Easy Peach Dumplings image

These Easy Peach Dumplings are soft and gooey on the bottom, but crispy on top, and taste like peach cobbler. Crazy easy and ridiculously delicious!

2 medium peaches, cut into 4 wedges, pit removed ((Canned peaches work, too! See Recipe Notes))
8 ounce refrigerated Pillsbury crescent roll dough
1/2 cup (1 stick) unsalted butter
1/3 cup granulated sugar
1/3 cup brown sugar
1 teaspoon cinnamon
3/4 cup citrus Fresca soda
vanilla ice cream, for serving

Steps:

  • Preheat oven to 350 degrees F. Coat a 8x8 baking dish with nonstick cooking spray.
  • Separate the crescent dough into 8 triangles.
  • Place a peach wedge near the small end of the dough triangle, then roll up. Pinch the ends to seal. Transfer to the prepared baking dish.
  • In a medium microwave safe bowl, melt the butter. Add in the granulated sugar, brown sugar, and cinnamon; stir until combined and smooth.
  • Drizzle butter mixture over the dough.
  • Pour the Fresca to the sides of the dumplings (not on top!) so a nice crust is formed while baking.
  • Bake until golden brown and peaches are tender when pierced with a fork, about 35 minutes. Remove from the oven and let stand 10 minutes.
  • Serve for dessert with some vanilla ice cream or a very decadent breakfast!

3/4 teaspoon cinnamon
1/3 cup plus 2 tablespoons sugar
1/3 cup firmly packed light brown sugar
1/4 cup all-purpose flour
1/4 cup unsalted butter, chilled
1 package frozen puff pastry dough, thawed but chilled
6 medium, ripe peaches [must be freestone]
2 tablespoons lemon juice
1 egg beaten with 1 teaspoon water
Caramel sauce

Steps:

  • Preheat oven to 375 degrees F.
  • Combine the cinnamon, 1/3 cup of sugar, brown sugar and flour. With a pastry blender mix in the butter until it resembles coarse meal.
  • Roll out the chilled puff pastry dough on a lightly floured surface to a 1/8 inch thickness. Cut the dough into six 7 inch squares. Place on a baking sheet and refrigerate.
  • Blanch the peaches for 10 seconds in rapidly boiling water. Remove and drain. Peel the peaches, split in half, and remove the pits. Toss the halves in lemon juice and then in the cinnamon mixture. Reassemble the peach halves with the remaining cinnamon mixture in the cavity.
  • Remove baking sheet from refrigerator. Place a peach in the center of each square of dough. Paint the edges of the dough with cold water. Bring the points of the square together at the top and pinch the seams together to seal.
  • Paint the dumplings with the beaten egg. Sprinkle with the 2 teaspoons of sugar (use crystal sugar for these two tablespoons if you have it available). Prick a few holes around the top to allow steam to escape. Bake for about 40 minutes or until the peaches are tender and the pastry has browned. When dumplings are done, remove from the baking sheet and allow to cool for 20 minutes.
  • To serve, spoon some of the sauce onto each serving plate, place dumpling in the center and drizzle some additional sauce over the top. You may serve with vanilla or peach ice cream or peach sorbet (recipe follows).

2 fresh peaches
8 ounce tube crescent rolls
1/2 cup (1 stick) salted butter, melted
3/4 cup granulated sugar
1/2 teaspoon vanilla extract
1 teaspoon ground cinnamon, (divided use)
1 1/2 Tablespoons flour
3/4 cup lemon lime soda (like Sprite or Mountain Dew)

Steps:

  • Preheat oven to 350F degrees. Spray an 8-inch square pan with nonstick spray.
  • Cut each peach into quarters (you should end up with 8 slices total). (Note: it's optional if you want to peel the peaches or not, they soften as they bake - see notes below)
  • Unroll tube of crescent rolls and separate into 8 pieces.
  • On each roll, sprinkle with a pinch of cinnamon.
  • Add one peach slice to the larger end of the crescent roll. Roll it up into a little bundle and tucking in the ends. Continue with the rest of the rolls the same way.
  • Place all 8 dumplings into prepared baking dish.
  • In a bowl, whisk together melted butter with sugar, vanilla extract and flour.
  • Pour butter mixture on top of crescent rolls bundles.
  • Then pour soda around the edges and in between the crescent rolls.
  • Sprinkle tops with a bit more cinnamon.
  • Bake in preheated oven for about 35-40 minutes.
  • Serve with whipped cream or ice cream.

1/3 cup plus 1 tablespoon granulated sugar
1/3 cup packed brown sugar

16 frozen peach slices, thawed (from 10-oz bag)
1 can (8 oz) refrigerated Pillsbury™ Original Crescent Rolls (8 Count)

Steps:

  • Heat oven to 350°F. Spray 8-inch square (2-quart) baking dish with cooking spray.
  • In small bowl, mix 1/2 teaspoon of the cinnamon, 1/3 cup of the granulated sugar and the brown sugar until well mixed. Cut 4 tablespoons of the butter into small pieces, and add to bowl; cut into mixture, using pastry blender or fork, until mixture is crumbly.
  • Separate crescent dough into 8 triangles. Place 2 peaches on widest end of each triangle. Spoon about 1/2 teaspoon sugar mixture onto each peach slice. Roll crescent to opposite point; arrange in baking dish. Sprinkle any remaining sugar mixture in dish around crescents.
  • In small microwavable bowl, heat remaining 2 tablespoons butter uncovered on High 20 to 30 seconds or until melted. Brush tops of crescents with melted butter. In small bowl, mix remaining 1/4 teaspoon cinnamon and remaining 1 tablespoon granulated sugar. Sprinkle on top of crescents.
  • Bake 30 to 35 minutes or until deep golden brown and baked through. Let stand 10 minutes before serving. Serve warm with vanilla ice cream.

1 teaspoon salt
¾ cup butter flavored shortening
5 tablespoons ice water
6 fresh peaches - peeled, pitted and halved
¼ cup butter, softened
1 egg
¼ teaspoon ground nutmeg
1 teaspoon vanilla extract
1 pinch salt
2 cups confectioners' sugar

Steps:

  • In a medium bowl, stir together the flour and salt. Cut in the butter flavored shortening using your hands or a pastry blender until the mixture resembles coarse crumbs. Sprinkle the ice water over the dough, and stir until the mixture comes together. Knead the dough briefly, then divide into 6 pieces.
  • Preheat the oven to 375 degrees F (190 degrees C).
  • On a lightly floured surface roll out each piece of dough into a thin circle. Place two peach halves together, and wrap in each circle of dough, sealing at the top. Place the dumplings onto an ungreased baking sheet.
  • Bake dumplings for 30 minutes in the preheated oven, or until golden brown. While the dumplings are baking, make the sauce. In a medium bowl, mix together the butter, egg, nutmeg, vanilla and salt using an electric mixer on low speed. Gradually mix in the confectioners' sugar. Spoon over warm dumplings.

2 peaches
½ cup butter
½ cup sugar
½ cup water
1 teaspoon sugar
½ teaspoon cinnamon

Steps:

  • Preheat oven to 350 degrees.
  • Spray a 9X11" baking pan with non-stick cooking spray.
  • Cut each peach into quarters (peel the skin off if you want- I just left mine on). Unroll the crescents and sprinkle the inside of the crescent with cinnamon and sugar. Place a peach on each crescent roll and roll up. Place the roll in the baking pan.
