16 oz fresh cranberries
1 orange
3/4 cup granulated sugar
1 cinnamon stick

Steps:

  • Add cranberries and sugar to a saucepan and stir.
  • Zest orange, then juice, and add both to the saucepan.
  • Add cinnamon stick and cook over MED-LOW for 15 minutes, or until the cranberries burst and mixture thickens to your liking.
  • Remove cinnamon stick and serve at room temperature or chilled.

24 ounces fresh or frozen cranberries (6 cups)
1 1/4 cups sugar
4 wide strips orange zest, plus 1 cup fresh juice
1/2 teaspoon ground cinnamon
Kosher salt

Steps:

  • In a saucepan, combine cranberries, sugar, orange zest and juice, cinnamon, 1/4 teaspoon salt, and 1/4 cup water. Bring to a boil, then reduce heat to medium and simmer, stirring occasionally, until cranberries burst and mixture thickens slightly, 12 to 15 minutes. (Sauce will thicken more as it cools.) Remove from heat; let cool completely. Refrigerate in an airtight container up to 1 week.

Add the cranberries, ginger, and cinnamon stick; return the mixture to a boil and cook until the cranberries start popping, about 5 minutes. Transfer the sauce to a shallow container; chill in refrigerator until cold, about 3 hours.

  • Bring all the ingredients to a boil in a heavy medium-sized saucepan, stirring often. Reduce heat to medium-low and simmer until many of the cranberries have burst, stirring occasionally, about 15 minutes.
  • Let the cranberry sauce cool in the pan, then transfer it to another container, cover and refrigerate until ready to serve. The sauce may appear soupy at first but should thicken upon refrigeration.

Pour into a serving dish or jars and cover. The pectin in the cranberries will make the cranberry sauce gel as it cools. I usually use a fork to mix it up which will make it more pliable.

1 pound fresh cranberries, washed and dried
2 cups granulated sugar
1/3 cup water
1 cinnamon stick
1/2 teaspoon ground allspice
1/4 teaspoon ground nutmeg
1 orange, zested and juiced

Steps:

  • In a medium pot, combine the cranberries, sugar and water. Stir to blend. Bring the mixture to a boil over medium heat. Reduce to a simmer and add the cinnamon stick, allspice and nutmeg. Stir to blend and simmer for an additional 5 to 7 minutes. Some of the cranberries will burst and some will remain whole. Add the orange juice and zest, stir and allow to cool before serving.
