FRESH TUNA STEAKS WITH LEMON
This is from one of the Mediterranean Cooking cards that my partner, Chef1MOM sent me in the Cookbook Swap. The picture is beautiful, and the combination of ingredients cannot miss.

Steps:
- Wash parsley and pat dry with paper towels.
- Mince parsley with peeled garlic.
- Wash and dry whole lemon, grate half the zest.
- Peel rest of rind and discard it.
- Slice lemon thinly.
- Squeeze lemon half; add juice, a pinch of salt and pepper, to a bowl; stir until seasonings have dissolved.
- Add wine, oil, parsley and garlic mixture, and grated lemon peel.
- Beat with fork until well blended.
- Wash and dry tuna.
- Arrange in saute or large omelet pan.
- Pour sauce over tuna and cover with lemon slices.
- Cook fish over high heat for 7-8 minutes,
- Remove lemon slices and turn fish over.
- Cook for another 2 minutes.
- Slice remaing lemon.
- Arrange tuna on serving plate.
- Drizzle with cooking juices.
- Decorate with uncooked lemon slices and sprigs of parsley.
- Serve hot or at room temperature.
TUNA STEAKS WITH GARLIC-HERB CREAM SAUCE
Steps:
- Heat a nonstick skillet over medium heat. Melt butter in the hot skillet. Season tuna steaks with salt and pepper and place in the skillet. Cook for 3 to 4 minutes per side. Remove to a serving plate and keep warm.
- Add half-and-half and spreadable cheese to the same skillet and stir until incorporated. Add lemon juice. Set 2 tablespoons of the sauce aside. Add spinach to the remaining sauce in the skillet and cook until wilted, 1 to 2 minutes.
- Divide spinach between 2 plates and place tuna steaks on top. Serve reserved sauce over the steaks.

MARINATED TUNA STEAK
Steps:
- In a large non-reactive dish, mix together the orange juice, soy sauce, olive oil, lemon juice, parsley, garlic, oregano, and pepper. Place the tuna steaks in the marinade and turn to coat. Cover, and refrigerate for at least 30 minutes.
- Preheat grill for high heat.
- Lightly oil grill grate. Cook the tuna steaks for 5 to 6 minutes, then turn and baste with the marinade. Cook for an additional 5 minutes, or to desired doneness. Discard any remaining marinade.

Steps:
- In a small bowl, mash together the butter, lemon zest, lemon juice, the 1/4 teaspoon pepper, and the garlic powder. Set aside (or chill if not using immediately).
- Prepare the grill for medium-high direct heat and lightly oil the grate (or preheat a broiler). Brush oil on both sides of tuna steaks. Season the tuno on both sides with salt and additional pepper. Grill or broil for 3 to 4 minutes per side for medium rare, turning once.
- Transfer tuna steaks to a serving platter; top with the butter mixture.

- In a large skillet, heat 1 tablespoon oil over medium-high. Season tuna with salt and pepper. Cook, without turning, until golden brown on one side, 3 to 5 minutes. Turn over, and continue to cook until medium-rare, 1 to 2 minutes more. Transfer tuna to a plate, and set aside.
- In a medium bowl, toss together tomatoes, onion, lemon juice, and remaining tablespoon oil; season salad with salt and pepper.
- Serve tuna on top of tomato-onion salad, with lemon wedges alongside, if desired.

- Peel and section grapefruit over a bowl, reserving juice. Refrigerate half of the grapefruit sections. Add remaining grapefruit to the reserved grapefruit juice. Add the lemon juice, lime juice, honey, dill, red pepper flakes and ginger. Remove 1/4 cup for basting; cover and refrigerate. MARINATED TUNA STEAK
Tuna steaks marinated in soy, lemon and mustard

Steps:
- Prick tuna steaks all over with a fork and place in a shallow dish.
- Mix all other ingredients together and pour over steaks. Cover and put in fridge for 1 to 3 hours.
- Remove tuna from the marinade. Shake excess moisture from the steaks. Pre-heat oiled griddle pan.
- Pour the marinade into a small saucepan and bring to a boil. Reduce heat to medium-low and cook marinade at a simmer for 10 minutes.
- Cook tuna on preheated griddle pan, basting with boiled marinade, until cooked through, 5 to 6 minutes per side. Serve with lemon wedges if required and salad and/or couscous.

- Light the grill or heat the broiler. In a small glass or stainless-steel bowl, mash the capers with a fork. Stir in the lemon juice, parsley, 1/2 teaspoon of the salt, and 1/4 teaspoon of the pepper and then 6 tablespoons of the oil.
- Coat the tuna with the remaining 2 tablespoons oil. Sprinkle with the remaining 1/4 teaspoon each salt and pepper. Grill or broil the tuna for 4 minutes. Turn and cook until done to your taste, 3 to 4 minutes longer for medium rare. Serve the tuna topped with the sauce.
