UNBELIEVABLE FISH BATTER
In the early 1950's, I received this recipe on an open-line, talk-radio show. It makes the lightest, crispiest batter imaginable. This makes enough to coat approximately 2 pounds of fish.

EASY PAN-FRIED FISH FILLET
This is a very easy method to make any type of fish fillets. Choose mild-flavored fish - flounder, halibut, cod, catfish, or tilapia are great candidates.

- Wash fish fillets under running cold water and dry with a paper towel. Drizzle with lemon juice and season with salt on both sides.
- Combine flour and Chinese five-spice powder in a shallow bowl. Dip fish fillets into the flour mixture so they are covered on both sides.
- Heat canola and sesame oils in a large skillet over medium heat. Add fish to hot oil and pan-fry for 2 to 3 minutes. Carefully turn and continue cooking until fish flakes easily with a fork, 2 to 3 minutes more.

- Place eggs and cracker crumbs in separate shallow bowls. Dip fillets into eggs, then coat with crumbs. Let stand for 5 minutes. , In an electric skillet or deep-fat fryer, heat oil to 375°. Fry fillets, a few at a time, for 2 minutes on each side or until fish is golden brown and flakes easily with a fork. Drain on paper towels. , In a small bowl, combine the tartar sauce ingredients. Serve with fish.

- Pour 2-inches of vegetable oil into a large skillet. Place skillet over large burner and heat oil over medium high heat. To check if the oil is hot enough, drop in 1-inch cube of white bread. The bread should brown in a 40 count.
- Cut cod into 4 servings, 6 to 8-ounce portions and season with salt and pepper. Place a couple of scoops of flour in a pie tin. Combine egg and water in second tin. Season plain bread crumbs and mustard and cayenne in the third tin. Coat fish in flour, then egg, and then bread crumbs. Gently set coated fish into hot oil and fry 5 minutes on each side until medium golden brown in color.
- When the fish is evenly golden all over, remove and drain on brown paper sacks.
- Suggested: 3 disposable pie tins .
FRIED FISH IN A FLUFFY EGG COAT

- In a medium bowl, beat the egg whites with an electric mixer until stiff and shiny. Beat in the egg yolks on low speed just until blended. Set aside. Sprinkle the fish lightly with salt. Heat the oil in a medium skillet until hot. Dust the fish all over with flour and dip in the egg batter. EGG BATTER PAN-FRIED FLOUNDER WITH GREEN GARLIC
For savory, moist, delicate flounder, it is difficult to beat this fast, easy method. Lightly coat the fillets in flour, then dip them in a mixture of beaten egg and milk. Slide them into a hot skillet filled with oil to a 1/4-inch depth and let them fry until golden, a mere two minutes or so per side, without jostling them around too much. Serve with a sauce of green garlic cooked in butter, with the juice of half a lemon providing a jaunty, bright finish. A sprinkling of chopped parsley makes for an elegant presentation, lifting an already elevated weeknight dish. Use fluke or sole in place of the flounder if you'd like, or scallions for the green garlic.

- Season the fish fillets with salt and pepper. Make the egg batter by whisking together the eggs and milk in a shallow bowl, along with a pinch of salt.
- Put the flour on a plate. Coat each fillet lightly on both sides, then submerge the fish in the egg batter. (This can be done up to 30 minutes ahead.)
- Pour about 1/4 inch oil in a wide skillet over medium-high heat. When the oil looks wavy, lift the fish from the egg batter one piece at a time, allowing excess batter to drip off. (Discard remaining batter.) Carefully lay each fillet in the pan and let fry gently until golden, about 2 minutes per side. Remove and blot briefly on paper towels, then transfer to a warmed serving platter.
- Pour off any remaining oil and return the pan to the heat. Melt the butter in the pan and add the green garlic, and a little salt and pepper. Let cook without browning for about 1 minute, then add the lemon juice.
- Spoon the green garlic butter over the fish. Sprinkle with parsley, garnish with lemon wedges and serve immediately.

- Choose the Right Fish. Over the years, I’ve heard several people comment that they don’t like the taste of striped bass. My first question is always, “How do you cook it?”
- Season the Fillets. A lot of recipes out there call for seasoning the flour, the egg wash, and/or the breading with salt and other seasonings which, frankly, makes no sense.
- Dip the Fillets in Flour, Egg, and Breadcrumbs. Applying the breading is 3-step process. The first step is to dust both sides of the fillet in flour until evenly coated.
- Place the Fillets in the Fridge. This, I believe, is crucial. After breading the fillets, I always pop them in the refrigerator for at least a half hour.

- Picking the Right Cooking Oil. You want one that has a high smoking point. Olive oil does not, and the same with butter. Stick with canola, vegetable, or peanut oil.
- Flip the Fried Fish. Did you know there is a kitchen tool designed specifically for flipping fried fish? A fish spatula like the Toadfish Ultimate Spatula should be your weapon of choice for this task.
- Place the Fried Fish on a Drying Rack. When your fried fish is ready to come out of the pan, it should be placed on a metal wire drying rack to rest, never on paper towels!
