This recipe for spring rolls is from Supenn at Sawatdee. The sauce that is listed isn't the sauce you get in the restauruant, however. That remains a secret.

1 cup soaked Thai rice noodles
1/2 head lettuce
1 cucumber, cut into matchsticks
1 medium carrot
20 sprigs cilantro
24 rice paper, rounds
1/2 cup cooked medium shrimp, halved lengthwise
1/2 cup cooked chicken or 1/2 cup pork, sliced thinly
sweet and sour dipping sauce
2 cups rice vinegar
1 1/2 cups sugar
1 cup ketchup
1 tablespoon red chili sauce
1 cup water

Steps:

  • Prepare noodles by soaking in water for 15 minutes (or cook for 5 minutes).
  • Shred lettuce & peel carrot into thin strips with peeler.
  • Tear springs of cilantro into 2 or 3 pieces toss with carrots & lettuce.
  • Soften rice sheets in bowl of warm water- one at a time for about 30 seconds.
  • Remove softened sheet from water, spread flat on top of a dampened towel.
  • Top with vegetable mixture , small pile of noodles in center and two shrimp halves & slice of pork.
  • Roll up a fold on each end, then continue to roll up the round until nice and snug. Rice rounds are a bit stretchy. Makes 24 rolls, and serve with dipping sauce.
  • Dipping sauce: combine all ingredients until well blended. Makes about 2 cups.

This is the only sweet and sour dipping sauce you will ever need! Perfect for spring rolls, tastes just like the one from the local chinese (and no pineapple juice!). After a few comments, I am modifying this recipe - please note that Aussie measurements have been used- 1T=20mls. If you use these measurements it shouldn't be too salty; if you find it is please let me know!

3 tablespoons white vinegar
3 tablespoons sugar
3 tablespoons tomato sauce (ketchup)
3 tablespoons water
1/2 teaspoon salt
2 teaspoons soy sauce
1 1/2 teaspoons cornflour

Steps:

  • Mix together over heat. Bring to the boil, allow to thicken.
  • Cool, use.

1 cup finely shredded cabbage
1 (6.5 ounce) can shrimp, rinsed and drained
⅓ cup sweet and sour sauce
⅓ cup minced celery
¼ cup shredded carrots
20 rice wrappers (6.5 inch diameter)

Steps:

  • In a medium bowl, mix the cabbage, shrimp, sweet and sour sauce, celery and carrots.
  • Fill a small bowl with hot water. Dip rice wrappers one at a time into the water. Allow wrappers to soften, then remove from the water and drain. As wrappers are removed from the water, fill each with 2 tablespoons of the cabbage mixture. Roll the wrappers and chill covered until serving.

1 bird's eye chile, minced
1 clove garlic, minced

Steps:

  • Combine sugar, water, vinegar, salt, garlic, and chile in a saucepan and bring to a boil. Reduce heat and simmer for 10 minutes.
