STUFFED FRENCH TOAST WITH APPLES

Stuffed French Toast with Apples image

Provided by Food Network

Yield 4 servings

Number Of Ingredients 12

2 red apples, such as Macintosh, cored and diced
3 teaspoons Truvia® natural sweetener spoonable*
1/4 teaspoon ground cinnamon
4 ounces 1/3 less fat cream cheese, softened
1/2 cup walnuts, toasted and chopped
1/4 cup dried cherries, coarsely chopped
3/4 teaspoon vanilla extract
8 slices Pepperidge Farm 80 calorie cinnamon swirl bread
2/3 cup 1% milk
2 large eggs
1/8 teaspoon salt
*May substitute with 3 1/2 packets Truvia® natural sweetener

Steps:

  • 1. In a medium microwave-safe bowl, combine apples, 4 tablespoons water, 1 teaspoon Truvia® natural sweetener, and cinnamon. Cover and cook until apples are tender and juicy, about 6 minutes. Uncover, toss and set aside.
  • 2. In a medium bowl, stir together the cream cheese, walnuts, cherries, 1 teaspoon Truvia® natural sweetener, and 1/4 teaspoon vanilla. Put 4 slices bread on a cutting board and evenly spread with cream cheese mixture, about 1/4 cup per slice. Firmly press a second piece on top of each to form a sandwich.
  • 3. In a shallow bowl, whisk the milk, eggs, remaining 1 teaspoon Truvia® natural sweetener and vanilla, and a pinch of salt. Heat a heavy nonstick skillet over medium heat until a drop of water skitters around the pan. Soak each sandwich in the milk mixture for 1 minute, turning once and pressing edges of bread together. Allow excess to drip off and place sandwiches in the hot skillet. Cook, turning once until browned and crisp on both sides, 8 to 10 minutes. Serve the French toast with the apples on top.

APPLE-CARAMEL FRENCH TOAST

Apple-Caramel French Toast image

Need a make-ahead breakfast for the family or for overnight guests? Assemble this caramelized-apple-and-challah casserole the day before, and simply ferry it from fridge to oven in the morning. Pro tip: while the casserole is resting, crank up the oven temperature and make this mess-free bacon to go on the side.

Provided by Martha Stewart

Categories     Bread Recipes

Time 3h45m

Number Of Ingredients 12

1 loaf challah or brioche (1 pound), cut into about twelve 3/4-inch-thick slices
5 tablespoons unsalted butter
1 cup plus 2 tablespoons packed light-brown sugar, divided
Kosher salt (we use Diamond Crystal)
1 tablespoon fresh lemon juice
4 crisp apples, such as Gala, Braeburn, or Envy, peeled and cut into 1-inch wedges (about 5 1/2 cups)
6 large eggs, whisked
1 1/3 cups whole or 2 percent milk
2 teaspoons pure vanilla extract
1/2 teaspoon ground cinnamon
Confectioners' sugar
Greek yogurt, toasted chopped pecans, and raspberries or pomegranate arils, for serving

Steps:

  • Spread bread slices on a baking sheet; let stand at least a few hours and up to overnight. Melt butter in a large ovenproof, nonreactive skillet (like an 11-to-12-inch enameled cast iron) over medium heat. Add 1 cup brown sugar, 1/4 teaspoon salt, and lemon juice. Cook, stirring, until sugar dissolves, then bring to a boil; cook 1 minute.
  • Add apples and cook, turning occasionally, until they begin to soften and brown a bit and liquid thickens, about 12 minutes. Let cool 30 minutes.
  • In a wide, shallow dish, whisk together eggs, milk, remaining 2 tablespoons brown sugar, vanilla, and 1/4 teaspoon salt. Dip bread in mixture, turning to coat. Arrange atop apples, shingling in concentric circles. Pour remaining mixture on top. Cover; refrigerate at least 2 hours and up to 24.
  • Preheat oven to 350°F. Sprinkle French toast with cinnamon and bake, uncovered, until set and golden on top, 35 to 45 minutes. Let stand 15 minutes. Dust with confectioners' sugar; serve with yogurt, pecans, and fruit.

FRENCH TOAST WITH APPLE SIZZLE (FOODFIT WEBSITE)

French Toast with Apple Sizzle (Foodfit website) image

This is from the Foodfit website. I haven't tried it but wanted to see what the nutritional facts REALLY are, i think they might be a little ahead of themselves with the nutritional facts. I will be trying this recipe anyway though, one reviewer said," It was like eating warm apple pie, I will definately try it again." ...hope its as good as she said it was!!

Provided by Mallina Cashew

Categories     Breakfast

Time 30m

Yield 12 slices, 6 serving(s)

Number Of Ingredients 11

1 1/2 tablespoons butter
2 cups peeled cored and sliced apples
3/4 cup maple syrup
1 dash nutmeg
3 large eggs
2 cups skim milk
3/8 cup sugar (although one reviewer felt the maple syrup was enough, and did not add this sugar)
3/4 teaspoon ground cinnamon
1/4 teaspoon nutmeg
2 1/4 teaspoons vanilla extract
12 slices bread, slightly stale (multigrain would be a healthier choice...)

Steps:

  • Prepare the apple sizzle: In a small skillet, melt the butter over medium heat.
  • Add the fruit and cook until it begins to soften slightly, about 2 to 3 minutes.
  • Add the maple syrup and nutmeg.
  • Bring to a boil, set aside and keep warm.
  • For the French toast: Whisk together the eggs, milk, sugar, cinnamon, nutmeg and vanilla until thoroughly mixed.
  • (This can be done ahead and refrigerated overnight.) Spray a griddle or large frying pan with non-stick spray and heat over medium-high heat.
  • Soak the bread slices in the egg mixture until moistened.
  • Place the soaked slices on the griddle.
  • Discard any excess egg mixture.
  • When the bottoms are golden brown, flip with a spatula and brown the other side.
  • Serve the French toast topped with the apple sizzle.
