Fresh Fruit And Baby Spinach Salad Recipes
FRUIT AND SPINACH SALAD WITH STRAWBERRY VINAIGRETTE
This strawberry, apple and pear spinach salad is easy, light and delicious. I've created a tasty mild strawberry poppyseed vinaigrette to go with it. This salad is loved by every palate; young and old. If you like a stronger vinaigrette, feel free to add more red wine vinegar. I've also tested this with cider vinegar and it worked well; although I liked the red wine vinegar a teensy bit more.

Steps:
- In a food processor or blender, combine 1/4 cup water, 1/4 cup olive oil, 1/4 cup cider vinegar, 1/2 lb strawberries and 2 Tbsp honey and puree until smooth.
- Add 1/2 tsp poppy seeds and pulse once to combine. Refrigerate dressing up to a week.
- Place all of your salad ingredients in a large mixing bowl. Add salad dressing to taste and toss to combine. Easy!

- Combine raspberry vinegar, vegetable oil, honey, Dijon mustard, shallots, salt and pepper in a small sealable container and shake vigorously to blend (be sure honey doesn't stick to bottom). Alternatively, combine vinegar, honey, mustard, shallots, salt and pepper in a medium bowl. Whisking constantly, slowly drizzle in oil until emulsified.
- In a large bowl, combine baby spinach, strawberries, blueberries and pecans. Add the dressing little by little and toss until greens are well-coated (you may have a bit left over but you'll use most of it). Taste and adjust seasoning with salt and pepper. Sprinkle crumbled goat cheese over top and serve.
