SPICY CHEESE DIP

1 (12-ounce) can stewed tomatoes with juice
4 to 6 cloves garlic
3 whole fresh jalapenos
1 whole medium white onion
2 to 3 tablespoons chopped fresh cilantro
4 to 6 fresh Roma tomatoes
Kosher salt
Fresh ground pepper
1/2 lime, juiced
1 1/2 pounds ground beef
1 large chopped onion
1 or 2 chopped jalapenos
1 tablespoon freshly chopped garlic
Salt and pepper
2 pounds velveta cheese, cubed
1 can cream of mushroom soup
1/4 cup whole milk
Tortilla chips

Steps:

  • Puree stewed tomato juice only, garlic and 2 jalapenos in a blender or processor. Finely chop the onion, 1 jalapeno, 2 to 3 tablespoons of cilantro and 4 to 6 Roma tomatoes. Roughly chop the stewed tomatoes. Mix all these ingredients in a large bowl. Season with kosher salt, fresh ground pepper and lime juice.;
  • Cook the ground beef, onion, jalapenos, garlic and dash of salt and pepper. Drain excess fat in a small bowl. Add the beef mixture to slow cooker and put on medium setting. Keep hot. Add cubes of cheese, cream of mushroom soup and milk and stir. Next add 2 cups of the salsa mixture to the cheese mixture. Can be kept warm for 1/2 hour or longer. Serve with chips.

1 can of chili beans
1 can of black beans
1 can of chopped green chilies
1 can of chipotle salsa
1 small onion, diced
1/8 cup diced garlic
1 fresh jalapeno, seeded and diced
1 teaspoon Tabasco sauce
2 cups of shredded Mexican blend cheese

Steps:

  • Brown ground beef in a skillet. Add onions and garlic.
  • Add all other ingredients except the cheese and simmer on low for 15-20 minutes.
  • Add cheese and simmer until melted.
  • Garnish with fresh cilantro and serve with tortilla chips

Steps:

  • Heat a large skillet over medium-high heat. Cook and stir beef in the hot skillet until browned and crumbly, 5 to 7 minutes; drain and discard grease.
  • Pour mild picante sauce and hot picante sauce over the ground beef; stir. Add processed cheese food and Colby cheese, reduce heat to low, and cook until the cheese is completely melted, about 15 minutes.

1 (8 ounce) package cream cheese, softened
½ cup sour cream
4 cups shredded medium Cheddar cheese
6 ounces beer
1 ½ tablespoons chopped canned jalapeno peppers
¼ teaspoon garlic powder
⅛ teaspoon onion powder

Steps:

  • Beat cream cheese in a medium bowl until smooth. Add ingredients in the following order, mixing with the beater after each one: sour cream, Cheddar cheese, beer, jalapeno peppers, garlic powder, onion powder. Cover and refrigerate until flavors have blended and dip has thickened, at least 2 hours.
  • Remove from the refrigerator 15 minutes before servings.

6 medium potatoes, peeled and cut into bite size chunks
1 medium onion, diced
1/4 cup unsalted butter, melted
1 teaspoon seasoning salt
1 garlic clove, minced
1/4 teaspoon cayenne pepper
1/8 teaspoon black pepper
10 -12 slices American cheese
breadcrumbs

Steps:

  • Preheat oven to 350 degrees.
  • Mix together; melted butter, seasoned salt, minced garlic, cayenne pepper and black pepper. Set aside.
  • Prepare potatoes and onions.
  • Mix potatoes and onions together in large bowl and add butter mixture.
  • Stir to coat well.
  • Spray a square casserole dish with non stick cooking spray.
  • Spread 1/2 of the potato onion mixture on bottom of dish.
  • Place 1/2 of the cheese slices on top of potatoes.
  • Repeat layers.
  • Sprinkle bread crumbs on top to cover.
  • Bake, uncovered for 1 hour at 350 degrees.

1-1/2 cups shredded reduced-fat cheddar cheese
1/2 cup fat-free sour cream
2 packages (2-1/2 ounces each) thinly sliced dried beef
1/2 cup chopped green onions
1/2 cup mild pepper rings, drained and chopped
2 teaspoons Worcestershire sauce
1 loaf (1 pound) unsliced round rye bread
Assorted fresh vegetables

Steps:

  • In a large bowl, combine the cream cheese, cheddar cheese and sour cream. Stir in the beef, onions, peppers and Worcestershire sauce. , Cut the top fourth off the loaf of bread; carefully hollow out bottom, leaving a 1-in. shell. Cube removed bread and top of loaf; set aside., Fill bread shell with beef mixture. Wrap in foil; place on baking sheet. Bake at 350° for 60-70 minutes or until heated through. 1/4 cup onions, finely chopped or 3/4 teaspoon garlic powder
1/2 large onion, finely chopped
1 1/2 lbs Velveeta cheese, cubed
15 ounces rotel tomatoes with green chili peppers
tortilla chips, scoop-shaped, for serving

Steps:

  • Brown ground beef and 1/4 cup onions in a large nonstick skillet. Break apart as needed. Drain.
  • Combine beef with remaining ingredients in slow cooker.
  • Cook on LOW 2 1/2 hours, or until cheese is melted.
  • Serve from slow cooker with scoop-shaped tortilla chips.
  • TIP: The smaller the Velveeta chunks, the faster they will melt.
  • VARIATION: Instead of the 1/4 cup onions, use 3/4 teaspoon garlic powder.
