- Dredge the tilapia filets in the flour, and add them with the melted margarine and garlic to a medium temperature sauté pan. Once the tilapia has finished cooking on one side, flip them over and add the jalapenos, spinach, salt, pepper, and garlic salt. Prepare the angel hair pasta in boiling water, and allow it to cook for 3 to 4 minutes depending on the temperature of the water. As the filets begin to flake, add the heavy cream, and bring it to a slight boil. Once the cream begins to boil, remove the pan from the fire and reduce the lemon butter into the sauce. Place the pasta in a bowl, and pour the fish with the sauce over the pasta. Garnish with fresh Roma tomatoes and parsley.

JALAPEñO GARLIC TILAPIA PANINI
This is my own personal copycat recipe mimicking Johnny Carino's sandwich. Their menu description is "Fried fillet of tilapia with a garlic-jalapeño cream sauce, provolone cheese and sliced roma tomatoes." I think that I have accomplished this by using ideas from CoffeeMom's Super Easy Ritz Cracker Breading (recipe #98000) and ketchup's Garlic Cream Sauce (recipe #85676). (Thanks, guys!) We love this sandwich.

- Fish:.
- Crush crackers and combine with pepper.
- Dip fish fillets into beaten egg, and then coat with cracker crumbs.
- Fry in 350 degree oil until breading is golden and fish flakes easily.
- Remove to an oven-proof plate in a warm oven.
- Sauce:.
- Melt butter on low heat. Add jalapeño and garlic. Sauté until jalapeño is softened, but be careful not to burn garlic.
- Add flour and stir while heating about a minute.
- Add chicken broth and cook stirring until sauce thickens. Stir in sour cream.
- Set aside until ready to assemble the panini's.
- Panini:.
- Brush one side of each slice of bread with olive oil or spread with butter.
- Assemble sandwiches with oiled/buttered side of bread to the outside, layering provolone cheese, sliced tomatoes, tilapia fillet, cream sauce and final slice of bread.
- Spray a cast iron grill pan with cooking spray and heat to sizzling. Reduce heat to medium.
- Place sandwich in grill pan and top with second cast iron skillet. Press down lightly. (You want to smush the sandwich lightly, but not squash it completely.).
- Cook for 1-2 minutes, depending on the heat of your pan, until the sandwich is browned and grill marks are evident.
- Flip sandwich and again top with second cast iron skillet. Cook for another minute or so, until fully browned.
- Serve warm with fresh salad or crunchy kettle-cooked chips.

GARLIC ALFREDO TILAPIA
My version of Ruby Tuesday's New Orleans Seafood, minus the shrimp. I merged a few different recipes and came up with this. It comes pretty close! Three fillets are usually enough for my husband, my toddler, and myself. I serve this with rice and steamed broccoli, to really feel like Ruby Tuesday's recipe!

- Preheat an oven to 425 degrees F (220 degrees C).
- Brush the tilapia fillets with oil on both sides, season with Creole seasoning to taste, then place into a 9x13-inch baking dish.
- Bake in the preheated oven until the flesh is no longer translucent, and the fish flakes easily with a fork, about 10 minutes.
- Meanwhile, melt the butter in a small saucepan over medium heat. Stir in the garlic, and cook until the garlic has softened and the aroma has mellowed, about 2 minutes. Stir in the Alfredo sauce and bring to a simmer. Reduce the heat to low, and keep warm until the fish is ready. Pour the sauce over the fish to serve. Sprinkle with additional Creole seasoning if desired.

- In bread machine pan, place the first eight ingredients in order suggested by manufacturer. Select dough setting (check dough after 5 minutes of mixing; add 1 to 2 tablespoons of water or flour if needed)., In a small bowl, combine the jalapenos and garlic; set aside. When cycle is completed, turn dough onto a lightly floured surface. Divide dough in half. , For each loaf, roll one portion of dough into a 14x9-in. rectangle. Spread with 1-1/2 teaspoons butter. Sprinkle with 1/2 teaspoon garlic salt, 1 tablespoon cheese and 1/3 cup jalapeno mixture. Roll up jelly-roll style, starting with a short side; pinch seam to seal. Place in a 9x5-in. loaf pan coated with cooking spray. Cover and let rise in a warm place until doubled, about 40 minutes. , Melt remaining butter; brush over loaves. - Preheat oven to 375° Blend spices and Parmesan cheese in a food processor until finely chopped. Add to olive oil. Lay chopped garlic on a baking sheet lined with parchment paper. Roast garlic for 10 minutes and stir. Roast for another 10 minutes until garlic is golden and crispy, but not burned. Serve roasted garlic in a shallow bowl for dipping. Add oil as desired when ready to eat. NOTE I mixed dried herbs, roasted garlic and oil together without the parmesan cheese. I did this so the herbs, garlic and olive oil would infuse and will add the cheese when ready to use.
