FRENCH RICE AND TUNA SALAD - SALADE DE RIZ AU THON
This is a classic French homemade summer salad with rice and tuna. This salad comes in many different variations, but they all have rice and tuna in common. It is fast and easy to prepare and can be made the day before. Common to serve on a picnic or to bring when you are on the move.

Steps:
- Cook the rice accordingly to the package. Let it cool down.
- Pour away the oil from the can with the tuna and pour the tuna in a big bowl.
- Cut the tomatoes in small pieces and add to the tuna.
- Pour away the liquid from the can with corn kernels and add the corn in the big bowl.
- Add the spices and olive oil and mix well.
- Place in the fridge for minimum 1 hour or if possible, over the night.
ROMAINE RICE TUNA SALAD
This is a yummy salad my roommate from Croatia made all of the time. It's perfect for lunch. You just want to keep eating and eating! Make right before serving, doesn't refrigerate well.

Steps:
- Combine the rice and water in a saucepan, and bring to a boil. Reduce heat to low, cover, and simmer for 20 minutes, or until rice is tender and the water has been absorbed.
- In a medium bowl, toss together the romainee lettuce, carrot, and tuna. Pour the olive oil and vinegar over this mixture, and season with salt and pepper. Toss to coat. When the rice is done, cool for about 5 minutes, then toss with the salad. The warm rice will wilt the romaine lettuce slightly. Taste and adjust the amounts of vinegar and oil or salt and pepper if desired. Serve immediately. This does not keep well.

- The cooked rice will have probably clumped together, so break it up in a large mixing bowl. Flake in the tuna, then mix in the peas, peppers, tomatoes, spring onions, parsley and olives, if you're using them.

FRENCH TUNA AND RICE SALAD
I used to get a tuna and rice salad at a small French bistro and was sad when the restaurant closed. I have been trying to find a similar recipe for years and finally found it from Debra Fioritto Weber. I made a few small changes, such as replacing gherkins with capers and adding tarragon to the vinaigrette.

GRILLED TUNA RICE SALAD PROVENCAL

- Combine the rice with 1 1/2 cups water, and bring to a boil. Reduce the heat, cover and simmer, cooking a total of 17 minutes.
- Meanwhile, slice the onions about 1/4-inch thick. Prepare a stove-top grill.
- Wash and dry the tuna. Grill the tuna according to the Canadian rule: measure the fish at thickest part and cook for 8 to 10 minutes to the inch.
- Grill the onions, turning once or twice, until they are soft.
- Wash, trim and coarsely chop the peppers.
- Heat a nonstick pan until it is very hot. Reduce the heat, add oil and saute the peppers until they are soft.
- Mince the garlic, and add to the peppers.
- Wash, dry and chop the oregano, and combine it in a serving bowl with the vinegar, yogurt and mayonnaise. When the tuna is done, cut it up into small chunks and stir the chunks into this mixture. When the onions are cooked, cut them up coarsely and add. Then, add the sauteed pepper and garlic.
- Mix in the rice, and season with salt and pepper.
- Wash, trim and slice the tomatoes, and serve with the rice salad and bread.

- Preheat the oven to 350 degrees F (175 degrees C). Spray a 2-quart casserole dish with cooking spray.
- Combine milk, both soups, tuna, rice, celery, onion, bell pepper, garlic, oregano, parsley, black pepper, and salt in a large bowl and mix until well incorporated. Pour into the prepared dish and cover with aluminum foil.
- Bake in the preheated oven until rice is tender, about 1 hour and 30 minutes. Let cool slightly before serving, about 10 minutes.
