Fresh Fruit Cobbler image

Never use more than 1 quart of fruit. Only use fresh fruit for this recipe. Any variation will work! I usually do use sweetened peaches and lightly sugared berries, but this is optional. Serve warm with cream, ice cream, or whipped cream.

1 cup sliced fresh peaches
¾ cup peeled, cored and sliced apple
¾ cup peeled, cored and sliced pear
½ cup blueberries
½ cup pitted and sliced cherries
½ cup pitted and sliced plums
1 egg
¾ cup white sugar
¼ cup milk
1 cup all-purpose flour
1 teaspoon baking powder
½ teaspoon salt
½ teaspoon vanilla extract
2 tablespoons butter, melted

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 2 quart baking dish.
  • Arrange the peaches, apple, pear, blueberries, cherries, and plums in the prepared baking dish. In a medium bowl, beat egg, sugar, and milk. In a separate bowl, sift together flour, baking powder, and salt; stir into the egg mixture. Stir in vanilla and melted butter. Cover the fruit with the batter mixture.
  • Bake 30 minutes in the preheated oven. Cobbler should be bubbly and lightly browned. Serve warm.

2 cups sliced fresh peaches
2 cups sliced fresh nectarines
2 cups pitted and quartered plums
1 teaspoon cornstarch
1 cup currant jelly
½ teaspoon apple pie spice
⅛ teaspoon white pepper
1 (16.3 ounce) can refrigerated flaky biscuits (such as Pillsbury Grands!®)
¼ cup white sugar
¼ teaspoon ground cinnamon

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Spray an 8x13-inch baking dish with cooking spray.
  • In a large bowl, lightly mix together the peach, nectarine, and plum slices until well mixed, and toss with the cornstarch to dust the fruit. Pour in the currant jelly, apple pie spice, and white pepper, and lightly mix again with your hands to coat the fruit with the jelly and seasonings. Spread the fruit into the prepared baking dish.
  • Pop open the can of biscuits, and cut them in half. Arrange the biscuit dough halves on top of the fruit. Mix the sugar and cinnamon in a small bowl, and sprinkle the mixture evenly on the biscuit dough.
  • Bake in the preheated oven until the biscuits are golden brown, 20 to 25 minutes. Allow to cool on a rack for at least 20 minutes to let the dish set up.

1 cup butter or margarine
4 cups your favorite fruit, cut into pieces if necessary

Steps:

  • Preheat a grill.
  • Combine flour, oatmeal, sugar, and butter in a large bowl; mix until well combined. Place 3/4 of mixture along the bottom of a Dutch oven. Spread fruit over top, then sprinkle with the rest of the oatmeal mixture. Place on rack of hot grill; 1/3 of the charcoal must be on top and 2/3 of the charcoal must be on the bottom. The key to cooking it is not to open the Dutch oven until you have smelled the cobbler for 10 minutes. Every time you open the Dutch oven you lose the heat. Serve warm.

4 tablespoons cornstarch
4 cups fresh fruit (or frozen, blueberries, cherries, peaches, etc)
2 tablespoons orange juice (or Grand Marnier)
1/2 cup chopped pecans (optional)
1 (6 ounce) can ready-to-bake refrigerated buttermilk flaky biscuits
4 tablespoons brown sugar
1/4 teaspoon cinnamon
1/2 teaspoon grated orange peel

Steps:

  • Preheat oven to 375°F Spray an 8x8 baking dish with nonstick cooking spray and set aside.
  • In a large saucepan, combine all fruit mixture ingredients (except pecans). Bring to a boil, stirring constantly. Reduce heat and simmer until sauce is thickened (add pecans now if using) Pour fruit mixture into sprayed baking dish.
  • Separate dough into 5 biscuits. Cut each one into quarters and place into a bowl. Sprinkle with brown sugar, cinnamon, and orange peel and toss gently to coat.
  • Arrange biscuit pieces over hot fruit mixture and bake for about 15 minutes or until biscuits are deep golden brown. Cool slightly before serving.

1/2 cup butter
1 cup self-rising flour
1 cup white sugar
1 cup milk
1 (20 ounce) can canned peaches, with fruit and juice divided

Steps:

  • Preheat oven to 350 degrees, put stick of butter in 9x13" pan and melt in oven.
  • Mix flour, sugar, and milk.
  • When your butter is melted pour your mixture into pan directly on top of butter.
  • Place peach/fruit slices into pan on top of cobbler.
  • Pour syrup over top of cobbler and bake for approximately 1 hours till crust is brown and edges are bubbley.
  • Serve hot with ice cream if you wish.
  • I put 8-10 on the servings it depends on the size of the servings.
