BROCCOLI GRATIN

1/4 cup unsalted butter, plus more for the baking dish
3 tablespoons all-purpose flour
1 1/2 cups whole milk
1 1/2 teaspoons kosher salt, plus more as needed
Pinch freshly grated nutmeg
Freshly ground black pepper
2 pounds broccoli (about 4 heads), cut into small florets (about 8 cups)
1 cup grated sharp Cheddar (about 4 ounces)
1/2 cup fresh bread crumbs

Steps:

  • Place a rack in the middle of the oven and preheat to 450 degrees F. Butter an 8-by-8-by-2-inch baking dish or an 8-cup gratin dish.
  • Melt 3 tablespoons of the butter in a medium saucepan over medium heat. Whisk in the flour until smooth. Cook, stirring, for 1 minute. Add the milk, 1 1/2 teaspoons salt, and nutmeg and bring to a boil while whisking constantly. Lower the heat and simmer, stirring occasionally, until the white sauce is thickened, about 10 minutes. Season with pepper. Remove from the heat.
  • Meanwhile, bring about 1-inch of water to a boil in a large saucepan and set up a collapsible steamer on top. Put the broccoli in the steamer and season with salt. Cover, and steam until crisp-tender, about 5 minutes. Put the broccoli in the prepared dish, sprinkle with half of the cheese and pour on the sauce. Cover with the remaining cheese.
  • Melt the remaining 1 tablespoon butter in a medium skillet over medium-high heat. Add the bread crumbs and cook, stirring, until lightly browned, about 2 minutes. Cover the gratin with the bread crumbs. Bake until lightly browned and bubbly, about 20 minutes. Serve immediately.

2 bags (16 oz each) fresh broccoli and cauliflower florets
1 1/2 cups reduced-fat mayonnaise
1 cup shredded reduced-fat Cheddar cheese (4 oz)
3/4 cup shredded Parmesan cheese (3 oz)
4 medium green onions, sliced (1/4 cup)
2 tablespoons Dijon mustard
1/4 teaspoon ground red pepper (cayenne)
3 tablespoons Progresso™ Italian style bread crumbs
Chopped fresh parsley, if desired

Steps:

  • Heat oven to 350°F. Spray 2-quart gratin dish or casserole with cooking spray.
  • In 2-quart saucepan, place steamer basket; add 1/2 inch water (water should not touch bottom of basket). Place broccoli and cauliflower in basket; cover tightly and heat to boiling. Reduce heat to low; steam covered 6 to 8 minutes or until crisp-tender. Drain well. Place vegetables in gratin dish.
  • In medium bowl, stir together mayonnaise, cheeses, onions, mustard and red pepper. Spoon over vegetables. Sprinkle with bread crumbs.
  • Bake uncovered 20 to 25 minutes or until topping is golden. Garnish with parsley.

3 tablespoons olive oil
Coarse salt and ground pepper
1/4 cup all-purpose flour
3 cups whole milk
2 heads broccoli (about 2 pounds total), florets finely chopped, stalks peeled and finely chopped
1 cup shredded white cheddar (4 ounces)

Steps:

  • Preheat oven to 450 degrees, with rack in upper third. In a food processor, pulse bread and 1 tablespoon oil until large crumbs form; season with salt and pepper. Set aside.
  • In a large saucepan, heat remaining 2 tablespoons oil over medium. Whisk in flour; cook, stirring constantly, 1 minute. Gradually whisk in milk. Bring to a boil; add broccoli. Reduce to a simmer. Cook, stirring occasionally, until broccoli is tender, 15 to 20 minutes. Remove from heat; stir in 3/4 cup cheese.
  • Transfer mixture to a shallow 1 1/2 quart baking dish; top with breadcrumbs and remaining cheese. Bake until breadcrumbs are golden, 6 to 8 minutes. Let rest 5 minutes before serving.

1 cup Complete® All-Bran® Wheat Bran Flakes cereal (crushed to 1/2 cup)
1/4 teaspoon pepper
3/4 cup shredded provolone cheese (3-oz)
2 cups Kellogg's® seasoned stuffing mix
1/4 cup reduced-sodium chicken broth or water
2 tablespoons butter or margarine, melted

Steps:

  • 1. In Dutch oven cook broccoli in enough boiling salted water to cover about 30 seconds or until bright green. Drain. In 12 x 8 x 2-inch baking dish coated with cooking spray arrange broccoli.2. 1 or 2 heads very green, unblemished broccoli, about 1 1/4 pounds
Salt to taste if desired
2 tablespoons butter at room temperature
3 eggs
1 cup milk
1/2 cup heavy cream
Freshly ground pepper to taste
1/8 teaspoon freshly grated nutmeg
Pinch of cayenne

Steps:

  • Preheat oven to 400 degrees.
  • Carefully cut broccoli tops into large, bite-size flowerets. Make a small incision in the bottom of each piece to facilitate cooking. Peel stems and cut into bite-size pieces. There should be about 6 cups.
  • Bring enough water to a boil to cover the pieces when added. Add salt, if desired. Add broccoli and cook, uncovered, 6 minutes. Drain.
  • With the butter, grease the inside of a 6-cup souffle dish. Put broccoli pieces in dish in one neat layer.
  • In a mixing bowl beat eggs well. Blend in milk, cream, pepper, nutmeg, cayenne and salt, if desired. Pour this over broccoli.
  • Set dish in a larger baking pan that can also be used on top of stove and pour boiling water around it. Bring to a boil and let simmer 5 minutes on top of stove. Place dish in its water bath in oven and bake 30 minutes or until custard is set.

