You just can't beat the ease of this delicious keto berry cheesecake pie. Customize the pie by using your favorite combination of berries for a seasonal treat. Made with fresh assorted berries and a quick and easy cheesecake base, this pie is sure to become a low carb favorite..

1/2 cup of unsalted butter melted and cooled)
2 large eggs , room temperature
1/4 teaspoon sea salt
3/4 cup coconut flour
¼ teaspoon of baking powder
2 teaspoons of cold water
1 ½ cups of you choice of mixed berries
2 tablespoons of sugar substitute
8 ounces of room temperature neufchâtel cream cheese or regular cream cheese
1/4 cup of sugar substitute
1 large egg, room temperature
1 teaspoon of vanilla extract

Steps:

  • In a large mixing bowl combine the coconut flour, baking powder, sea salt, and set aside.
  • To the dry ingredients add the eggs, melted and cooled butter, and the cold water.
  • Mix all the ingredients together gently until dough forms.
  • Press the crust into a 9-inch pie pan
  • Preheat oven to 350-degree oven.
  • Combine the softened cream cheese, egg, sugar substitute, vanilla extract.
  • Combine the berries with 2 tablespoons of sweetener. Set aside.
  • Spread the cheesecake filling to the bottom of the crust.
  • Next, add the sweetened berries over the cheesecake layer.
  • Bake for 20-25 minutes or until the berries begin to melt into the cheesecake.
  • Chill your keto berry pie for a minimum of 1 hour for the best flavor.
  • Store in the refrigerator for up to 5 days. May be frozen for up to 3 weeks.

1 (8 oz.) pkg. cream cheese, softened
1 (14 oz.) can Eagle Brand® Sweetened Condensed Milk
or 1 (14 oz.) can Eagle Brand® Low Fat Sweetened Condensed Milk
1/3 cup lemon juice
1 tsp. vanilla extract
1 (9-inch) frozen deep-dish pie crust, baked
Fresh fruit (blueberries, strawberries, bananas*)
Smucker's® Seedless Red Raspberry Jam, or Strawberry Jelly (optional)

Steps:

  • BEAT cream cheese in large bowl with an electric mixer until fluffy. Gradually beat in sweetened condensed milk until smooth. Stir in lemon juice and vanilla. Pour into baked pie crust.
  • REFRIGERATE 3 hours or until set. Arrange fruit on top of pie. If coating berries, stir jam or jelly until smooth. Brush berries with jam and serve.
  • *If using bananas, dip in lemon juice before placing on pie to keep them from turning brown. Do not coat with jam.

1 (16 ounce) package fresh strawberries, hulled and large berries cut in half
1 pint fresh blueberries
1 (6 ounce) container fresh raspberries
1 (6 ounce) container fresh blackberries
1 cup water
½ cup white sugar
3 tablespoons cornstarch
¼ cup water
1 (9 inch) prepared shortbread pie crust (such as Keebler®)

Steps:

  • Thoroughly combine strawberries, blueberries, raspberries, and blackberries in a bowl. Scoop out 3/4 cup of mixed berries and place into a saucepan with 1 cup water and sugar; set remaining berries aside. Bring the mixture to a boil and reduce heat to medium-low.
  • Whisk cornstarch and 1/4 cup water in a bowl until smooth and stir the cornstarch mixture into the hot fruit syrup; stir until the mixture thickens, about 2 minutes. Let the mixture cool completely, stirring occasionally, about 20 minutes.
  • Pour the thickened berry mixture into fresh berries until thoroughly combined; pour berries and sauce into shortbread pie crust. Place in refrigerator until chilled, at least 1 hour.

4 tablespoons butter
1/4 cup Splenda sugar substitute
1/2 cup Splenda sugar substitute
1 teaspoon vanilla
10 ounces cream cheese
2 eggs
1 pint sour cream
2 tablespoons Splenda sugar substitute
1 teaspoon vanilla

Steps:

  • Melt butter. Mix together hazelnuts, butter and splenda. Press mixture into a pie plate. Bake at 350 for 5 minute.
  • Cream filling and pour into crust. Bake 20 minutes at 350.
  • Cool pie.
  • Beat ingredients for topping, spread on top of pie and bake for 5 min at 400.
  • Cool completely before serving.
