a medium mixing bowl.
- Beat the cooled chocolate mixture with an electric mixer on Medium to High speed until light and fluffy 2 or 3 mins.
- Spread filling in a baked pastry shell.
- Cover and chill pie 4-5 hours or until set Best served within 24 hours, but will last 3-4 days if stored properly.
- Serve with whipped cream and a garnish with chocolate curls.

My family loves this pie! One never lasts for more than a day. It is great on any occasion or just because you want something cold and chocolate! My mom got this recipe from an old Betty Crocker or Pillsbury cookbook.

- Place the melted butter in an automatic mixer. I use a Kitchenaid.
- Add the sugar and stir on low.
- Slowly add the chocolate while mixing until it is well blended.
- Pour in your peppermint.
- Add one of the eggs, and change the mixing speed to hi. I go to the highest level on the Kitchenaid. Beat the mixture for 5 minutes.
- Add the second egg. You may want to slow down the mixer to add the egg. Return to hi speed and mix for 5 minutes. Your pie should be a nice light brown color. If not, mix it longer and make sure you are on a really hi speed.
- Turn off the mixer. Pour the mix into the chocolate crust. Place a lid or plastic wrap over the pie.
- Refrigerate the pie for at least 2 hours.
- Take the lid off the pie. Spread cool whip or whipped cream on the pie. Make chocolate curls with the chocolate bar and a potato peeler. Sprinkle the curls over the cream.

- In microwave, melt chocolate, set aside to cool.
- In medium bowl, cream butter, gradually add sugar, cream well.
- Mix in melted, cooled chocolate and vanilla.
- Add eggs 1 at a time, beating 5 minutes each, and scraping sides of bowl often to incorporate all sugar.
- (Beat until no longer any grains of sugar).
- Spoon and smooth into pie crust.
- Chill until set, about 1 hour.
- Serve topped with Cool Whip, chocolate shavings and a maraschino cherry.
- *Double this recipe for a 9-inch deep dish pie.
