Easy Nachos with Refried Beans image

This is a quick recipe for nachos with refried beans to serve at get-togethers or on a Sunday watching football. Everyone I have served these to love them.

1 (16 ounce) can refried beans
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon ground cumin
1 (10 ounce) bag scoop-shaped tortilla chips
8 ounces Colby-Monterey Jack cheese, thinly sliced
1 (4 ounce) can sliced jalapeno peppers

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Combine refried beans, garlic powder, onion powder, and cumin in a bowl; mix well.
  • Pour tortilla chips onto a baking sheet in one layer. Spoon bean mixture over tortilla chips. Top with Colby-Monterey Jack cheese and jalapenos.
  • Bake in the preheated oven until cheese is melted, about 5 minutes.

1 pound ground beef
1 envelope taco seasoning
3/4 cup water
1 package (13 ounces) tortilla chips
1 cup refried beans
1 jar (15-1/2 ounces) salsa con queso dip
2 plum tomatoes, chopped
1/4 cup minced fresh chives, optional
1/2 cup sour cream

Steps:

  • Preheat oven to 350°. In a large skillet, cook and crumble beef over medium heat until no longer pink, 5-7 minutes; drain. Stir in taco seasoning and water; bring to a boil. Reduce heat; simmer, uncovered, until thickened, about 5 minutes, stirring occasionally., In an ungreased 13x9-in. baking pan, layer a third each of the following: chips, beans, beef mixture and queso dip. Repeat layers twice., Bake, uncovered, until heated through, 10-15 minutes. Top with tomatoes and, if desired, chives; serve immediately with sour cream on the side.

Kick Ass Nachos Using Leftover Chilli Con Carne or Chicken image

To the untrained eye this doesn't look much cop but it's such a good dish you just gotta try it! The jalapeños are essential as is the sour cream and guacamole. I've given the beef version below but I also like using shredded chicken, onions and garlic, with black pepper and cayenne instead of the chilli con carne. A complete meal in itself and damn fine one at that.

100 g tortilla chips (approx)
8 slices pickled jalapeno peppers (approx)
8 tablespoons leftover chili, con carne heated through (approx)
6 tablespoons salsa, heated through (can use pasta sauce)
80 g grated cheese (approx)
4 tablespoons guacamole (approx)
2 tablespoons sour cream (approx)

Steps:

  • Assemble the Nachos on individual plates. Try to distribute the ingredients evenly, in little pockets, throughout the nachos including the cheese but reserving some to sprinkle on top.
  • Microwave for 2 minutes making sure the cheese is melted and top with guacamole and sour cream.
  • Eat with your hands and get really messy. Fantastic!

1/4 taza de cebolla picada
1/4 taza de tomates (jitomates) picados
1/4 taza de chiles jalapeños rebanados
1/4 taza de aceitunas negras rebanadas
1/4 taza de guacamole

Steps:

  • Dora la carne en una sartén grande; escúrrela. Incorpora la salsa; cocina esto a fuego lento durante 2 min. revolviendo de vez en cuando.
  • Pon los totopos en un plato grande, apto para microondas; cúbrelos con la mezcla de carne y el queso.
  • Caliéntalos en el microondas a potencia ALTA de 2 a 3 min. o hasta que el queso se derrita, rotando el plato después de cada minuto.
