4 1/2 teaspoons baking powder
12 ounces cold seltzer
Salt and pepper
1 quart canola oil (approximately, as needed for deep frying)

STIR-FRIED BROCCOLI WITH COCONUT

Stir-fried broccoli with coconut image

This quick spiced vegetable dish is inspired by the fresh flavours of south India and can be made with all greens

Provided by Roopa Gulati

Categories     Dinner, Side dish

Time 20m

Number Of Ingredients 9

6 tbsp vegetable oil
3 ½ tsp mustard seed
3 tbsp fresh or dried curry leaf
a pinch chilli flakes
4 red onions , thickly sliced
100g ginger , shredded
800g thin-stemmed broccoli , cut into bite-sized pieces
100g/4oz fresh or frozen grated coconut or 3 tbsp desiccated coconut
juice 2 limes

Steps:

  • Heat the oil in a large wok or saucepan set over a medium heat. Toss in the mustard seeds followed by the curry leaves (if you are using dried curry leaves add them later on with the broccoli) and chilli flakes. Swirl everything around until the leaves stop spluttering, then add the onions and ginger and fry for 3-4 mins over a high heat.
  • Stir in the broccoli (and dried curry leaves if using) and continue frying over a high heat until just tender, stirring all the time. Scatter over the coconut (if you are using desiccated coconut, soak it in hot water for 5 mins before tipping into a sieve, draining away any liquid, and adding to the pan at the end of cooking), stir to mix and sharpen with the lime juice.

CRISP STUFFED CHICKEN CUTLETS

Crisp Stuffed Chicken Cutlets image

The chef Alexandra Raij modeled this recipe on a traditional Spanish dish called flamenquines, in which flattened chicken breasts are stuffed with ham and cheese, then rolled up, coated in egg and bread crumbs and fried. Her recipe mostly follows that lead, but instead of pounding the breasts and rolling them up with the stuffing, she used thin cutlets of chicken and layered the stuffing between two of them, sealing them together with an egg mixture. Fried to a golden hue, the dish is both crunchy and greaseless. The crumbs insulate the delicate meat and help keep it from overcooking.

Provided by Melissa Clark

Categories     dinner, easy, quick, weekday, main course

Time 25m

Yield 3 servings

Number Of Ingredients 14

6 boneless, skinless chicken cutlets (about 1 1/4 pounds total)
Kosher salt
Freshly ground black pepper
2 large egg whites
2 tablespoons cornstarch
1 tablespoon chopped parsley
2 teaspoons minced garlic
Dijon mustard
1 1/2 ounces thinly sliced provolone cheese (1 1/2 slices)
1 1/2 ounces thinly sliced ham (1 1/2 slices)
3 tablespoons sauerkraut, packed, more for serving
3/8 teaspoon caraway seeds
2 cups plain bread crumbs
2 tablespoons extra virgin olive oil, for frying

Steps:

  • Season chicken lightly with salt and pepper. In a bowl, whisk together the egg whites, cornstarch, parsley and garlic until lumps dissolve and mixture is slightly foamy. Set aside.
  • Brush one side of each chicken cutlet with mustard. Divide cheese and ham among 3 cutlets and place on mustard side. Top each with 1 tablespoon sauerkraut and 1/8 teaspoon caraway seeds. Arrange remaining 3 cutlets mustard-side down on top of sauerkraut to sandwich the ham and cheese. Press to seal.
  • Dip stuffed cutlets in egg white mixture and dredge in bread crumbs. (You can do this several hours ahead and refrigerate until needed).
  • Heat oil in a large skillet over medium-high heat. Carefully place cutlets in hot pan and fry until dark brown and cooked through, 2 to 3 minutes a side. Transfer to a paper towel-lined plate to drain; serve hot, with additional sauerkraut on the side.

  • 10-Minute Nacho Cheese Dip. If you’re like me, you’ll appreciate anything with ’10-minute’ in its name. Fortunately, this one is more than just quick and simple.
  • Nanny’s Simple Macaroni and Cheese. You won’t believe this, but it’s true. You can make the most comforting, southern-style mac-n-cheese with just three ingredients.
  • Colby Jack Cheesy Bread. We all know that baking homemade bread takes some time. If you invest that much time in bread, it should be the best bread. Want to save this recipe?
  • Colby Pepper Jack Cheese Dip. Want to make your cheese dip even more filling and indulgent? Try adding chopped chicken. The dip is just as rich and yummy as always.
  • The Best Grilled Cheese. I won’t swear that this is the best grilled cheese sandwich. However, it’s definitely in the top five. The bread is light and crunchy, and the cheese is out of this world.
  • Macaroni and Cheese Pizza. Macaroni and cheese pizza combines two of the best cheesy recipes. If you haven’t tried it, don’t dismiss it out of hand. There’s no tomato sauce or marinara.
  • Southwest Chicken Pizza. Sadly, the idea of mac-n-cheese pizza is just too weird for some people. If you fall into that camp, try this southwest chicken pizza instead.
  • Beer Cheese Soup. Beer cheese soup is a staple of most Oktoberfest celebrations. Luckily, you don’t have to wait until then to have it! This recipe helps you make the thickest, most robust beer cheese soup possible.
  • Beer Cheese Dip. If you’re not in the mood for soup, have beer cheese dip instead. It has the same phenomenal flavor and even a similar consistency. The main difference is in the presentation.
  • Pineapple Casserole. This light, juicy casserole is ideal for anyone who loves pineapples and cheese. (It’s a real hit with the pineapples-on-pizza crowd.)
