- In a large nonstick skillet, cook potatoes and onions in oil over medium heat for 8-10 minutes or until potatoes are tender, stirring occasionally. , In a large bowl, combine the eggs, tomatoes, salt and pepper. - Peel potatoes; cut into 1/2-inch dice. In a large saucepan, heat oil over medium heat. Add potato; cook, stirring occasionally, until golden brown, about 6 minutes.
- Add beef, onion, and jalapeno; cook, breaking up meat with a spoon, until beef is thoroughly browned, about 4 minutes. Add tomatoes and juice, cumin, paprika, and 1 teaspoon salt; cook until liquid has evaporated, about 6 minutes.
- Heat tortillas, one at a time, in a dry skillet over medium-high heat, turning once, until lightly browned, about 10 seconds.
- Leaving space on bottom and sides, layer tortillas with sour cream, lettuce, beef mixture, cheese, and cilantro, if using; squeeze lime juice on top. Fold bottom upward, covering filling by 2 inches. Fold each side to overlap, leaving the top end open. Serve garnished with lime wedges.
CHORIZO-POTATO BREAKFAST BURRITOS

- Heat the oil in a large nonstick skillet over medium-high heat. Add the chorizo and cook, breaking it up into small pieces, until cooked through and crisp, about 5 minutes. Transfer to a paper-towel-lined plate using a slotted spoon. Add the hash browns to the skillet and cook, stirring occasionally, until the potatoes are golden brown and crisp, 8 to 10 minutes. Beat together the eggs, a pinch of salt, a few grinds of pepper and a few dashes of hot sauce in a medium bowl until well blended. Return the chorizo to the pan and pour the eggs over the potatoes and chorizo and cook, stirring, until the eggs are fluffy and just set, about 3 minutes. Remove from the heat and stir in the cilantro.
- Working with one tortilla at a time, warm in a large nonstick skillet set over medium heat until pliable. Top with one-quarter of the avocado and egg mixture, 1 tablespoon of the pico de gallo and 2 tablespoons of the cheese. Fold in the two sides and roll up tightly from the bottom to the top. Repeat with remaining tortillas and burrito fillings. Serve with the remaining pico de gallo on the side.

- Begin by browning the breakfast sausage in a skillet over medium heat. Drain off the grease and reduce the heat to low.
- Crack the eggs into a bowl. Add the half-and-half, seasoned salt and some pepper, and whisk to beat the eggs lightly.
- With the heat still on low, pour the egg mixture over the sausage mixture. Now, with a spoon or spatula, very gently stir the mixture. Continue lightly cooking over low heat until the eggs are set. Now taste and adjust the seasoning, adding more seasoned salt or pepper if desired.
- To assemble, warm the stack of tortillas on a paper towel in the microwave for about 30 seconds. Place a heaping spoonful of egg mixture onto the middle of a warm tortilla, and top with a spoonful of Breakfast Potatoes. Tuck in the sides and roll the tortilla until closed. Wrap in foil sheets and keep warm until ready to serve.
- For cheesy and spicy variations, add grated Monterey Jack, jarred jalapenos, hot sauce or all three.
- Preheat the oven to 375 degrees F.
- Place the potatoes on a baking sheet and bake until fork tender, about 45 minutes.
- Place the hot potatoes on a cutting board and dice them into 1-inch pieces.
- Heat a skillet over medium-low to medium heat. Next, put a tablespoon of canola oil in the skillet. Add in some butter and the onions and saute until they start to turn brown. Next, throw in the cooked diced potatoes and the peppers. Salt and pepper the potatoes, then stir them around, slightly pressing/packing them in the skillet. Cook without stirring for 5 to 7 minutes. You want to make sure the pan is hot enough to crisp the potatoes. Add more butter to the pan as necessary for moisture.
- After several minutes, use a spatula to flip the potatoes over and cook on the other side for another 5 to 7 minutes.
SOUTHWEST POTATOES
Here is a substantial breakfast inspired by (though far better than) airplane food that can be served on its own or alongside eggs. With all the classic flavors of a burrito - black beans, jalapeños, corn, cheese and cilantro - it would also make great filling for a corn or flour tortilla, with potatoes added in place of rice. Exercise patience when you cook the potatoes. The key to this recipe is leaving them alone once you've put them in the pan, neither stirring nor shaking, for at least 10 minutes, so they develop a nice crust.

- Put 1 tablespoon of oil in a large skillet over medium heat. When hot, add jalapeño and corn, and sprinkle with salt and pepper; let sit for a moment. When corn begins to brown, shake pan to distribute for even browning. Remove corn.
- Add remaining oil to pan. When hot, add potatoes. Cook, undisturbed, until they begin to brown around edges and release from pan, about 10 minutes. Continue, at least 15 more minutes, turning potatoes to brown all sides without stirring too often. Add oil if needed to prevent sticking, and lower heat if needed to prevent scorching. When potatoes are tender and golden, add chili powder, corn and beans.
- Turn on broiler. Place rack about 4 inches below. Transfer potatoes to a baking dish, sprinkle with cheese and run under broiler until cheese is melted and beginning to brown, 2 to 3 minutes. Garnish with cilantro.

FRIED POTATO BURRITOS

- Peel, wash and slice your potatoes as you do for fried potatoes. Put enough oil into your skillet to fry your potatoes. Put your stove on medium heat. When oil is hot, put your potatoes in the skillet and fry on one side until golden brown and crusty. While it is cooking, chop an onion. Turn over the potatoes on other side.
- When potatoes are golden brown, put onion on top then salt and pepper to your tasting and cover the skillet with a lid until potatoes are golden and done on both sides. Turn off skillet.
- Heat up tortillas. Drain grease and put a serving of potatoes on tortillas, sprinkle crush red pepper on them and then roll them up. They are delicious. Serve while they are hot.

My MIL made these for my DH when he was younger. Now that we're married, I've taken over. I'm not sure where she got the idea of frying them. I searched for a recipe on here and didn't find one, so I hope I'm not making a double post! I'm guessing on the amount of oil for frying, and you will probably have cheese leftover.

- Warm the tortillas for 15 seconds in the microwave. This will prevent them from cracking when you work with them.
- If they are not sufficiently heated, heat for an additional 10 seconds until fairly warm.
- Once heated, keep them warm by placing them in a tortilla warmer, or two inverted plates.
- Put the oil in a deep skillet. The oil should be about an inch deep.
- Turn the burner to medium-low. The oil is ready when a drop of water "dances" on it.
- Remove one tortilla at a time from the warmer and place on clean surface.
- Spread 1-2 tablespoon refried beans in a line down center of tortilla.
- Place half a piece of cheese, followed by an additional fourth a piece cheese on the beans.
- Fold the top and bottom of the tortilla in, then the sides.
- Place, seam side down, in the oil.
- Fry until browned on one side. This will not take long. Turn and brown on other side.
- Prepare the remaining tortillas as you did before and place them to the oil. You should have NO MORE than 3 frying at one time.
- When you remove them from the oil, place on a thick layer of paper towels to dry.

- Preheat oven to 400°. In a large skillet, cook beef over medium heat 8-10 minutes or until no longer pink, breaking into crumbles; drain. Stir in taco sauce, Worcestershire sauce, onion powder, paprika, garlic powder, 1/4 teaspoon salt and pepper.