1 large head broccoli, cut into florets
6 tablespoons butter, divided
½ cup all-purpose flour
1 ½ cups milk
1 ½ cups shredded Cheddar cheese
½ teaspoon salt, or to taste
½ teaspoon ground black pepper
1 pinch garlic powder
1 pinch onion powder
2 slices stale bread

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Place a steamer insert into a saucepan and fill with water to just below the bottom of the steamer. Bring water to a boil. Add broccoli, cover, and steam until tender, 3 to 5 minutes.
  • Melt 5 tablespoons butter in a saucepan over medium-low heat. Add flour, stirring constantly to prevent browning. Slowly pour in milk, stirring constantly. Remove from heat; stir in Cheddar cheese, salt, pepper, garlic powder, and onion powder.
  • Drain broccoli and place in a casserole dish. Pour cheese sauce on top.
  • Bake in the preheated oven for about 15 minutes. Meanwhile, crush bread into crumbs. Saute in a skillet with the remaining 1 tablespoon butter until golden, 2 to 3 minutes.
  • Spread bread crumbs over the broccoli and continue baking until golden brown, about 5 minutes more.

1/2 cup chicken broth, homemade or low-sodium canned
2 tablespoons white wine
1/2 teaspoon anchovy paste
Freshly ground pepper to taste
1 teaspoon salt
1/2 cup bread crumbs
1/3 cup freshly grated Parmesan cheese

Steps:

  • Preheat oven to 350 degrees. Bring a large pot of lightly salted water to the boil. If the broccoli stalks are large, cut them in half lengthwise. Cut the stalks into 2-inch lengths and split the florets in half.
  • Blanch the broccoli for 2 minutes. Drain and place in a 13-inch-by-10-inch shallow baking dish.
  • Whisk together the chicken broth, wine, anchovy paste, pepper and salt and pour over the broccoli. Cover with foil and bake until the broccoli is tender, about 45 minutes.

You can switch out the pasta for another long cut like linguine, bucatini or angel hair. And you can sub cauliflower florets or baby carrots for broccoli; just be sure to adjust the steaming time.

1 pound fettuccine
4 cups broccoli florets
2 tablespoons unsalted butter
1/2 clove garlic
2 cups heavy cream
2 cups milk
Kosher salt and freshly ground black pepper
1/2 cup grated Romano
1/2 cup grated Parmesan, plus more for garnish
Chopped Italian parsley, for garnish

Steps:

  • Bring a large pot of salted water to a boil. Add fettuccine and cook according to package directions until al dente, 8 to 11 minutes. While the pasta cooks, place a steamer basket over the pot and place the broccoli in the basket. Cover and steam until tender, 3 to 4 minutes. Set aside.
  • Meanwhile, in a large saucepan or skillet, melt the butter over medium heat. Grate the half clove of garlic with a rasp grater into the butter and cook, stirring, about 1 minute. Stir in the cream, milk, and salt and pepper to taste. Bring to a simmer. Stir in the Romano and Parmesan, stirring until melted; the sauce will thicken. Turn off the heat and set aside until the pasta is done.
  • Drain the pasta, reserving about 1/2 cup of cooking liquid. Add the drained pasta to the cream sauce and stir until well coated. If the sauce seems too thick, stir in some of the reserved pasta cooking liquid to thin it until it coats the pasta well. Fold in the broccoli. Garnish with parsley and more Parmesan.

5 tablespoons margarine or butter
1 1/2 cups Kellogg's® corn flakes (crushed to 3/4 cup)
1/3 cup chopped onion
3 tablespoons flour
1/2 teaspoon salt
1/4 teaspoon pepper
1 1/2 cups fat-free milk
1 cup shredded, low fat American cheese (4 oz.)
4 cups sliced carrots, cooked and drained (about 1 1/2 lbs.)
1 tablespoon dried parsley flakes

Steps:

  • 1. In 3-quart saucepan, melt margarine over low heat. Remove 2 tablespoons and mix with KELLOGG'S CORN FLAKES cereal. Set aside for topping. Add onion to remaining margarine in pan. Cook, stirring frequently, until onion is softened but not browned.2. Stir flour, salt and pepper into onion mixture. Add milk, stirring until smooth. Increase heat to medium and cook until mixture boils and thickens, stirring constantly. Add cheese and continue cooking, stirring 1 minute longer. Remove from heat. Stir in carrots and parsley flakes. Spread mixture into 10 x 6 x 2-inch (1 1/2-qt.) glass baking dish coated with cooking spray. Sprinkle cereal mixture evenly over top.3. Bake at 350°F about 20 minutes or until thoroughly heated. Remove from oven. Let stand about 5 minutes before serving. Serve hot. MICROWAVE DIRECTIONS1. In small glass mixing bowl, microwave 2 tablespoons of the margarine on HIGH until melted. Combine with KELLOGG'S CORN FLAKES cereal. Set aside for topping.2. Measure the remaining 3 tablespoons margarine and onion into 4-cup glass measuring cup. Microwave on HIGH 1 1/2 to 2 minutes or until onion is tender. Stir in flour, salt and pepper.
